辣椒酱是餐桌上比较常见的调味品,各个地区都有不同的地方风味辣椒酱。辣椒中含有的维生素C居蔬菜之首位,还含有丰富的钙、铁等矿物质,医药专家认为,辣椒能缓解胸腹冷痛,制止痢疾,杀抑胃腹内寄生虫,控制心脏病及冠状动脉硬化;还能刺激口腔粘膜,引起胃的蠕动,促进唾液分泌,增强食欲,促进消化。但是现有的辣椒酱制作工艺复杂,而且口味单一,营养价值低,且难以满足人们不同口味的需求。
因此,如何提供一种具有营养价值高、制备方法简单、原料非常常见、不添加任何防腐剂等特点的栗肉辣椒酱是本领域技术人员亟需解决的问题。

栗肉辣椒酱,其特征在于,所述栗肉辣椒酱由以下重量份的各组分组成:板栗17.5%、黄豆13%、花生米10%、植物油20%、里脊肉10%,黄豆酱11%,盐3%、芝麻2%、辣椒碎7%、鸡精0.25%、十三香0.25%、姜1%、葱1%、蒜1%、白糖2%、高度白酒1%。
优选的,在上述一种栗肉辣椒酱中,所述栗肉辣椒酱的制备方法,包括以下步骤:(1)精选上好猪里脊肉洗净后沥水切丁、板栗切丁备用;(2)将黄豆干炒后用开水泡至1个小时后捞出沥水;(3)花生米干炒去皮后打碎;(4)芝麻炒熟备用;(5)锅中放油加热,放入葱、姜、蒜炒香后,将其捞出;(6)根据权利要求1中的重量份数向锅中先放入肉丁,待肉丁变微焦后依次放入黄豆、花生米、板栗丁、辣椒碎翻炒,待油变红后放入黄豆酱再翻炒,最后放入芝麻、盐、鸡精、白糖、十三香、高度白酒,待整体均匀粘稠后盛出,然后晾凉,装瓶即可。

Claims (2)
1.栗肉辣椒酱,其特征在于,所述栗肉辣椒酱由以下重量份的各组分组成:板栗17.5%、黄豆13%、花生米10%、植物油20%、里脊肉10%,黄豆酱11%,盐3%、芝麻2%、辣椒碎7%、鸡精0.25%、十三香0.25%、姜1%、葱1%、蒜1%、白糖2%、高度白酒1%。
2.根据权利要求1所述的栗肉辣椒酱,其特征在于,所述栗肉辣椒酱的制备方法,包括以下步骤:(1)精选上好猪里脊肉洗净后沥水切丁、板栗切丁备用;(2)将黄豆干炒后用开水泡至1个小时后捞出沥水;(3)花生米干炒去皮后打碎;(4)芝麻炒熟备用;(5)锅中放油加热,放入葱、姜、蒜炒香后,将其捞出;(6)根据权利要求1中的重量份数向锅中先放入肉丁,待肉丁变微焦后依次放入黄豆、花生米、板栗丁、辣椒碎翻炒,待油变红后放入黄豆酱再翻炒,最后放入芝麻、盐、鸡精、白糖、十三香、高度白酒,待整体均匀粘稠后盛出,然后晾凉,装瓶即可。
