本发明公开了一种脱脂药膳鸡,它是由以下方法制作的:取山药、龙眼肉、莲子、枸杞子、百合、大枣、黄精、决明子、黑木耳用纱布袋包装作成药膳袋;将处理干净的 500 克左右鸡一只用料酒、盐、白糖、味精,姜汁,老抽酱油腌制料腌制两小时,使腌料充分渗入鸡肉内部准;将药膳袋塞入腌制好的鸡腹内,加入花椒、山奈、桔皮、白芷等香料入锅武火蒸煮;然后煎炸至熟透,凉透真空包装。本发明制成的药膳鸡除具有健脾养血,滋补肝肾,养心安神的功效外,还具有降脂,降压,降血糖和预防肥胖,预防心脑血管疾病的保健功效。是普通人群的佳肴,既满足了人们喜食鸡肉的爱好,又避免了人们常食普通鸡肉带来的脂肪肝和动脉粥样硬化的问题。

本申请涉及食品加工,尤其是药膳鸡。
背景技术
鸡肉对人体的补养作用和药用价值很大,民间有“济世良药”的美称。中医认为鸡肉具有温中益气、补精填髓、益五脏、补虚损的功效。鸡肉性温,助热易动风,同时鸡肉肥腻,特别是肉食鸡易增加食者的血液粘稠度,升高胆固醇容易引起脂肪肝和动脉粥样硬化。人们重视鸡肉的营养而忽视了鸡肉高脂对身体健康不利。因此需要一种药膳鸡满足人们的身体健康,合理饮食结构的需求,使人们在食用鸡肉营养身体的同时达到保健作用
中国专利公开号 CN1135307 公开了一种药膳鸡汤烹调方法,它是在锅内先放上一层包括人参、红枣、糯米的中药材,于中药材上放置切成适当大小的鸡肉块,再根据鸡肉的多少,放入适量的水,将烹调锅置于炉灶上,先加热至 100℃左右熬约 1 分钟,然后将浓度为20%以上的烧酒倒进锅内继续加热,烧酒受热后酒精变成气体蒸发,这时用火柴点燃烹调锅内的酒,酒精在锅内燃烧直至完全燃尽,这时锅内的鸡汤经过内烤外炖,烹调成味佳可口的药膳鸡汤,其不足之处是:
1、所加的人参、红枣、糯米中药材中,人参性味甘、微苦,温,大补元气,补脾益肺,与温热的鸡肉相配,以热助热,成为一味温热性的药膳。因其温热的偏性,故不适宜普通人群食用。
2、人参这味药有其用药的禁忌和温热的偏性,应用不当亦有害处。如阴虚阳亢,肺热痰壅。肝阳上升,头眩目赤,以及一切火郁内实之症,均应忌用。
3、这种药膳鸡食借药威过食后肥腻,更易导致肥胖、糖尿病,高血压、高血脂、心脑血管疾病的发生。
4、这种药膳鸡只能即做即食,保质时间短,不能远距离运输销售,无法大面积推广。
发明内容
本发明为解决现有药膳鸡食用人群受局限、保健作用差、以及保质时间短的问题,提供一种能降压、降脂和降糖的药膳鸡,称为脱脂药膳鸡。
本发明的脱脂药膳鸡是由以下方法制作的:
1、制作药膳袋
取山药 10g、龙眼肉 10g、莲子 10g、枸杞子 10g、百合 10g、大枣 15g、黄精 10g、决明子 10g、黑木耳 10g 用纱布袋包装;
2、准备香料
花椒、山奈、桔皮、白芷、砂仁、干松、豆蔻、青果、陈皮、小茴香、八角、丁香各 20g ;
3、准备腌制料
料酒 50g、盐 30g、白糖 10g、味精 1.5g,姜汁少许,老抽酱油少许;
4、腌制
将处理干净的 500 克左右鸡一只用腌制料腌制两小时,使腌料充分渗入鸡肉内部;
5、脱脂
将药膳袋塞入腌制好的鸡腹内,加入清水满过鸡身,同时加入香料,入锅武火蒸煮至八成熟,待锅内汤汁凉后撇去锅内浮油,起锅晾干;
6、在蒸煮好的药膳鸡风干后,用笊篱托着入锅煎炸,边炸边舀油浇鸡至熟透,凉透真空包装。
本发明在制作过程中加入的中药组合物均是国家规定的既是食品又是药品的中药材,其营养作用药理作用分析如下:
山药,性味甘平,入脾、肺、肾经,具有补脾胃益肾,补气养阴作用;
龙眼肉,性味甘平,入心、脾经,具有健脾养血、补心安神作用;是滋补心肾的珍品;
莲子,性味甘平,入心经,具有养心安神,益肾固精作用,是滋补之气的珍品;
枸杞子,性味甘平,入肝、肾经,具有滋补肝肾,益精明目作用,为补益肝肾的要药;
百合,性味甘苦,入心、肠经,具有润肺、清心、安神作用;
大枣,性味甘平,入心、脾经,具有补脾滋肾作用,是一味传统的药食佳品;
决明子,性味甘苦,入肝经,具有降压降脂、通便作用。
黄精:性味甘平,入脾肺经。具有补脾润肺的作用,既能补气又能养阴益精。
黑木耳:性味甘平具有补气耐饥,凉血利五脏的作用。
综上述用的中药组合物加工的药膳鸡性平,具有健脾养血,滋补肝肾,养心安神的功效。除作为少儿及年老、体弱,孕妇产前产后病人恢复期的营养佳品外,普通人群都能食用。
其降脂、降压、降糖的保健作用药理分析如下:
山药:味甘性平具有除寒热邪气,补中益气,助五脏,健脾胃,长肌肉等多种功效。另外食用山药能供给人体大量黏液蛋白。黏液蛋白是一种多糖蛋白质的混合物,对人体有特殊的保健作用,能预防心血管的脂肪沉积,保持血管弹性,防止动脉粥样硬化过早发生,减少皮下脂肪的沉积,避免出现肥胖。能防止肝脏和肾脏中的结缔组织的萎缩,预防胶原病的发生,保持消化道、呼吸道及关节腔的润滑。
枸杞子:含有维生素 B1、维生素 B2、维生素 C、烟酸胡萝卜素与亚油酸。现代药理研究枸杞子能降血糖,降血压,有抑制脂肪在肝心胞内沉积,促进仔细胞新生的作用。且能抗动脉硬化,降低血糖。
决明子:现代药理研究,决明子含有决明子素,大黄酚、大黄素等,降低眼压,对视神经有保护作用。另外决明子的结构是降低血脂的主要成分之一,因其有导泻作用,能调节低密度脂蛋白代谢,从而降低血清胆固醇水平达到降脂作用。通过多次的动物实验决明子有稳定的降压作用。
黄精:现代药理研究,黄精提取物可增强心肌收缩力,增加冠状脉流量;改善血液流变血管数和动脉粥样硬化病灶。具有降血压,抑制高血糖以及防止治动脉硬化与肝脂肪浸润等药理作用。还具有明显的抗菌和抗病毒作用,可以提高人体免疫力,增加体内超氧化物歧化酶的活性,延缓机体衰老。
黑木耳:现代药理研究,黑木耳含九种抗凝血物质,能降低血黏度,有助于减少动脉硬化症,可以降低胆固醇、过氧化脂质、血栓素 A2 含量。起到抗血小板凝集和抗动脉粥样硬化的作用。
由于山药、枸杞子、决明子、黄精、黑木耳五味药食两用中药的共同药力作用,使药膳鸡脱脂后,具有降脂、降压、降血糖预防人体肥胖和预防心脑血管疾病的功效,符合现代饮食。
因此,按上述加工程序制成的药膳鸡除具有健脾养血,滋补肝肾,养心安神的功效外,还具有降脂,降压,降血糖和预防肥胖,预防心脑血管疾病的保健功效。是普通人群的佳肴,即满足了人们喜食鸡肉的爱好,又避免了人们常食普通鸡肉带来的脂肪肝和动脉粥样硬化的问题。

1.一种脱脂药膳鸡,它是由以下方法制作的:
(1) 制作药膳袋
取山药 10g、龙眼肉 10g、莲子 10g、枸杞子 10g、百合 10g、大枣 15g、黄精 10g、决明子10g、黑木耳 10g 用纱布袋包装;
(2)准备香料
花椒、山奈、桔皮、白芷、砂仁、干松、豆蔻、青果、陈皮、小茴香、八角、丁香各 20g ;
(3)准备腌制料
料酒 50g、盐 30g、白糖 10g、味精 1.5g,姜汁少许,老抽酱油少许;
(4)腌制
