蒜蓉辣椒酱是人民生活及饭店做菜必不可少的调味品之一,但是其大都是采用常规配方搭配,材质/成份:水、辣椒、大蒜、白砂糖、食用盐、米醋、食品采用剂:谷氨酸钠、增稠剂、酸度调节剂、安赛蜜。由这些配方生产出的蒜蓉辣椒酱不但没有营养价值,长期食用,这些食品采用剂不但不轻易排出体外,而且还会残留在人体内形成体内垃圾,从而使人致癌。因此,食品安全问题一直都是社会十分关注的问题,如何才能研发、生产出天然的,美味的,安全的,并具有保健功效的食品成为社会的迫切需要解决的问题。

麻油,其风味独特,芳香浓郁,油质清澈,是一种高级食用油,长食有抗衰老、美容、健体的功效.已证实作用有生毛发、生肌、长肉、止痛、杀虫、消肿、下热毒等。中医学认为:本品性味甘、凉,具有润肠通便、解毒生肌之功效。据《本草纲目》上记载:“有润燥、解毒、止痛、消肿之功。”《别录》说:“利大肠,胞衣不落。生者摩疙肿,生秃发。”临床还用麻油来煎熬膏药,有生肌肉、止疼痛、消痈肿、补皮裂的作用。麻油里含有芝麻素,在用麻油炒制或烤制菜肴或食品时,芝麻素即可分解出芝麻酸和一些芳香的化合物,这些香味物质可在常温下挥发,其香味浓郁、清雅、诱人食欲,是其他同类植物油都难以比拟的。在中药中,有用麻油与何首乌制成的药丸。它是滋养强壮强精剂,对于便秘也有效果。 古人认为:常食麻油可去除一切痼疾,还有返老还童、长生不老之功效。如与米做成饭食,民间则称为“仙家食品”。据科学分析:麻油中主要成分为不饱和脂肪酸,占85%~90%,油酸和亚油酸基本上各占 50%,其特点是稳定性强,而且易保存,这是因为麻油中含有一种天然抗氧化剂——亚麻酸的缘故。麻油中还含有蛋白质、芝麻素、维生素E、卵磷脂、蔗糖、钙、磷、铁等矿物质,是一种营养极为丰富的食用油。所以食用富含a-亚麻酸的胡麻油,就可以起到类似吃“鱼油”的效果;修复更新脑神经细胞膜的不饱和脂肪酸链,起到健脑、促智、降血脂、抗血小板聚集、扩张小动脉和预防血栓形成等。
作为专业指导产妇月子饮食料理的月子餐,引进台湾名医坐月子理论体系,将麻油运用到产妇月子饮食中,更是将麻油的功效发挥得淋漓尽致。在月子餐料理中,全程采用麻油和米酒水来制作菜肴、汤品。而此中麻油也为特制的,经低温烘焙后再压榨,可保食后不上火。用麻油制作的麻油猪肝、猪腰等食品,不仅有助于污血(恶露)顺利排出,还促进子宫收缩,又对剖腹产手术刀口愈合有益,因此,对产妇产后恢复极有帮助。同时,生理期、更年期女性食用也有相当大的好处。因此可见,麻油真是油中珍品.。

发明内容
本发明要解决的技术问题是提供一种纯天然的、美味的、安全的、并具有保健功效的蒜蓉辣椒酱及其制作方法。
本发明是通过以下技术方案来实现的:一种具有保健功效的蒜蓉辣椒酱,该蒜蓉辣椒酱由以下重量比例成份组成:蒜蓉30℅-35℅,辣椒30℅-35℅,麻油8℅-10℅,豆酱10℅-14℅,醋2℅-3℅,白糖2℅-3℅。
进一步地,所述一种具有保健功效的蒜蓉辣椒酱的制作方法如下下:(1)按以下重量比例成份备料:蒜蓉30℅-35℅,辣椒30℅-35℅,麻油8℅-10℅,豆酱10℅-14℅,醋2℅-3℅,白糖2℅-3℅;(2)将蒜蓉、辣椒通过搅伴机混合均匀搅伴,搅伴杆的转动速度是25-45转/分钟;(3)热锅,将麻油倒进锅内加热至八成,然后倒入搅伴好的蒜蓉、辣椒,与热锅中的麻油均匀搅伴,文火熬制15-20分钟;(4)按顺序加入白糖、盐、醋均匀搅伴,文火熬制3-5分钟;(5)加入豆酱均匀搅伴,文火熬制5分钟,息火冷却后装瓶。
本发明的一种具有保健功效的蒜蓉辣椒酱及其制作方法,由于其在选料上采用了豆酱和麻油,结合适当搅伴时间以及文火时间,这些优越的条件都是都是发明人经过长时间的试验得出的结论,以保证本发明产品的色、香、味达到最佳效果,充分利用了辣椒和麻油的营养价值,辣椒的维生素C的含量很高,在蔬菜中名列前茅,100克辣椒就含维生素Cl05毫克,同时也发挥了最佳的保健功效,能刺激唾液和胃液分泌,改善人的食欲,可治因受寒引起的胃口不好、腹胀腹痛,促进人体血液循环、散寒驱湿,长食有抗衰老、美容、健体,生毛发、生肌、长肉、止痛、杀虫、消肿、下热毒,治便秘,健脑、促智、降血脂、抗血小板聚集、扩张小动脉和预防血栓形成,适合老少咸宜食用。

以下实施例用于说明本发明,但不用来限制本发明的范围。
实施例一
一种具有保健功效的蒜蓉辣椒酱,该蒜蓉辣椒酱由以下重量比例成份组成:蒜蓉30℅-35℅,辣椒30℅-35℅,麻油8℅-10℅,豆酱10℅-14℅,醋2℅-3℅,白糖2℅-3℅。
所述一种具有保健功效的蒜蓉辣椒酱的制作方法如下:(1)按以下重量比例成份备料:蒜蓉30℅-35℅,辣椒30℅-35℅,麻油8℅-10℅,豆酱10℅-14℅,醋2℅-3℅,白糖2℅-3℅;(2)将蒜蓉、辣椒通过搅伴机混合均匀搅伴,搅伴杆的转动速度是25-45转/分钟;(3)热锅,将麻油倒进锅内加热至八成,然后倒入搅伴好的蒜蓉、辣椒,与热锅中的麻油均匀搅伴,文火熬制15-20分钟;(4)按顺序加入白糖、盐、醋均匀搅伴,文火熬制3-5分钟;(5)加入豆酱均匀搅伴,文火熬制5分钟,息火冷却后装瓶。
实验依据
选取10名食欲不振,高血脂的人食用,每天做菜放适量本品,该10名试食者食用一个星期后,饭量明显增多了,胃口大开,解决了由于便秘问题引起的腹胀腹痛,服用一个月后,皮肤也变得有光泽了,人也精神了,连续服用三个月,免疫力提高,体质增强,极小出现因风寒引起的感冒,血脂血压也降底了。因此,本发明的蒜蓉辣椒酱具有保健功效。
典型案例
陈某,男,38岁,体重83公斤,高血脂,体质虚弱,经常感冒,食欲不振,腹胀腹痛,便秘,头发稀小,连续每天食用本品,一天二次,每餐做菜都放适量本产品,连续食用三个月后,没有腹胀腹痛了,解决了便秘问题,肚子也变小了,体重也下降了,皮肤也变得有光泽了,掉头发现象减小,身体免疫力提高,体质增强,没有出现感冒现象,连续食用半年后,血脂明显降底了,头发也变得浓密了。
本发明的一种具有保健功效的蒜蓉辣椒酱及其制作方法,由于其配方采用了豆酱和麻油,对口腔及胃肠有刺激作用,所以能增强胃肠蠕动,促进消化液分泌,使食欲改善,并能抑制肠内异常发酵,排除消化道中积存的气体,治便秘,也可治因受寒引起的胃口不好、腹胀腹痛,促进人体血液循环、散寒驱湿,长食有抗衰老、美容、健体,生毛发、生肌、长肉、止痛、杀虫、消肿、下热毒,健脑、促智、降血脂、抗血小板聚集、扩张小动脉和预防血栓形成,而且制作过程不采用任何防腐剂,保证了产品的纯天然特性,辣椒的维生素C的含量很高,在蔬菜中名列前茅,100克辣椒就含维生素Cl05毫克,使本发明的营养价值和保健功效达到最佳效果,适合老少咸宜食用。

1.一种具有保健功效的蒜蓉辣椒酱,其特征在于:该蒜蓉辣椒酱由以下重量比例成份组成:蒜蓉30℅-35℅,辣椒30℅-35℅,麻油8℅-10℅,豆酱10℅-14℅,醋2℅-3℅,白糖2℅-3℅。
