【背景技术】
高强度甜味剂在许多情况下具有超过蔗糖的甜度的甜度水平。它们基本上是非-热量的,及广泛用于减肥及卡路里减少的食品的生产。尽管天然的热量甜味剂诸如蔗糖,果糖和葡萄糖给消费者提供最期望味道,但它们是热量的。高强度甜味剂不影响血糖水平及提供少或无营养价值。

高强度甜味剂可源于天然的高强度甜味剂,例如,通过发酵,酶处理,或衍生化的修饰。

为了检测PCS-5001(甜叶菊提取物)的甜度识别水平,使用由Harman等人(食品技术,11/2013)提到的测试方法,由已之前定性它们的味道锐度及使用甜度强度评级尺度训练的10名训练的评委,于室温评价蔗糖和甜叶菊提取物(PCS-5001或PCS-1015)的一系列水溶液;用过滤水制备1.5%浓度的蔗糖溶液和100和120ppm之间的浓度(PCS-5001)和70~80ppm之间的浓度(PCS-1015)的甜叶菊提取物溶液。测试的目的是测定甜叶菊提取物的甜度识别水平。评估以一式三份使用相同的评委进行,从而为各平均数据点产生总共30个值。
将样品编码,及以随机顺序呈给小组成员,以尝及测定哪个样品更甜(ASTME2164-08:用于定向差异测试的标准方法)。评委被要求仅关注那些样品的甜属性,及使用温水和盐溶液,以便在样品之间清除口味。
结果加尾,及由SIM 2000(Sensory Computer System,NJ)计算显著性。结果示于表4。那些样品的总体甜度极罕可检测。2-AFC显示,100ppm PCS-5001和70ppm的PCS-1015溶液是最不甜的样品,及显著地不如1.5%糖对照甜。含120ppm PCS-5001和80ppm PCS-1015的样品是最甜样品,显示相比1.5%糖对照显著地更高甜度(表4)。水中甜叶菊提取物(PCS-5001)的识别阈值浓度被测定为100ppm。水中甜叶菊提取物(PCS-1015)的识别阈值浓度被测定为70ppm。

【实施例1B:用于甜度检测的浓度阈值的甜度检测】
10名小组成员于室温评价了用蔗糖和甜叶菊提取物甜味化的一系列柠檬-青柠味的碳酸化的软饮料(CSD);评估做以一式三份由相同的评委进行,从而各平均数据点产生至少30个值。柠檬青柠味的碳酸化的软饮料对照样品具有1.5%蔗糖浓度,及测试样品含有110和120ppm的浓度的甜叶菊提取物(PCS-5001)或70和90ppm浓度的甜叶菊提取物(PCS-1015)。CSD样品中的其他成分是柠檬酸,柠檬-青柠香,苯甲酸钠,柠檬酸钾和黄原胶。测试目的是测定甜叶菊提取物的甜度检测限。如在实施例1A中所述进行测试。
含120ppm PCS-5001(甜叶菊提取物)和90ppm PCS-1015(甜叶菊提取物)的样品显示甜度相比1.5%糖对照无显著差异。柠檬-青柠味的碳酸化的软饮料水中PCS-5001(甜叶菊提取物)的识别阈值浓度被测定为110ppm。柠檬-青柠味的碳酸化的软饮料水中PCS-1015(甜叶菊提取物)的识别阈值浓度被测定70ppm。结果显示于表5。

【实施例2:甜叶菊提取物对典型碳酸化的软饮料应用中的香修饰的效应】
制备可乐味的碳酸化的软饮料,以评价PCS-5001和PCS-1015(甜叶菊提取物)对用糖和甜叶菊甜味剂(为达到30%糖减小)甜味化的饮料的甜度和香特征的效应(表6)。由30名消费者小组成员评价含及不含PCS-5001或PCS-1015的样品,如表7中提到的一样,所述消费者小组成员就10pt连续强度尺度上的总体喜好,甜度,香兰香,BROWN NOTE和余味,给各样品赋予相对值。

图2显示通过添加甜叶菊提取物(PCS-5001)导致的香和甜度特征的修饰。结果指示,含有甜叶菊提取物PCS-5001的样品和含有PCS-1015的样品相比对照样品具有显著地更高的可乐香,香兰香,BROWN SPICE NOTE和总喜好(以95%置信)。含有PCS-5001的样品相比对照样品具有定向地更低的苦味,及苦余味强度(分别以90%和95%置信)。含有PCS-1015的样品相比对照样品具有定向地更低的苦味,及甜余味强度(以80%置信)。此外,含甜叶菊提取物(PCS-1015)的样品相比对照样品具有显著地更低的苦余味(以95%置信)。
【实施例3:用于感觉评估的桃味的茶饮料】
制备桃味的黑茶饮料,以评价甜叶菊提取物对用糖和甜叶菊甜味剂(达到30%糖减小)甜味化的饮料的甜度和香特征的效应(表8)。在实施例2中提到的一样评价含及不含甜叶菊提取物的样品,由30名消费者小组成员,所述消费者小组成员在10pt连续强度尺度上对桃香,茶香,酸强度,收敛和余味赋予相对值,其中0=觉察不到的和10=极其显著的。

【实施例4:甜叶菊提取物对香应用的香修饰的效应】
制备调味料混合物,以测定调味料混合物中的甜叶菊提取物对糖减少的焙烧的花生样品的香修饰效应。30名消费者小组成员就总体验收和属性强度(总体香,咸度,甜度,烟香,香/热强度,花生香,红辣椒粉香,苦味及逗留甜余味强度)评价了2个花生样品。2个样品(表9)包括:(1)含有甜叶菊糖苷的50%糖减少的对照样品,及(2)含有甜叶菊醇糖苷和甜叶菊提取物,PCS-5001或PCS-1015的50%糖减少的测试样品。
测试目的是测定是否甜叶菊提取物的添加影响香零食食品的香特征。结果指示,以110ppm的PCS-5001和以70ppm的PCS-1015的添加提供香修饰(图5)。含有110ppm PCS-5001的测试样品相比对照具有显著地更高盐强度,烟香和苦强度(95%置信)。测试样品也相比对照具有更低甜强度(95%置信)。此外,含有甜叶菊提取物的测试样品具有定向地更高香和红辣椒NOTE(90%置信)。含有PCS-1015的测试样品相比对照样品具有显著地更高盐强度(以95%置信)。测试样品显示热/香强度,及红辣椒香相比对照增加。

【实施例5:沙司和蔬菜制备物的香修饰】
制备蕃茄酱制备物,以测定甜叶菊提取物(PCS-1015)的香修饰效应。一组30名公司雇员评价了各样品的总体验收和属性强度(番茄,洋葱,醋,甜,咸度,苦味和余味)。对于如示于表11的沙司样品采用在实施例4中提到的感觉评估方法。

【实施例6:PCS-1015(甜叶菊提取物)对乳制品应用的香修饰的效应】
制备巧克力味的乳制品饮料,以测定乳制品饮料中甜叶菊提取物(PCS-1015)的香修饰效应。评委评价了巧克力乳样品的总体验收和属性强度(巧克力香,乳制品NOTE,甜度,苦味和余味)。2个样品(表12)包括:(1)含有甜叶菊糖苷的50%糖减少的对照样品,及(2)含有甜叶菊糖苷和80ppm的甜叶菊提取物,PCS-1015的50%糖减少的测试样品。

【实施例7:甜叶菊提取物(PCS-5001)对烘烤食品应用的香修饰的效应】
开发柠檬罂粟种子味的松饼配方,以测定烘焙食品应用中甜叶菊提取物(PCS-5001)的香修饰效应。为了测试烘焙食品中PCS-5001的贡献,用含甜叶菊醇糖苷的45%糖减少的配方作为对照,及含甜叶菊醇糖苷和甜叶菊提取物(PCS-5001)的糖减少的配方作为测试样品烘烤柠檬味的罂粟籽松饼,如显示于表14。30名成员消费者评委就几个属性(柠檬,香兰香,BROWN NOTE,甜&苦余味)评价了2个柠檬罂粟籽松饼样品。

【实施例8:甜叶菊提取物(PCS-5001)对减少的钠应用的香修饰的效应】
开发30%盐减少的玉蜀黍饼片配方,以测定盐减少的应用中甜叶菊提取物(PCS-5001)的香修饰效应。为了测试盐减少的应用中PCS-5001的贡献,将CHEDDAR干酪味的玉蜀黍饼片用对照盐制剂包被,及含甜叶菊提取物(PCS-5001)的30%盐减少的配方作为测试样品,如显示于表15。16名成员消费者评委就不同属性(甜强度,咸度,干酪香,乳制品NOTE,玉米香,苦味和甜&苦余味)评价了CHEDDAR干酪味的玉蜀黍饼片的2个样品。
图9显示通过添加甜叶菊提取物(PCS-5001)导致的香和咸感的修饰。评委发现,相比全钠对照,30%盐减少的配方中甜叶菊提取物的添加提供咸感的增加。此外,相比无甜叶菊提取物的对照样品,甜叶菊提取物提供甜强度和乳制品NOTE的更高增加(95%置信)。

开发牛肉干配方,以测定干燥的肉应用中甜叶菊提取物(PCS-5001)的香修饰效应。为了测试干燥的肉应用中PCS-5001的贡献,将Flank牛排用减少糖的对照配方,及含甜叶菊醇糖苷和甜叶菊提取物(PCS-5001)的30%糖减少的配方作为测试样品浸泡,如显示于表16。20名成员消费者评委就不同属性(甜强度,咸度,黑胡椒,照烧香,脂肪-样强度,牛肉香和甜余味)评价了2个牛肉干样品。
图10显示通过添加甜叶菊提取物(PCS-5001)导致的香和咸感的修饰。评委发现,30%糖减少的配方中甜叶菊提取物的添加提供咸感的增加。

【实施例10:甜叶菊提取物(PCS-5001)对棕肉汁中钠减少的应用的香修饰的效应】
开发30%钠减少的棕肉汁配方,以测定盐减少的应用中甜叶菊提取物(PCS-5001)的香修饰效应。为了测试盐减少的应用,30%钠减少的棕肉汁配方,及含甜叶菊提取物(PCS-5001)的30%盐减少的配方作为测试样品中PCS-5001的贡献。30成员消费者评委就不同属性(甜强度,咸度,黑胡椒,牛肉香和洋葱/香NOTE,苦味和甜&苦余味)评价了2个棕肉汁样品。
图11显示通过添加甜叶菊提取物(PCS-5001)导致的香和咸感的修饰。评委发现,相比30%钠减少的对照,30%盐减少的配方中甜叶菊提取物的添加提供咸感的增加。此外,相比无甜叶菊提取物的对照样品,甜叶菊提取物提供香和黑胡椒NOTE更高的增加(95%置信)。也有苦余味的减小。
【实施例11:甜叶菊提取物对乳制品产品的香修饰的效应】
为了评价PCS-1015(MLD-1),甜叶菊提取物对乳产品的贡献,制备2个50%糖减少的巧克力乳样品,及由30名公司雇员的消费者评委测试。消费者评委分2期就总体验收和属性强度(巧克力香,乳制品NOTE,甜度,苦味和余味)评价了那2个巧克力乳样品。在一期,2个样品包括:(1)含有PureCircleα(甜叶菊醇糖苷甜味剂)的50%糖减少的对照样品,和(2)含有PureCircleα和70ppm PCS-1015(MLD-1)的50%糖减少的测试样品。在2期,2个样品包括:(1)含有PureCircleα(甜叶菊醇糖苷甜味剂)的50%糖减少的对照样品,和(2)含有PureCircleα和80ppm PCS-1015(MLD-1)的50%糖减少的测试样品。表17显示对照及50%糖减少的测试样品的配方。

【实施例12:甜叶菊提取物对点心(香兰蛋奶糊)的效应】
为了测试明胶和布丁中甜叶菊提取物,PCS-1015的贡献,测试了2个30%卡路里减少的香兰蛋奶糊样品:(1)用PureCircleα,PureCircle甜叶菊甜味剂甜味化的,(2)用PureCircleα和PCS-1015(MLD-1)甜味化的。表19显示对照及测试样品的配方。一组30名在表征感觉属性上有长期经验的受训练的评委品尝了2个样品。
为了制备样品,混合PureCircleα及测试成分(PCS-1015)与干成分。使用良好搅拌向乳添加干成分。低温加热,直到全部成分溶解。加热至95℃经10分钟,以烹饪淀粉。添加香料,对其搅拌,冷却,对其搅拌,之后将其放置在冰箱内。在1盎司杯中冷却服用。

Claims (17)

1.味和香修饰组合物,其包含:
主要甜叶菊醇糖苷,其包含Reb A,Reb C,Reb D和甜叶菊苷,及
糖基化的二萜衍生物植物分子,其源于甜叶菊(Stevia rebaudiana)植物。
2.权利要求1的味和香修饰组合物,其中
所述主要甜叶菊醇糖苷包含多于2种选自下列的甜叶菊醇糖苷分子:Reb A,甜叶菊苷,Reb D和Reb C;
4种主要甜叶菊醇糖苷的每一种的含量在组合物的1%~25%之间变动。
3.权利要求2的味和香修饰组合物,其中
所述Reb A含量在5%~20%之间,
所述Reb C含量在1%~25%之间,
所述Reb D含量在1%~20%之间,及
所述甜叶菊苷含量在2%~15%之间。
4.权利要求1的味和香修饰组合物,还包含少数甜叶菊醇糖苷及糖基化的二萜衍生物,所述糖基化的二萜衍生物包含莱苞迪苷E、N和O;其中所述这些少数甜叶菊醇糖苷和它们的衍生物之每一种的含量少于组合物的10%。
5.权利要求1的味和香修饰组合物,还包含其他少数甜叶菊醇糖苷和衍生物,所述其他少数甜叶菊醇糖苷和衍生物包含甜叶菊双糖苷,悬钩子苷,卫矛醇苷和莱苞迪苷B,F,G,H,K,L,M;其中所述这些少数甜叶菊醇糖苷和它们的衍生物之每一种的含量少于组合物的5%。
