背景技术
随着人们生活水平的提高,生活条件的日益优越,平常摄入的食物营养大大过剩,肥胖人群越来越多,年龄也日趋年青化,肥胖对人们的健康与生活造成了严重的影响。肥胖是指一定程度的明显超重与脂肪层过厚,是体内脂肪,尤其是甘油三酯积聚过多而导致的一种状态,由于食物摄入过多或机体代谢的改变而导致体内脂肪积聚过多造成体重过度增长并引起人体病理、生理改变或潜伏。肥胖症是一种由多种因素引起的慢性代谢性疾病,以体内脂肪细胞的体积和细胞数增加致体脂占体重的百分比异常增高并在某些局部过多沉积脂肪为特点。人们控制体重重治轻防,大多选择在一定的时间内吃减肥药、减肥餐或手术减肥,付出一定的健康代价换来暂时的成果,无论以上那种形式的减肥,节食都是其中必要的手段,在当今吃食吃货吃文化充斥社会每一角落的时代,普通人又往往抵制不住美味的诱惑,导致体重控制功亏一篑。目前市面上用于减肥瘦身的营养餐成分比较单一,营养缺乏,不能使营养达到均衡,容易造成消费者饮食不当造成的营养不良或者营养过剩,并由于这些原因造成的各种慢性疾病的发生。因此,亟需提供一种营养成分合理全面的食物以使人们调整膳食结构、健康地减肥瘦身。

为了克服现有技术的不足,本发明的目的在于提供一种适用于减肥瘦身的全营养膳食纤维固体饮料及其制备方法,该固体饮料营养成分搭配均衡合理,饱腹感好,效果好、见效快,冲调即食,利于人体吸收。

作为本发明优选的实施方式,所述植物蛋白包括大豆分离蛋白、玉米蛋白、花生蛋白、谷元粉、大米蛋白中的一种或任意两种以上的混合。
作为本发明优选的实施方式,所述复合维生素优选为维生素A、维生素D、维生素B1、维生素B2、维生素B6、烟酸、维生素E、泛酸、维生素C中的任意两种以上的混合。
作为本发明优选的实施方式,所述复合矿物质优选为葡萄糖酸锌、葡萄糖酸亚铁、乳酸钙、碳酸钙、EDTA铁钠、氧化镁和磷酸氢钙中的任意两种以上的混合。
作为本发明优选的实施方式,每100g固体饮料中含有蛋白质23.8~25.2g,脂肪0.2~0.5g,碳水化合物54.5~56g,膳食纤维10~11.8g。
本发明还提供了一种如上所述的全营养膳食纤维固体饮料的制备方法,其包括以下步骤:
1)挑选除胶原蛋白肽、β-葡聚糖、低聚果糖、植物蛋白、脱脂奶粉、复合矿物质、复合维生素外的原料,清洗、滤干、紫外消毒,烘干,超微粉碎至300~500目;
2)用蛋白酶对植物蛋白进行水解处理,蛋白酶于水解反应体系中的添加量为1300~1500u/g,水解完成后灭酶、杀菌、喷雾干燥,获得部分水解的植物蛋白粉;
3)将步骤2)制得的植物蛋白粉、β-葡聚糖、低聚果糖、脱脂奶粉、复合矿物质、复合维生素分别过200~300目筛,与步骤1)制得的原料混合,采用气流混合和机械搅拌两种方式以使粉末充分混合均匀,杀菌、包装、检测,得全营养膳食纤维固体饮料。
作为本发明优选的实施方式,所述步骤1)中各原料独立烘干至含水量5%以下,烘干温度为70~85℃。
作为本发明优选的实施方式,所述步骤2)中水解温度为30~50℃,水解时间为15~60min。
作为本发明优选的实施方式,所述步骤3)中的杀菌是采用远红外线杀菌方式或高温瞬间杀菌方式。
在本发明中,各原料成分具有以下特点:

本发明的全营养膳食纤维固体饮料以藜麦粉、胶原蛋白肽、奇亚籽粉、β-葡聚糖、白芸豆粉以及燕麦作为主要成分,再配以大麦等谷物、水果、蔬菜等多种膳食纤维和决明子、枸杞等多种药食同源的中药材,以及植物蛋白、脱脂奶粉、复合矿物质、复合维生素等营养成分,使得本发明的固体饮料营养成分搭配全面、均衡、合理,饱腹感好,效果好、见效快,冲调即食,利于人体吸收,有利于帮助人们进行塑身,能够很好地满足人们对完美身材的要求。其中,藜麦含有高膳食纤维,易吸收易消化,不含麸质,富含氨基酸和微量元素;奇亚籽中的Omega-3脂肪酸能加快脂肪的代谢,强化了脂肪的代谢,尽可能多的消耗多余的脂肪,使减肥功效大大提升,而且奇亚籽和菊粉的膳食纤维能够吸收充足的水分,增强了胶状物的强度,使食用者的饱腹感和排毒能力增强,进一步提高减肥功效,同时大大改善便秘情况;白芸豆作为淀粉吸收阻断剂,能够阻断热量摄取、减少人体的脂肪来源。本发明的制备方法物料处理简单,不会造成营养成分的损失,同时将多种植物的有效成分保留下来,既提高了原料的利用率,降低了生产成本,同时使有效成分被充分吸收。

2.根据权利要求1所述的全营养膳食纤维固体饮料,其特征在于:包括以下按重量份计的原料:白芸豆粉10份、辣木叶1份、松花粉1份、决明子1份、山楂2份、奇亚籽粉10份、莲子1份、枸杞1份、花生1份、大麦1份、苦荠粉1份、山药1份、胶原蛋白肽10份、燕麦10份、β-葡聚糖5份、赤小豆1份、黑豆粉1份、大豆1份、南瓜1份、黄精1份、西兰花1份、薏米1份、芡实1份、葛根1份、金银花1份、菊粉1份、车前子1份、胖大海1份、沙棘1份、百合1份、酸枣仁1份、猴头菇1份、黑芝麻1份、柠檬1份、小蓟1份、绿茶1份、富硒小麦1份、葡萄籽1份、桑葚1份、银杏1份、蒲公英1份、螺旋藻1份、魔芋粉1份、低聚果糖1份、橄榄1份、胡萝卜1份、红枣1份、番茄1份、亚麻籽1份、蓝莓1份、桔梗1份、植物蛋白1份、藜麦粉4份、脱脂奶粉1份、复合矿物质1份、复合维生素1份。
3.根据权利要求1所述的全营养膳食纤维固体饮料,其特征在于:所述植物蛋白包括大豆分离蛋白、玉米蛋白、花生蛋白、谷元粉、大米蛋白中的一种或任意两种以上的混合。
4.根据权利要求1所述的全营养膳食纤维固体饮料,其特征在于:所述复合维生素优选为维生素A、维生素D、维生素B1、维生素B2、维生素B6、烟酸、维生素E、泛酸、维生素C中的任意两种以上的混合。
5.根据权利要求1所述的全营养膳食纤维固体饮料,其特征在于:所述复合矿物质优选为葡萄糖酸锌、葡萄糖酸亚铁、乳酸钙、碳酸钙、EDTA铁钠、氧化镁和磷酸氢钙中的任意两种以上的混合。
6.根据权利要求1所述的全营养膳食纤维固体饮料,其特征在于:每100g固体饮料中含有蛋白质23.8~25.2g,脂肪0.2~0.5g,碳水化合物54.5~56g,膳食纤维10~11.8g。
7.一种如权利要求1所述的全营养膳食纤维固体饮料的制备方法,其特征在于:包括以下步骤:
1)挑选除胶原蛋白肽、β-葡聚糖、低聚果糖、植物蛋白、脱脂奶粉、复合矿物质、复合维生素外的原料,清洗、滤干、紫外消毒,烘干,超微粉碎至300~500目;
2)用蛋白酶对植物蛋白进行水解处理,蛋白酶于水解反应体系中的添加量为1300~1500u/g,水解完成后灭酶、杀菌、喷雾干燥,获得部分水解的植物蛋白粉;
3)将步骤2)制得的植物蛋白粉、β-葡聚糖、低聚果糖、脱脂奶粉、复合矿物质、复合维生素分别过200~300目筛,与步骤1)制得的原料混合,采用气流混合和机械搅拌两种方式以使粉末充分混合均匀,杀菌、包装、检测,得全营养膳食纤维固体饮料。
8.根据权利要求7所述的制备方法,其特征在于:所述步骤1)中各原料独立烘干至含水量5%以下,烘干温度为70~85℃。
9.根据权利要求7所述的制备方法,其特征在于:所述步骤2)中水解温度为30~50℃,水解时间为15~60min。
10.根据权利要求7所述的制备方法,其特征在于:所述步骤3)中的杀菌是采用远红外线杀菌方式或高温瞬间杀菌方式。
