果酱是把水果、糖及酸度调节剂混合后,经熬制得到的凝胶物质,也叫果子酱。制作果酱是长时间保存水果的一种方法,果酱主要用来涂抹于面包或吐司上食用。现有的果酱种类繁多、口味也不尽相同.苹果中含有非常丰富营养成分。
苹果中的维生素C 是心血管的保护神、心脏病患者的健康元素。具有生津止渴、益脾止泻、和胃降逆的功效。苹果还能防癌,防铅中毒。医学认为苹果具有生津止渴、润肺除烦、健脾益胃、养心益气、润肠、止泻、解暑、醒酒等功效。酱料,是调味食物的材料。中国人常用的酱料有:拌冷面酱、自制香辣刺激的辣椒、烧烤酱、鲍汁、传统芝麻酱、叉烧包酱料、豆豉酱、肉末麻辣酱、烤肉酱汁、蒜蓉酱、韩式辣椒酱、黑椒汁、甜辣酱、寿司醋、水餃煎餃沾醬、酸辣黄金酱、潮式酸辣酱等。
青梅不仅具有食用价值。还有一定的药用价值。据《本草纲目》记载,乌梅( 炮制后的青梅) 味酸、性温、平涩、无毒、可下气,除热、消烦,安心,止肢体痛,去青黑痣,补筋脉,止下痢。青梅能促进唾液分泌更多的腮腺素。腮腺素是一种内分泌素,常被称为“返老还童素”,可以促进全身组织和血管趋于年轻化,保持新陈代谢的节律,有美肌美发的功效。青梅中含丰富的有机酸可使人体肠道暂时呈酸性,对大肠杆菌、沙门氏菌、金黄色葡萄球菌等病原体有一定抑制作用,可用于预防肠道传染病。青梅对腹泻,便秘皆有效,具双向调节作用,是最合适的调整消化器官的活性食品。青梅含有的丙酮酸和齐醇果酸等活性物质对肝脏有保护作用,能提高肝脏的解毒功能,增强人体清除食毒、水毒、血毒的能力,故有“人体卫士”之称。青梅中的几茶酸能促进肠蠕动和调理肠胃功能,对便秘患者( 尤其是孕妇) 有显著功效。青梅富含蛋白质、糖、果酸、钙、铁、维生素等多种营养元素,其中的维生素B12、维生素C 对防癌,抗癌有积极作用。
芝麻也同样含有丰富的氨基酸和多种维生素,营养丰富。对头发也有一定的保健作用。有润肠通便的作用。
腰果含蛋白质达21%,含不饱和脂肪酸达40%,富含钙、磷、锌、铁等微量元素,具有抗氧化、防衰老、抗肿瘤和抗心血管病的作用。而其所含的脂肪多为不饱和脂肪酸,其中油酸占总脂肪酸的67.4%,亚油酸占19.8%,是高血脂、冠心病患者的食疗佳果。 无论是油炸、盐渍、糖饯,皆香美可口,风味独特。腰果味甘,性平,无毒。《本草拾遗》中记载:腰果仁润肺、去烦、除痰。此外,腰果还可以健脾,脾胃不佳的朋友,常吃会有不错的保健功效。
发明内容
本发明的目的在于提供一种美味可口、风味独特、具有保健作用的果酱。一种保健果酱,由下列各原料按重量份制备而成:苹果80-100份、青梅60-80份、白糖20-30份、蜂蜜5-10份、芝麻5-10份、枸杞2-5份、腰果5-10份、果胶1-3份。本发明所解决的技术问题采用以下技术方案来实现:
(1)将60-80份青梅洗尽,去除果皮后放入水果打浆机中打成糊状;
(2)苹果80-100份,去皮,切开,除去苹果中间心根,再切成一片片,放到事先调好的盐水里泡洗。这样解决了苹果于空气接触氧化产生变色,保证了苹果新鲜要求标准。
(3)将苹果放入容器里,上面撒满稍厚的一层白砂糖,腌制1-2 个小时会渗出水份,将腌出的水和苹果一起倒入锅内,大火煮开后改中火煮,中间要勤快搅拌,防止粘锅。当水份越来越少时,不停搅拌,苹果也会跟着越来越软烂、粘稠。
(4)芝麻5-10份洗净后,凉干放在电饼铛中或平底锅炒香; 炒至颜色变成稍黄色,便会轻松捏碎,并且闻有芝麻的香味。
(5)腰果5-10份在加适量净水入锅中煮沸;捞起,再用100 度油温将腰果炸熟。颜色稍变金黄捞起便可。
(6)上述原料全部倒回锅中,加入枸杞2-5份、果胶1-3份用小火、充分搅拌,煮至光滑粘稠即可,凉透后、消毒杀菌、装瓶。

(6)上述原料全部倒回锅中,加入枸杞5份、果胶3份,用小火、充分搅拌,煮至光滑粘稠即可,凉透后、消毒杀菌、装瓶。
Claims (2)
1.一种保健果酱,由下列各原料按重量份制备而成:苹果80-100份、青梅60-80份、白糖20-30份、蜂蜜5-10份、芝麻5-10份、枸杞2-5份、腰果5-10份、果胶1-3份。
2.如权利要求1所述的保健果酱,其制备工艺具体包括如下步骤:
(1)将60-80份青梅洗尽,去除果皮后放入水果打浆机中打成糊状;
(2)苹果80-100份,去皮切开,除去苹果中间心根,再切成一片片,放到事先调好的盐水里泡洗;
(3)将苹果放入容器里,上面撒满稍厚的一层白砂糖,腌制1-2个小时会渗出水份,将腌出的水和苹果一起倒入锅内,大火煮开后改中火煮,中间要勤快搅拌,防止粘锅;
(4)芝麻5-10份洗净后,凉干放在电饼铛中或平底锅炒香,炒至颜色变成稍黄色;
(5)腰果5-10份在加适量净水入锅中煮沸;捞起,再用100度油温将腰果炸熟,颜色稍变金黄捞起便可;
(6)上述原料全部倒回锅中,加入枸杞2-5份、果胶1-3份用小火、充分搅拌,煮至光滑粘稠即可,凉透后、消毒杀菌、装瓶。
