Abstract
本发明涉及一种含菌菇养生粉的制备方法,属于食品加工技术领域。主要技术方案如下:一种含菌菇养生粉的制备方法,包括如下顺序的步骤:清洗原料;将红枣去核切片、褐菇切片,然后将红枣切片、褐菇切片放入开水锅中煮,捞出褐菇切片沥干再放入烤箱焙烤;将洗净的黑芝麻、核桃仁、麦麸恒温干燥,再分别放入烤箱烘烤;将烘烤后的褐菇切片、黑芝麻、核桃仁、麦麸混合搅拌均匀;将混合搅拌均匀的物料送至破壁机,研磨打粉,即得含菌菇养生粉;本发明配伍合理,营养与口感并重,具有滋补脾胃、养血安神、保护肝脏、抗衰老、抗癌、降血糖等多种功效,制备方法简单易行,便于大规模扩大生产。

技术领域
本发明涉及食品加工技术领域,具体是涉及一种含菌菇养生粉的制备方法。
背景技术
随着社会的快速发展,人类的生活水平也在提高。人们开始追求更高的品质生活,可是生活节奏的加快,现代人根本没有充足的时间来为自己制作营养全面的食物,而是购买一些营养单一的食品,甚至毫无营养的垃圾食品,长此以往会严重损害我们的身体健康。
目前市面上很多黑芝麻糊养生代餐粉之类的产品,但绝大多数都不含菌类的成分,而且存在添加甜味剂、麦芽糊精等食品添加剂,亦或是口感不佳等问题。
发明内容
本发明所要解决的技术问题在于提供一种配伍合理、营养健康、方便食用的含菌菇养生粉的制备方法。
为实现上述目的,本发明采取的技术方案为:一种含菌菇养生粉的制备方法,包括如下顺序的步骤:
(1)褐菇子实体剔除菇蒂,并清洗褐菇、黑芝麻、红枣、核桃仁、麦麸;
(2)将清洗后的红枣去核切2mm片状、褐菇切2mm片状,然后将红枣切片、褐菇切片放入开水锅中煮10分钟,红枣切片充分煮透后弃去,捞出褐菇切片沥干再放入烤箱焙烤,95℃上下火加热风循环,烤1小时20分钟;
(3)将洗净的黑芝麻、核桃仁、麦麸40℃恒温干燥10分钟,再分别放入烤箱烘烤;所述黑芝麻的烘烤条件为150℃上下火烘烤8分钟;所述核桃仁的烘烤条件为125℃上下火烘烤10分钟;所述麦麸的烘烤条件为150℃上下火烘烤10分钟;
(4)将烘烤后的褐菇切片、黑芝麻、核桃仁、麦麸混合搅拌均匀;
(5)将混合搅拌均匀的物料送至破壁机,研磨打粉,过120目筛,分装即得含菌菇养生粉;所述的破壁机转速为1000转/分钟,破壁时间为20分钟。
进一步的,步骤(4)所述的褐菇切片为15份、黑芝麻为26份、红枣为15份、核桃仁为10份、麦麸为50份。
褐菇(牛排菇)食之鲜嫩,具有特殊的柠檬香味,富含维生素C及多种氨基酸。可烹成适口名菜,备受欧美、日本美食家推崇。经常用可减少胆固醇累积,降低血压,增加人体免疫力,防治坏血病,可以入药,具有消炎化积,治疗胃肠炎的疗效,具有食疗补血作用。褐菇的发酵菌丝中含有一种新的抗真菌抗生素,含有亮氨酸等17种氨基酸,并且含有一种稀有氨基酸-丁氨酸,是一种名贵的色形味具全、药食兼优的美味食用菌,有“山上的牛肉”之美誉,深受消费者青睐。尤其是在欧美各国备受推崇,常出现在国宴上。褐菇蛋白质的营养价值是几种菇中最高的,五项蛋白质品质指标居第一位。只有营养指数居第三位。其次是毛头鬼伞,五项蛋白质品质指标居第二位,只有化学评分居第三位。第三是草菇,五项蛋白质品质指标居第三位,只有化学评分居第二位。
黑芝麻药食两用,被视为滋补圣品。每百克黑芝麻中含蛋白质21.9克,脂肪61.7克,钙564毫克,磷368毫克,铁50毫克,还含有芝麻素、花生酸、芝麻酚、油酸、棕榈酸、硬脂酸、甾醇、卵磷脂、维生素A、B、D、E等营养物质,所以具有降血脂、抗动脉硬化、抑菌防腐、润肠通便、保护肝脏、清除自由基、抗衰老、抗癌、降血糖作用等多种功效。黑芝麻中含有防止人体发胖的物质如蛋黄素、胆碱、肌糖,也可以减肥塑身。
核桃仁是一种难得的高脂肪性补养品,是医学界公认的抗衰老物质,有“长寿果”之称。核桃仁富含的油脂,有利于润泽肌肤,保持人体活力;核桃仁中含有较多的蛋白质和人体必需的不饱和脂肪酸,这些成分有非常好的补脑效果,增强脑功能;核桃仁含有大量维生素E,经常食用有润肺、黑发的作用。
红枣是一种营养佳品,被誉为“百果之王”。红枣性温味甘,含有蛋白质、脂肪、糖、钙、磷、铁、镁及丰富的维生素A、维生素C、维生素B1、维生素B2,此外还含有胡萝卜素等,营养十分丰富。红枣不仅是人们喜爱的果品,也是一味滋补脾胃、养血安神、治病强身的良药。产妇食用红枣,能补中益气、养血安神,加速机体复原;老年体弱者食用红枣,能增强体质,延缓衰老;尤其是一些从事脑力劳动的人及神经衰弱者,用红枣煮汤代茶,能安心守神,增进食欲。红枣是天然的美容食品,还可益气健脾,促进气血生化循环和抗衰老。
麦麸,即麦皮,小麦加工面粉副产品,麦黄色,片状或粉状。麦皮含有大量的维生素B类、膳食纤维,可改善大便秘结情况,同时可促使脂肪及氮的排泄,对临床常见纤维缺乏性疾病的防治意义重大;麦麸可以使血清胆固醇下降,因此动脉粥样硬化的形成会减慢;此外,还可降低血液中雌激素的含量,可预防乳腺癌。
本养生代餐粉添加褐菇、黑芝麻、核桃仁、红枣、麦麸几种食材,褐菇在增强人体免疫力,补血、降压方面都有很好的食疗功效,配方本身就有补血益气、健脑、润肠的功效,黑芝麻、核桃仁、红枣几种原料,使食材的营养价值发挥到最高,且本代餐粉不添加蔗糖,减肥人士和糖尿病人亦可食用。本发明配料中的麦麸,是一种粗粮,代替市面上代餐粉中的麦芽糊精,麦麸熟化使褐菇、黑芝麻粉变得细腻顺滑,口感柔润,且具有增香作用;代餐粉中麦麸的添加满足了现代人对粗粮的补充,粗粮可以降低高血压、心脏病、肥胖症和心脑血管疾病的风险。本代餐粉各食材配伍合理,使各食材的营养成分和食疗功效达到最佳。
本发明的有益效果:褐菇的营养价值在于它富含多种氨基酸,而红枣中含有丰富的维生素,维生素会促进氨基酸的吸收,使褐菇的营养被人更好的吸收;此外,褐菇中含有维生素D,这促进了人体对黑芝麻与核桃仁中钙的吸收。本发明添加的红枣增加了甜度;黑芝麻、核桃仁经烤熟后,增加了香气;麦麸的添加,使口感更加细腻香滑。本发明配伍合理,营养与口感并重,具有滋补脾胃、养血安神、保护肝脏、抗衰老、抗癌、降血糖等多种功效,同时解决了现代人没有充足时间制作营养全面的食物的问题,制备方法简单易行,便于大规模扩大生产。
具体实施方式
为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例进一步阐述本发明,本发明所用原料及设备若无特殊说明,均为本领域的常规技术。
实施例1
一种含菌菇养生粉的制备方法,包括如下顺序的步骤:
(1)褐菇子实体剔除菇蒂,并清洗褐菇、黑芝麻、红枣、核桃仁、麦麸;
(2)将清洗后的红枣去核切2mm片状、褐菇切2mm片状,然后将红枣切片、褐菇切片放入开水锅中煮10分钟,红枣切片充分煮透后弃去,捞出褐菇切片沥干再放入烤箱焙烤,95℃上下火加热风循环,烤1小时20分钟;
(3)将洗净的黑芝麻、核桃仁、麦麸40℃恒温干燥10分钟,再分别放入烤箱烘烤;所述黑芝麻的烘烤条件为150℃上下火烘烤8分钟;所述核桃仁的烘烤条件为125℃上下火烘烤10分钟;所述麦麸的烘烤条件为150℃上下火烘烤10分钟;
(4)将烘烤后的褐菇切片10克、黑芝麻15克、核桃仁6克、麦麸40克混合搅拌均匀;
(5)将混合搅拌均匀的物料送至破壁机,研磨打粉,过120目筛,分装即得含菌菇养生粉;所述的破壁机转速为1000转/分钟,破壁时间为20分钟。
实施例2
一种含菌菇养生粉的制备方法,包括如下顺序的步骤:
(1)褐菇子实体剔除菇蒂,并清洗褐菇、黑芝麻、红枣、核桃仁、麦麸;
(2)将清洗后的红枣去核切2mm片状、褐菇切2mm片状,然后将红枣切片、褐菇切片放入开水锅中煮10分钟,红枣切片充分煮透后弃去,捞出褐菇切片沥干再放入烤箱焙烤,95℃上下火加热风循环,烤1小时20分钟;
(3)将洗净的黑芝麻、核桃仁、麦麸40℃恒温干燥10分钟,再分别放入烤箱烘烤;所述黑芝麻的烘烤条件为150℃上下火烘烤8分钟;所述核桃仁的烘烤条件为125℃上下火烘烤10分钟;所述麦麸的烘烤条件为150℃上下火烘烤10分钟;

实施例3
一种含菌菇养生粉的制备方法,包括如下顺序的步骤:
(1)褐菇子实体剔除菇蒂,并清洗褐菇、黑芝麻、红枣、核桃仁、麦麸;
(2)将清洗后的红枣去核切2mm片状、褐菇切2mm片状,然后将红枣切片、褐菇切片放入开水锅中煮10分钟,红枣切片充分煮透后弃去,捞出褐菇切片沥干再放入烤箱焙烤,95℃上下火加热风循环,烤1小时20分钟;
(3)将洗净的黑芝麻、核桃仁、麦麸40℃恒温干燥10分钟,再分别放入烤箱烘烤;所述黑芝麻的烘烤条件为150℃上下火烘烤8分钟;所述核桃仁的烘烤条件为125℃上下火烘烤10分钟;所述麦麸的烘烤条件为150℃上下火烘烤10分钟;
(4)将烘烤后的褐菇切片15克、黑芝麻26克、核桃仁8克、麦麸45克混合搅拌均匀;
(5)将混合搅拌均匀的物料送至破壁机,研磨打粉,过120目筛,分装即得含菌菇养生粉;所述的破壁机转速为1000转/分钟,破壁时间为20分钟。
本发明含菌菇养生粉的食用方法:取40-50克养生粉放入容器中,加入热牛奶或水;可依个人需要加蜂蜜或红糖,搅拌均匀即可使用。

由上表2知,本发明制备的含菌菇养生粉色泽标准、均匀度高;表面结构细腻、光滑;复水性比较好;适度光滑;比较软;粘性比较好适中;颜色为金黄色;整体口感较好。

1.一种含菌菇养生粉的制备方法,其特征在于,包括如下顺序的步骤:
(1)褐菇子实体剔除菇蒂,并清洗褐菇、黑芝麻、红枣、核桃仁、麦麸;
(2)将清洗后的红枣去核切2mm片状、褐菇切2mm片状,然后将红枣切片、褐菇切片放入开水锅中煮10分钟,红枣切片充分煮透后弃去,捞出褐菇切片沥干再放入烤箱焙烤,95℃上下火加热风循环,烤1小时20分钟;
(3)将洗净的黑芝麻、核桃仁、麦麸40℃恒温干燥10分钟,再分别放入烤箱烘烤;所述黑芝麻的烘烤条件为150℃上下火烘烤8分钟;所述核桃仁的烘烤条件为125℃上下火烘烤10分钟;所述麦麸的烘烤条件为150℃上下火烘烤10分钟;
(4)将烘烤后的褐菇切片、黑芝麻、核桃仁、麦麸混合搅拌均匀;
(5)将混合搅拌均匀的物料送至破壁机,研磨打粉,过120目筛,分装即得含菌菇养生粉;所述的破壁机转速为1000转/分钟,破壁时间为20分钟。
2.如权利要求1所述的含菌菇养生粉的制备方法,其特征在于,步骤(4)所述的褐菇切片为15份、黑芝麻为26份、红枣为15份、核桃仁为10份、麦麸为50份。
