Abstract
La presente invención se refiere a procedimiento para preparar huevos fritos congelados, de forma que partiendo de huevos frescos los mismos son cascado en correspondientes moldes impregnados de aceite para su introducción en un horno de convección a una temperatura de 232 a 252°C durante un tiempo de 130 a 150 segundos para ser fritos y su posterior introducción en un abatidor de temperatura a una temperatura de -23 a -13°C durante un tiempo de 15 a 25 minutos para ser congelados, siendo, finalmente, embolsados de forma unitaria, de manera que al ser descongelados se obtiene un huevo frito con una textura semejante a la de un huevo frito recién hecho.
