Abstract
Fruit or vegetable juice, particularly tomato juice of unacceptably high acidity, is passed through an anion exchange resin bed to adjust the pH value to any desired level. This is a cheaper and more convenient method of deacidifying the juice than selective mixing with fruits of lower acidity transported from areas with different soils and climates. Preferably, clear juice is separated from pulp by filtering and centrifuging, the juice only being given ion exchange treatment. Pulp may then be added to the treated juice.
