Abstract

Настоящее изобретение относится к усиливающей вкус умами композиции, содержащей по меньшей мере одно усиливающее умами соединение, которая: а) способна проходить через мембраны ультрафильтрации, отделяющие соединения с молекулярной массой 250 кДа, b) по существу, не содержит ликопина, с) содержит соединение массой менее 250 кДа и d) способна усиливать вкус умами. Также заявляются умами-активные томатные фракции, содержащие эти композиции. Такие фракции и композиции являются подходящими для приготовления пищевых продуктов.
