Claims (12)
- Verfahren zum Schneiden von Wurst, Käse oder ähnlichen Lebensmitteln in Scheiben, wobei auf ein zu schneidendes zylinderförmiges Gutsstück ein Axialdruck ausgeübt wird, wodurch dieses in Längsrichtung auf eine Schneideinrichtung (2) vorgeschoben wird, mit der nacheinander Scheiben mittels eines rotierenden Messers (3) von dem Gutsstück abgeschnitten werden, wobei des weiteren das Gutsstück vor dem Eintritt in die Schnittebene des Messers (3) durch eine Kaliberdüse (7) geführt wird, deren innere Mantelfläche (33) in Abhängigkeit von der in Längsrichtung des Gutsstücks unter Umständen schwankenden Größe der Querschnittsfläche des Gutsstücks unterschiedlich große Radialkräfte auf eine äußere Mantelfläche des Gutsstücks ausübt, wobei das Gutsstück bedarfsweise zur Erzeugung eines Leerschnitts entgegen der Vorschubrichtung (20) vollständig aus der Schnittebene zurückgezogen wird, dadurch gekennzeichnet, daß in Abhängigkeit von der momentanen Reibkraft zwischen der Mantelfläche (33) des Gutsstücks und der Mantelfläche der Kaliberdüse das Gutsstück alleine oder zusammen mit der Kaliberdüse (7) zurückgezogen wird.
- Vorrichtung (1) zum Schneiden von Wurst, Käse oder ähnlichen Lebensmitteln in Scheiben, mit einer Schneideinrichtung (2), die ein rotierend antreibbares und eine Schnittebene (5) definierendes Messer (3) besitzt, einer Vorschubeinrichtung, mit der das zylinderförmige Gutsstück in dessen Längsrichtung auf die Schneideinrichtung (2) zu und durch die Schnittebene (5) hindurch förderbar ist, und mindestens einer Kaliberdüse (7), die in Vorschubrichtung (11) vor der Schneideinrichtung (2) angeordnet ist und durch die das Gutsstück hindurch vorschiebbar ist, wobei die innere Mantelfläche (33) der Kaliberdüse (7) Radialkräfte auf die äußere Mantelfläche des Gutsstücks ausübt und die Kaliberdüse (7) parallel zu der Vorschubrichtung (20) relativ zu der Schneideinrichtung (2) beweglich gelagert ist, dadurch gekennzeichnet, daß eine Bewegung der Kaliberdüse (7) durch Reibkräfte zwischen der äußeren Mantelfläche des Gutsstücks und der inneren Mantelfläche (33) der Kaliberdüse (7) infolge einer Relativbewegung des Gutsstücks zu der Kaliberdüse möglich ist.
- Vorrichtung nach Anspruch 2, dadurch gekennzeichnet, daß die in Vorschubrichtung (11) hintere Stirnfläche (21) der Kaliberdüse (7) unmittelbar an die Schnittebene (5) angrenzt.
- Vorrichtung nach Anspruch 2 oder 3, dadurch gekennzeichnet, daß die Vorschubeinrichtung ein an dem Außenmantel des Gutsstücks anliegendes Förderband umfaßt, das im Bereich einer der Schneideinrichtung (2) zugewandten Umlenkwalze in den Querschnitt (28) der Kaliberdüse (7) eindringt.
- Vorrichtung nach Anspruch 4, dadurch gekennzeichnet, daß die Kaliberdüse (7) einen in Vorschubrichtung (11) ersten Einlaufbereich (27) mit einem sich konisch oder pyramidenförmig verjüngenden Querschnitt und einen sich daran anschließenden Kalibrierbereich (29) mit konstantem Querschnitt aufweist, wobei der Querschnittsverlauf im Übergangsbereich zwischen dem Einlaufbereich (27) und dem Kalibrierbereich (29) stetig ist.
- Vorrichtung nach Anspruch 4 oder 5, dadurch gekennzeichnet, daß eine Aussparung (26) für die Umlenkwalze des Förderbandes sich ausschließlich im Einlaufbereich (27) der Kaliberdüse (7) befindet.
- Vorrichtung nach einem der Ansprüche 4 bis 6, dadurch gekennzeichnet, daß der Abstand des Förderbandes von der Mittelachse der Kaliberdüse (7) kleiner als der minimale Abstand des Innenmantels der Kaliberdüse (7) von deren Mittelachse im Kalibrierbereich (29) ist.
- Vorrichtung nach einem der Ansprüche 2 bis 7, dadurch gekennzeichnet, daß die Kaliberdüse (7) an Randbereichen beiderseits eines sich in axiale Richtung durchgängig erstreckenden Schlitzes (8) mit jeweils einem Lagerarm (9) versehen ist, die ungefähr parallel zueinander und ungefähr in radiale Richtung verlaufen und mit Endbereichen (10) in eine erste Lagertasche (11) eingreifen, und daß die Kaliberdüse (7) an der dem Schlitz (8) abgewandten Seite mit einem radial nach außen vorstehenden Lagerflansch (12) versehen ist, der sich in einer Halbtasche abstützt, die mittels eines Verschlußblechs (16) zu einer zweiten Lagertasche (13) vervollständigbar ist, wobei beide Lagertaschen (11, 13) sowohl in Vorschubrichtung (11) als auch in die entgegengesetzte Richtung mit Anlageflächen für die Lagerarme (9) oder den Lagerflansch (12) versehen sind.
- Vorrichtung nach einem der Ansprüche 2 bis 8, dadurch gekennzeichnet, daß das Verschlußblech (16) mit einem Positionierzapfen (23) in eine entsprechende Bohrung (24) in dem Lagerflansch (12) der Kaliberdüse (7) eingreift.
- Vorrichtung nach einem der Ansprüche 2 bis 9, dadurch gekennzeichnet, daß beide Lagertaschen (11, 13) an einem Befestigungsrahmen (15) angeordnet sind, der mit der Vorrichtung (1) lösbar verbunden ist.
- Vorrichtung nach Anspruch 10, dadurch gekennzeichnet, daß zwei oder mehr Kaliberdüsen (7) nebeneinander angeordnet sind und die daraus austretenden Gutsstücke mittels desselben Messers (3) aufschneidbar sind, wobei die Lagerarme (9) mehrerer Kaliberdüsen (7) in dieselbe erste Lagertasche (11) eingreifen und/oder die Lagerflansche (12) mehrere Kaliberdüsen (7) mittels desselben Verschlußblechs (16) fixierbar sind, und daß sämtliche Kaliberdüsen (7) an demselben Befestigungsrahmen (15) angeordnet sind.
- Vorrichtung nach Anspruch 11, dadurch gekennzeichnet, daß ein Förderband mehreren Kaliberdüsen (7) zugeordnet ist.
