Abstract
本发明涉及一种能帮助降低血糖且具有减肥作用的素食粉。所述素食粉由下列重量份的原料制成:荞麦14~20份、燕麦4~8份、赤小豆15~30份、茯苓3~6份、红枣3~6份、枸杞1~5份、山药5~10份、芡实3~6份、薏苡仁16~30份、高粱8~15份、莲子3~6份、白扁豆8~15份。本发明还涉及上述素食粉的制备方法。本发明的素食粉营养均衡、低热量,富含膳食纤维以及补充人体维持正常功能必需的蛋白质、氨基酸、维生素和微量元素,其中的膳食纤维可使人体产生饱腹感,延长了进食间隔,从而减少了能量的摄入量,达到减肥的效果。素食粉中所含营养物质能达到控制餐后血糖、降低血压血脂、保护心脑血管、调理脾胃和大肠的功能,有效改善和促进人们的营养和健康状况。

本发明涉及保健食品技术领域,具体地说,是一种能帮助降低血糖且具有减肥作用的素食粉。
背景技术
随着生活水平的提高,生活节奏的加快,午餐不再那么丰盛,而晚餐桌上往往是高脂肪、高蛋白和高热量的食物,由于晚餐后运动量减少,或者由于应酬,饮食变得不规律,因此,肥胖人群不断增多。肥胖给人们的生活和工作带来很大的不便,不但如此,因肥胖而引起的很多并发症(肥胖并发高血压、肥胖并发冠心病和各种心脑血管疾病、肥胖并发糖尿病和高脂血症、肥胖并发肺功能不全、肥胖并发脂肪肝、肥胖并发生殖、性功能不全等)正在吞噬着人们的健康。高血糖、高血脂、糖尿病等很大程度上是由肥胖引起。
“药食同源”是中华原创医学之中对人类最有价值的贡献之一。五谷杂粮,有益于人类而无害于身体,因而性“中”。这是中华原创医学选择食品最主要的标准。这个标准是建立在“以人为本”的基础,中医历来强调“药疗不如食疗”,以食物为药物具有以下几大突出的优点:一、长期使用药物治病往往会产生各种副作用和依赖性,而且还可能对人体的健康造成影响;而食疗相对安全有效,毒副作用小;二、食疗使用的都是我们日常生活中常见的食物,价格低廉,让我们在日常用餐中便可达到调理的目的,这是昂贵的医药费所无法比拟的;三、食物为药还具有无痛苦的优点,让人们在享受美食的过程中祛除病痛,避免了打针、吃药,甚至手术之苦。
中国专利文献2015107157624公开了一种营养均衡的代餐粉,包括以下组分:小米,莲藕,荞麦,薏米,燕麦,黑米,山药,莲子,黄玉米,马铃薯,板栗,黑芝麻,魔芋,黑豆豆豉,枸杞,核桃,桑葚,红枣,葛根,橄榄油,紫苏籽油,麦芽糊精,浓缩乳清蛋白,L-苹果酸,L-肉碱,乳钙;该发明还公开了一种营养均衡的代餐粉的制备方法,经常食用该发明的代餐粉能达到控制餐后血糖、保肝养肾、保护心脑血管、调理脾胃和大肠的功能,有效改善和促进人们的营养和健康状况。中国专利文献2017101195208公开了一种降血糖代餐粉;该配方结合糖尿病患者的体质特征,根据传统中医精髓理论合理配伍多种“药食同源”之中药,采用多种经SBE技术提取药食两用的中药提取物精华以及生物酶解提取的短肽、益生元、碳水化合物、有保健功能的油脂、五谷杂粮、混合水果粉、多种维生素及矿物质一起混合等工艺加工制成,不仅可作为单一营养来源满足糖尿病患者的营养需求,还起到了抗衰老、增强胰岛素活性、降血糖、降血脂、降脂减肥及增强免疫力的功效。但是关于本发明的能帮助降低血糖、血脂以及具有减肥作用的素食粉,目前还未见报道。
发明内容
本发明的第一个目的是,针对现有技术中的不足,提供一种能帮助降低血糖、血脂以及具有减肥作用的素食粉。
本发明的第二个目的是,提供一种上述素食粉的制备方法。
为实现上述第一个目的,本发明采取的技术方案是:
一种素食粉,所述的素食粉由下列重量份的原料制成:荞麦14~20份、燕麦4~8份、赤小豆15~30份、茯苓3~6份、红枣3~6份、枸杞1~5份、山药5~10份、芡实3~6份、薏苡仁16~30份、高粱8~15份、莲子3~6份、白扁豆8~15份。
优选地,所述的素食粉有下列重量份的原料制成:荞麦17份、燕麦6份、赤小豆23份、茯苓5份、红枣4份、枸杞3份、山药7份、芡实4份、薏苡仁23份、高粱12份、莲子5份、白扁豆12份。
为实现上述第二个目的,本发明采取的技术方案是:
上述素食粉的制备方法,包括以下步骤:
(1)称取所需质量份的荞麦、燕麦、赤小豆、茯苓、山药、芡实、薏苡仁、高粱、白扁豆,分别洗净、烘干,低温烘焙;
(2)称取所需质量份的红枣、枸杞、莲子,洗净、烘干;
(3)将上述各组分粉碎、过筛;
(4)将所得粉末混合均匀,灭菌、分装。
优选地,步骤(1)中所述低温烘焙的烘焙温度为60~100℃,烘焙时间为2~3小时。
优选地,步骤(3)中所述筛的目数为80目。
本发明采用将上述材料熟化并粉碎的方式,食用者只需使用沸水冲泡使用,代替正餐。不仅能够在家食用,也能够在办公室等无烹饪条件的场所中食用,简单方便。且由于所有材料均通过低温熟化的方式进行处理,低温条件能够使大幅度抑制材料中的有益成分的活性,延长了该代餐粉的保存期限,而随着沸水的冲泡,被抑制了活性的有益成分会逐渐恢复活性,使得配方中各材料中所含的营养成份能够被人体充分吸收。
本发明遵从中医“药食同源、身性同养”的养生精髓以及现代营养均衡学原理,其中,荞麦、赤小豆、薏苡仁、高粱、白扁豆中富含大量的淀粉、蛋白质以及维生素,作为素食粉中主要的能量来源,满足人体活动的基本能量需求。此外,还具有丰富的膳食纤维,一方面各类膳食纤维在小肠中不被人体消化吸收、在大肠中部分或全部发酵的一类碳水化合物,膳食纤维吸水膨胀,进入胃部以后,能够形成比自身体积大25~80倍的体积,占据胃部空间,诗人有饱腹感,有利于减肥;另一方面,膳食纤维中的水溶性纤维可减缓消化速度和最快速排泄胆固醇,所以可让血液中的血糖和胆固醇控制在最理想的水准之上,还可以帮助糖尿病患者降低胰岛素和三酸甘油脂。
燕麦含粗蛋白质达15.6%,脂肪8.5%,还有淀粉释放热量以及磷、铁、钙等元素,与其它8种粮食相比,均名列前茅。燕麦中水溶性膳食纤维分别是小麦和玉米的4.7倍和7.7倍。燕麦中的B族维生素、尼克酸、叶酸、泛酸都比较丰富,特别是维生素E,每100克燕麦粉中高达15毫克;此外燕麦粉中还含有谷类食粮中均缺少的皂甙(人参的主要成分)。蛋白质的氨基酸组成比较全面,人体必需的8种氨基酸含量的均居首位,尤其是含赖氨酸高达0.68克;其降低血压、降低胆固醇、防治大肠癌、防治心脏疾病的医疗价值和保健作用,已被古今中外医学界所公认。
茯苓性味甘淡平,入心、肺、脾经。具有渗湿利水,健脾和胃,宁心安神的功效,其主要成分为茯苓聚糖,含量很高,对多种细菌有抑制作用;能降胃酸,对消化道溃疡有预防效果;对肝损伤有明显的保护作用;有抗肿瘤的作用;能多方面对免疫功能进行调节;能使化疗所致白细胞减少加速回升;并有镇静的作用。
红枣味甘性温、归脾胃经,有补中益气、养血安神、缓和药性的功能,富含蛋白质、脂肪、糖类、胡萝卜素、B族维生素、维生素C、维生素P以及磷、钙、铁等成分,其中维生素C的含量在果品中名列前茅,有"天然维生素丸"之美称。
枸杞的主要成份为甜菜碱,阿托品,天仙子胺。枸杞多糖是一种水溶性多糖,是枸杞中最主要的活性成分,现已有很多研究表明枸杞多糖具有促进免疫、抗衰老、抗肿瘤、清除自由基、抗疲劳、抗辐射、保肝、生殖功能保护和改善等作用;枸杞对脂质代谢或抗脂肪肝的作用主要是由于所含的甜菜碱引起的,它在体内起甲基供应体的作用。枸杞色素:主要包括胡萝卜素、叶黄素和其他有色物质。很多研究已经证明枸杞籽色素具有提高人体免疫功能、预防和抑制肿瘤及预防动脉粥样硬化等作用。胡萝卜素是枸杞色素的主要活性成分,具有抗氧化和作为维生素A的合成前体等重要的生理功能。
山药含有大量的黏蛋白,黏蛋白是一种多糖蛋白质的混合物,对人体具有特殊的保健作用,能防止脂肪沉积在心血管上,保持血管弹性,阻止动脉粥样硬化过早发生;山药还含有皂苷,能够降低胆固醇和甘油三酯,对高血压和高血脂等病症有改善作用。
莲子有镇静、强心、抗衰老等多种作用。莲子营养十分丰富,除含有大量淀粉外,还含有β-谷甾醇,生物碱及丰富的钙、磷、铁等矿物质和维生素,莲子所含的非结晶形生物碱N-9有降血压作用。
本发明的素食粉营养均衡、低热量,富含膳食纤维以及补充人体维持正常功能必需的蛋白质、氨基酸、维生素和微量元素,完全符合《中国居民膳食营养素参考摄入量》的要求,其中的膳食纤维可使人体产生饱腹感,延长了进食间隔,从而减少了能量的摄入量,达到减肥的效果。素食粉中所含营养物质能达到控制餐后血糖、降低血压血脂、保护心脑血管、调理脾胃和大肠的功能,有效改善和促进人们的营养和健康状况。

实施例1一种素食粉的制备(一)
(1)称取荞麦170g、燕麦60g、赤小豆230g、茯苓50g、山药70g、芡实40g、薏苡仁230g、高粱120g、白扁豆120g,分别洗净、烘干,在60~100℃下烘焙2~3小时;
(2)称取红枣40g、枸杞30g、莲子50g,洗净、烘干;
(3)将上述各组分粉碎、过80目筛;
(4)将所得粉末混合均匀,灭菌、分装。
实施例2一种素食粉的制备(二)
(1)称取荞麦140g、燕麦40g、赤小豆150g、茯苓30g、山药50g、芡实30g、薏苡仁160g、高粱80g、白扁豆80g,分别洗净、烘干,在60~100℃下烘焙2~3小时;
(2)称取红枣30g、枸杞10g、莲子30g,洗净、烘干;
(3)将上述各组分粉碎、过80目筛;
(4)将所得粉末混合均匀,灭菌、分装。
实施例3一种素食粉的制备(三)
(1)称取荞麦200g、燕麦80g、赤小豆300g、茯苓60g、山药100g、芡实60g、薏苡仁300g、高粱150g、白扁豆150g,分别洗净、烘干,在60~100℃下烘焙2~3小时;
(2)称取红枣60g、枸杞50g、莲子60g,洗净、烘干;
(3)将上述各组分粉碎、过80目筛;
(4)将所得粉末混合均匀,灭菌、分装。
实施例4减肥效果实验
我国体质参考标准:体质指数(BMI)=体重千克数/身高的平方(米),判定肥胖的标准如下:
选取200名自愿参加的超重人员作为实验对象,其中男性90例,女性110例,平均年龄28±5.6岁,按30g/袋分装本发明实施例1制得的素食粉,热水冲调后服用,按照自身需求,每次1~3袋,代替晚餐。
受试者分别于实验开始时、食用1个月后、食用2个月后,测定体重、BMI值和体脂百分比。
结果如下表所示:
注:**与食用前相比具有显著性差异(P<0.01)。
由上表可知,受试者在食用本发明的素食粉后,体重显著降低,体脂百分比下降,差异具有显著性(P<0.01)。且随着实验进行,受试者整体摄入量普遍减少。
实施例5对2型糖尿病患者血糖的影响
选取2型糖尿病患者30例,年龄40~60岁,经体检无明显肝、肾等功能障碍。按30g/袋分装本发明实施例1制得的素食粉,热水冲调后服用,按照自身需求,每次1~3袋,代替晚餐。
受试者分别于受试者分别于实验开始时、食用1个月后、食用2个月后,测定空腹血糖以及餐后两小时血糖,每次持续监3天,取平均值。
结果如下表所示:

由上表可知,本发明的素食粉能有效降低2型糖尿病患者的空腹血糖以及餐后两小时血糖,差异具有显著性,且食用两个月后效果优于食用一个月,证明坚持食用本发明的素食粉,在保证营养的情况下,可有效帮助2型糖尿病患者降低血糖。
以上所述仅是本发明的优选实施方式,应当指出,对于本技术领域的普通技术人员,在不脱离本发明方法的前提下,还可以做出若干改进和补充,这些改进和补充也应视为本发明的保护范围。
Claims (5)
1.一种素食粉,其特征在于,所述的素食粉由下列重量份的原料制成:荞麦14~20份、燕麦4~8份、赤小豆15~30份、茯苓3~6份、红枣3~6份、枸杞1~5份、山药5~10份、芡实3~6份、薏苡仁16~30份、高粱8~15份、莲子3~6份、白扁豆8~15份。
2.根据权利要求1所述的素食粉,其特征在于,所述的素食粉由下列重量份的原料制成:荞麦17份、燕麦6份、赤小豆23份、茯苓5份、红枣4份、枸杞3份、山药7份、芡实4份、薏苡仁23份、高粱12份、莲子5份、白扁豆12份。
3.权利要求1或2所述的素食粉的制备方法,其特征在于,包括以下步骤:
(1)称所需质量份的取荞麦、燕麦、赤小豆、茯苓、山药、芡实、薏苡仁、高粱、白扁豆,分别洗净、烘干,低温烘焙;
(2)称取所需质量份的红枣、枸杞、莲子,洗净、烘干;
(3)将上述各组分粉碎、过筛;
(4)将所得粉末混合均匀,灭菌、分装。
4.根据权利要求3所述的制备方法,其特征在于,步骤(1)中所述低温烘焙的烘焙温度为60~100℃,烘焙时间为2~3小时。
5.根据权利要求3所述的制备方法,其特征在于,步骤(3)中所述筛的目数为80目。
