本发明公开了一种狗肉丸,按其重量份计包括以下原料:狗肉50‑54份、葛粉12‑14份、姜粉0.3‑0.5份、食盐3‑5份、料酒7‑9份、食醋0.8‑1份、薄荷叶1‑1.2份、苦瓜5‑7份、蛋清4‑6份,通过狗肉的制备、苦瓜的处理、混料,成型、成品等步骤制得的狗肉丸一方面增加了狗肉丸在食用时的嚼劲提升口感,同时添加苦瓜粒,起到清热、解毒、降火的功效,将狗肉腌制后进行炸制一方面提升口感,另一方面通过高油温将狗肉的营养及水分保持在狗肉粒中,提升口感和避免营养流失,本发明制备的狗肉丸有嚼劲,口感好,富含营养。

背景技术
狗肉味咸、酸、性温,归脾、胃、肾经;功能主治:补脾暖胃、温肾壮阳、填精;主脘腹胀满、浮肿、腰痛膝软、阳痿、寒疟、久败疮(《中华本草》)。中医认为狗肉有“补血脉,厚肠胃,实下焦,填精髓。”作用。《日华子本草》记载狗肉:补胃气,壮阳,暖腰膝,补虚劳,益气力。《本经逢原》:治败疮稀水不敛。《医林纂要》:补肺气,固肾气,壮营卫,强腰膝。
现有技术CN201310589714.6公开了一种美味狗肉丸及其制备方法,其方法是将狗肉搅成肉末后加入调味料后煮制而成,该方法制得的狗肉丸因为将狗肉打成肉糜使狗肉丸没有嚼劲影响口感。
发明内容
本发明的目的在于提供一种有嚼劲,口感好,富含营养的狗肉丸。
本发明的另一目的在于提供该狗肉丸的制备方法。
本发明一种狗肉丸,按其重量份计包括以下原料:狗肉50-54份、葛粉12-14份、姜粉0.3-0.5份、食盐3-5份、料酒7-9份、食醋0.8-1份、薄荷叶1-1.2份、苦瓜5-7份、蛋清4-6份。
本发明一种狗肉丸的制备方法,具体包括以下步骤:
(1)狗肉的制备:
a.称取15-21份狗肉制成直径为0.4-0.6cm的狗肉粒,加入姜粉0.1-0.2份、食盐1-2份、料酒2-3份、蛋清1-2份充分搅拌均匀,静置30-34分钟,将狗肉粒置于油锅中炸至金黄色捞出沥干后,备用;
b.称取29-39份狗肉置于绞肉机内制成肉糜,与葛粉12-14份、姜粉0.2-0.3份、食盐2-3份、料酒5-6份、食醋0.8-1份、蛋清3-4份放入搅拌机内,充分搅拌后,静置40-44分钟,备用;
(2)苦瓜的处理:
将苦瓜5-7份,清洗干净后,用切粒机切成0.5-0.7cm的颗粒状,倒入水中煮制15-18分钟,捞出沥干,备用;
(3)混料,成型:
将炸好的狗肉粒、狗肉糜、苦瓜粒加入切碎的薄荷叶薄荷叶1-1.2份混合均匀后,加入到成丸机中,调整丸子的大小;
(4)成品:将成型的丸子挤入盛有85-95℃的热水容器中煮,至丸子漂起后,捞出放入清水中冷却,取出放入托盘中,急速冷冻即得。
本发明与现有技术相比,具有明显有益效果,从以上技术方案可知: 本发明将狗肉制成肉糜和经炸制的狗肉粒,加入苦瓜粒共同制备狗肉丸,一方面增加了狗肉丸在食用时的嚼劲提升口感,同时添加苦瓜粒,起到清热、解毒、降火的功效,将狗肉腌制后进行炸制一方面提升口感,另一方面通过高油温将狗肉的营养及水分保持在狗肉粒中,提升口感和避免营养流失,本发明制备的狗肉丸有嚼劲,口感好,富含营养。
具体实施方式
实施例1:
一种狗肉丸的制备方法,具体包括以下步骤:
(1)狗肉的制备:
a.称取21Kg狗肉制成直径为0.4cm的狗肉粒,加入姜粉0.2Kg、食盐1-2Kg、料酒2Kg、蛋清2Kg充分搅拌均匀,静置30分钟,将狗肉粒置于油锅中炸至金黄色捞出沥干后,备用;
b.称取39Kg狗肉置于绞肉机内制成肉糜,与葛粉12Kg、姜粉0.3Kg、食盐2Kg、料酒6Kg、食醋0.8Kg、蛋清4Kg放入搅拌机内,充分搅拌后,静置40分钟,备用;
(2)苦瓜的处理:
将苦瓜7Kg,清洗干净后,用切粒机切成0.5cm的颗粒状,倒入水中煮制18分钟,捞出沥干,备用;
(3)混料,成型:
将炸好的狗肉粒、狗肉糜、苦瓜粒加入切碎的薄荷叶薄荷叶1-1.2Kg混合均匀后,加入到成丸机中,调整丸子的大小;
(4)成品:将成型的丸子挤入盛有85℃的热水容器中煮,至丸子漂起后,捞出放入清水中冷却,取出放入托盘中,急速冷冻即得。

(2)苦瓜的处理:
将苦瓜5-7Kg,清洗干净后,用切粒机切成0.5-0.7cm的颗粒状,倒入水中煮制15-18分钟,捞出沥干,备用;
