Abstract

Raw grated vegetables to be consumed esp. carrot, celery and beetroot, are treated to extend their shelf life by steeping them in an aq. hot soln. contg. 30% vinegar, 2.5% salt and 2% sugar, draining and then conditioning in known manner. Shelf life is improved from 3 days to 12 days and the gustative qualities are not affected.
