Abstract

Fruit and/or vegetables are dehydrated by soaking the fruit or vegetables in a liquid which contains a substance which is capable of causing the cell walls of the fruit or vegetables to become permeable to cell liquor without killing them; and subsequently removing the fruit and/or vegetables from the liquid. The liquid may comprise a solution of cell liquor of a higher concentration than that present in the fruit and/or vegetable to be treated. Alternatively, the liquid may comprise a sugar solution which contains sulphurous acid. The liquid may additionally contain chloroform, diethyl ether and nitrous oxide. The fruit and/or vegetables may be pasteurized prior to treatment, and after treatment the fruit and/or vegetables may be dried and comminuted. The treatment is particularly applicable to apples, pineapples, strawberries, paw paw and onions. The treated fruit and/or vegetables may be rehydrated with water or a watercontaining solution which may contain one or more of sugar, starch, citric acid, tartaric acid, milk, milk powder, cream, and a flavouring promoter.
