Abstract

Μέθοδος για την παραγωγή κατεψυγμένου, προϊόντος διατροφής με επικάλυψη για φούρνο μικροκυμάτων, όπου η προαναφερόμενη μέθοδος περιλαμβάνει τα βήματα: παροχής κομματιού στερεού ή στερεοποιημένου υποστρώματος, επικάλυψης του κομματιού με υδαρές υγρό προεπικάλυψης για τη δημιουργία προεπικαλυμμένου κομματιού, εφαρμογής επικάλυψης συνεκτικού τρίμματος στο προεπικαλυμμένο κομμάτι για τη δημιουργία κομματιού με επικάλυψη από τρίμματα, εφαρμογής μείγματος από κουρκούτι στο επικαλυμμένο με τρίμμα κομμάτι, για τη δημιουργία κομματιού επικαλυμμένου με μείγμα από κουρκούτι, εφαρμογής επικάλυψης επικαλυμμένου τρίμματος στο επικαλυμμένο με μείγμα από κουρκούτι κομμάτι για τη δημιουργία κομματιού πανέ, τηγανίσματος του κομματιού πανέ, με επαφή του προαναφερόμενου πανέ κομματιού για τουλάχιστον 100 δευτερόλεπτα με καυτό λάδι, με θερμοκρασία τουλάχιστον 150°C, παράγοντας συνεπώς τηγανισμένο κομμάτι με επικάλυψη, με θερμοκρασία πυρήνα μεγαλύτερη από 70°C, και κατάψυξης του τηγανισμένου κομματιού με επικάλυψη, τοποθετώντας το προαναφερόμενο τηγανισμένο κομμάτι σε καταψύκτη, όπου η θερμοκρασία πυρήνα του τηγανισμένου κομματιού με επικάλυψη δεν είναι μικρότερη από 50°C, κατά προτίμηση όχι μικρότερη από 60°C όταν το προαναφερόμενο τηγανισμένο κομμάτι τοποθετείται στον καταψύκτη και όπου η προαναφερόμενη θερμοκρασία πυρήνα μειώνεται σε λιγότερο από -15°C με χρήση κρυογενούς ψύξης.
