Abstract

PURPOSE: To prepare a fine-grained juice, etc., by treating green vegetables, fruits, etc. with a tissue-disintegration enzyme containing metaphosphoric acid or polyphosphoric acid.

The mixture is heated at 100°C to deactivate the enzyme, and centrifuged to obtain the objective juice.
