Abstract
本发明公开了一种复合营养食用菌粉,属于保健食品的制备领域;采用的技术方案为:取一定重量份的食用菌,全谷物,豆粉,黑芝麻,山药,藕粉,茯苓,香蕉,红枣,枸杞,百合,阿胶,首乌,莲子;分别通过烘干、冻干、真空干燥制备复合食用菌基础粉、复合山药粉、功能性添加料,再将上述三种粉剂充分混合而成;本发明以食用菌、全谷物、豆粉为主要原料,添加多种药食同源的成分,产生协同增效作用,使复合食用菌粉中的营养成分更加丰富更易被吸收转化;针对原料性质的不同,采用不同的干燥制粉方法,最大程度的保留了原料中的功能性成分,在保证功能营养的前提下,兼顾适口性,不添加防腐剂及其它化学成分,具有更高的市场竞争力。

本发明属于保健食品的制备领域,具体涉及一种复合营养食用菌粉。
背景技术
食用菌脂肪含量很低,约占干品重量的0.2-3.6%,而其中74-83%是人体健康有益的不饱和脂肪酸。食用菌还含有维生素VA原、VB1、VB2、VB12、VC、VD原、VE、VM、VPP,食用菌富含的VBI、VB12,都高于肉类,草菇VC含量为辣椒的1.2-2.8倍,是柚、橙的2-5倍。香菇VD原含量高达128国际单位,是紫菜的8倍,甘薯的7倍,大豆的21倍。VD原经紫外线照射可转化为VD,促进对钙的吸收。食用菌还富含多种矿质元素:磷、钾、钠、钙、铁、锌、镁、锰、铜等及其他一些微量元素。银耳含有较多的磷,有助于恢复和提高大脑功能。香菇、木耳含铁量高。香菇的灰分元素中钾占65,是碱性食物中的高级食品,可中和肉类食品产生的酸。食用菌中还含有丰富的生物活性物质,包括高分子多糖、β-葡萄糖和RNA复合体、天然有机锗、核酸降解物、三萜类化合物等对维护人体健康有重要的利用价值。
食用菌的药用保健价值有:抗癌作用:食用菌的多糖体,能刺激抗体的形成,提高并调整机体内部的防御能力,能降低某些物质诱发肿瘤的发生率,并对多种化疗药物有增效作用;抗菌、抗病毒作用;降血压、降血脂、抗血栓、抗心律失常、强心等;健胃、助消化作用;止咳平喘、祛痰作用;利胆、保肝、解毒;降血糖;通便利;免疫调节。
目前市场上的食用菌粉食品多是单一菌粉形式,功效相对局限。缺少以食用菌为原料,经科学技术调配的复合食用菌粉营养剂食品。而随着人们消费和营养观念的提升,复合营养和多种保健功能相结合的即食型方便食品将更加迎合市场的消费需求。对于白领阶层人士,紧张的工作、巨大的压力和无序的生活规律导致身体机能出现问题,对于处于发育成长阶段的儿童更需要多方面营养的补充来提高自身免疫力,对于消化功能降低的老人需要营养成分丰富且易于吸收的食品来全面提高身体健康状况。鉴于此,需要更充分地发挥食用菌的营养功效,运用食用菌深加工工艺和以科学技术理论为前提,进行复配研究,开发出营养物质更加均衡的产品。
公布号为CN104757514A功能性食用菌粉的生产方法主要是采用食用菌和谷物与甜味剂混合制成;公布号为CN103859364 A一种保健食用菌粉是选用食用菌和中药材组合,提供一种能够即冲即饮型保健食用菌粉;申请公布号CN 104172137 A富硒食用菌粉生产工艺目的是是生产一种富含硒元素的食用菌粉,以提高硒的摄入量;是在核桃乳中添加豌豆渣等成分来提高膳食纤维;公布号CN 105815766 A一种复合营养食用菌粉以复合食用菌粉为主要原料,配合铁皮石斛、山药、红薯叶、浮麦和薄荷等制备复合食用菌粉;申请公布号CN106473107 A一种即食型复合食用菌粉营养素及其制备方法是多种食用菌粉的组成。以上的专利方法制备的食用菌粉具有不同的保健功能,但是缺乏与更多种类的天然食材的搭配与营养成分相互的协同,本发明在以食用菌、全谷物、豆粉为主要原料的应用基础上,配合多种药食同源的天然营养食材,使其相互结合,人体所需的营养物质全面并吸收率高,同时口味也更加协调适口。
发明内容
本发明克服现有技术的不足,所要解决的技术问题是提供一种复合营养食用菌粉。本发明采用食用菌、全谷物、豆粉为主要原料,配合药食同源的食材用不同的制粉工艺分别处理并最终充分混合制造的一种复合营养食用菌粉,充分保留了不同种类原料的营养成分,入口醇香,含有多种有利于人体的氨基酸、矿物质、维生素及微量元素,多种成分有益于人体的吸收,提高人体免疫力和记忆力。
为解决上述技术问题,本发明所采用的技术方案为:制成上述复合营养食用菌粉,其特征是包括下列重量份原料:食用菌15-30份,全谷物15-25份,豆粉8-15份,黑芝麻3-7份,山药2-6份,藕粉5-7份,茯苓1-3份,香蕉2-4份,红枣4-7份,枸杞1-3份,百合1-4份,阿胶1-3份,首乌1-3份,莲子1-3份。
优选的包括下列重量份原料:食用菌20份,全谷物20份,豆粉10份,黑芝麻5份,山药5份,藕粉6份,茯苓2份,香蕉3份,红枣5份,枸杞2份,百合2份,阿胶2份,首乌2份,莲子1份。
所述的食用菌为羊肚菌、猴头菇、香菇、双孢菇、杏鲍菇、白灵菇、平菇、金针菇、草菇、花菇、茶树菇、木耳、银耳、或真姬菇中的一种或其任意组合。
优选的食用菌组合为羊肚菌6-8份,猴头菇4-7份,香菇3-6份,双孢菇2-5份。
所述的全谷物为全麦、燕麦、玉米、糙米、大麦、荞麦、青稞、黑米、小米、高粱、或薏苡仁中的一种或其任意组合。
所述的豆粉为黄豆粉、黑豆粉、红小豆粉、绿豆粉、豌豆粉、或扁豆粉中的一种或其任意组合。
所述的一种复合营养食用菌粉的制备方法为:
(1)将食用菌洗净,在5-7%的淡盐水中浸泡4-6小时,沸水蒸煮10-15min,捞出沥干,将处理好的食用菌与全谷物在110-150℃烘烤2-5h,粉碎,过200-300目筛,与豆粉和藕粉混合均匀,制得复合食用菌基础粉;
(2)将新鲜山药、香蕉去皮后切片,红枣去核,在-10℃~-5℃冻干5-8h,粉碎,过200-300目筛,制得复合山药粉;
(3)将黑芝麻、茯苓、枸杞、百合、阿胶、首乌、莲子在真空度为300-400Pa,30-40℃真空干燥1.5h,粉碎,过200-300目筛,制得功能性添加料;
(4)将功能性添加料和复合山药粉加入到复合食用菌基础粉中混合均匀。
本发明以食用菌、全谷物、豆粉为主要原料,配合山药、香蕉、红枣、黑芝麻、茯苓、枸杞、百合、阿胶、首乌、莲子,几种原料产生协同增效作用,具有清热解毒、美容养颜、补中益气、健脾补虚、固肾益精、益心安神、延缓衰老、提高免疫力的复合营养食用菌粉,可即食冲泡饮用,便携,适合亚健康的上班族、处于生长发育的儿童、身体虚弱的老人以及各类人群。
与现有技术相比本发明具有以下有益效果:
1.以食用菌、全谷物、豆粉为主要原料,使其中的人体必需蛋白质更加全面,食用菌中的多糖类物质在谷物蛋白存在的情况下,也更利于人体的吸收利用,大豆肽有助于增强肌肉运动力,达到抗疲劳的效果。配合山药、香蕉、红枣、黑芝麻、茯苓、枸杞、百合、阿胶、首乌、莲子,几种原料产生协同增效作用,使复合食用菌粉中的营养成分更加丰富,其中的维生素、黄酮类物质也使食用菌中分解的寡糖和多糖类物质、氨基酸等成分更易被吸收转化。
2.针对原料性质的不同,采用不同的干燥制粉方法,最大程度的保留了原料中的功能性成分。食用菌和全谷物在焙烤的过程中产生特殊的香气成分,对最终产品的风味贡献较大;新鲜的山药、香蕉在冻干的工艺中更易保留其天然的味道;真空干燥对于功能性添加料中营养成分和微量功能因子的保留更加有利。在保证功能营养的前提下,兼顾适口性,不添加防腐剂及其它化学成分,具有更高的市场竞争力。

一种复合营养食用菌粉,首先称取:
羊肚菌6kg,猴头菇4kg,香菇3kg,双孢菇2kg,全麦5kg,燕麦5kg,玉米5kg,黄豆粉3kg,黑豆粉3kg,红小豆粉2kg,黑芝麻3kg,山药2kg,藕粉5kg,茯苓1kg,香蕉2kg,红枣4kg,枸杞1kg,百合1kg,阿胶1kg,首乌1kg,莲子1kg。
制备方法为:
(1)将羊肚菌、猴头菇、香菇和双孢菇洗净,在5%的淡盐水中浸泡4小时,沸水蒸煮10min,捞出沥干,将处理好的食用菌与全麦、燕麦、玉米在110℃烘烤2h,粉碎,过200目筛,与黄豆粉,黑豆粉,红小豆粉和藕粉混合均匀,制得复合食用菌基础粉;
(2)将新鲜山药、香蕉去皮后切片,红枣去核,在-10℃冻干5h,粉碎,过200目筛,制得复合山药粉;
(3)将黑芝麻、茯苓、枸杞、百合、阿胶、首乌、莲子在真空度为300Pa,30℃真空干燥1.5h,粉碎,过200目筛,制得功能性添加料;
(4)将功能性添加料和复合山药粉加入到复合食用菌基础粉中混合均匀。
实施例2
羊肚菌8kg,猴头菇7kg,香菇6kg,双孢菇5kg,全麦10kg,燕麦5kg,玉米5kg,糙米2kg,大麦2kg,荞麦1kg,黄豆粉5kg,绿豆粉5kg,豌豆粉5kg,黑芝麻7kg,山药6kg,藕粉7kg,茯苓3kg,香蕉4kg,红枣7kg,枸杞3kg,百合4kg,阿胶3kg,首乌3kg,莲子3kg。
制备方法为:
(1)将羊肚菌、猴头菇、香菇和双孢菇洗净,在7%的淡盐水中浸泡6小时,沸水蒸煮15min,捞出沥干,将处理好的食用菌与黄豆,绿豆和豌豆在150℃烘烤5h,粉碎,过300目筛,与黄豆粉,绿豆粉,豌豆粉和藕粉混合均匀,制得复合食用菌基础粉;
(2)将新鲜山药、香蕉去皮后切片,红枣去核,在-5℃冻干8h,粉碎,过300目筛,制得复合山药粉;
(3)将黑芝麻、茯苓、枸杞、百合、阿胶、首乌、莲子在真空度为400Pa,40℃真空干燥1.5h,粉碎,过300目筛,制得功能性添加料;
(4)将功能性添加料和复合山药粉加入到复合食用菌基础粉中混合均匀。
实施例3
一种复合营养食用菌粉,首先称取:
羊肚菌8kg,猴头菇7kg,香菇5kg,双孢菇5kg,全麦2kg,燕麦2kg,玉米2kg,糙米2kg,大麦2kg,荞麦2kg,青稞2kg,黑米2kg,小米2kg,高粱2kg,黄豆粉2kg,黑豆粉2kg,红小豆粉2kg,绿豆粉2kg,豌豆粉1kg,扁豆粉1kg,黑芝麻5kg,山药5kg,藕粉6kg,茯苓2kg,香蕉3kg,红枣5kg,枸杞2kg,百合2kg,阿胶2kg,首乌2kg,莲子1kg。
(1)将羊肚菌、猴头菇、香菇和双孢菇洗净,在6%的淡盐水中浸泡5小时,沸水蒸煮12min,捞出沥干,将处理好的食用菌与全麦、燕麦、玉米、糙米、大麦、荞麦、青稞、黑米、小米、高粱在130℃烘烤4h,粉碎,过250目筛,与黄豆粉,黑豆粉,红小豆粉,绿豆粉,豌豆粉,扁豆粉和藕粉混合均匀,制得复合食用菌基础粉;
(2)将新鲜山药、香蕉去皮后切片,红枣去核,在-8℃冻干7.5h,粉碎,过250目筛,制得复合山药粉;
(3)将黑芝麻、茯苓、枸杞、百合、阿胶、首乌、莲子在真空度为350Pa,35℃真空干燥1.5h,粉碎,过250目筛,制得功能性添加料;
(4)将功能性添加料和复合山药粉加入到复合食用菌基础粉中混合均匀。
实施例4
一种复合营养食用菌粉,首先称取:
杏鲍菇5kg,白灵菇3kg,平菇2kg,金针菇5kg,草菇2kg,花菇3kg,茶树菇10kg,全麦5kg,燕麦3kg,玉米2kg,糙米2kg,大麦2kg,黑米3kg,小米2kg,高粱2kg,黄豆粉2kg,黑豆粉3kg,红小豆粉2kg,绿豆粉3kg,黑芝麻5kg,山药5kg,藕粉6kg,茯苓2kg,香蕉3kg,红枣5kg,枸杞2kg,百合2kg,阿胶2kg,首乌2kg,莲子1kg。
(1)将杏鲍菇、白灵菇、平菇、金针菇、草菇、花菇、茶树菇洗净,在6%的淡盐水中浸泡5小时,沸水蒸煮12min,捞出沥干,将处理好的食用菌与全麦、燕麦、玉米、糙米、大麦、黑米、小米、高粱在130℃烘烤4h,粉碎,过250目筛,与黄豆粉,黑豆粉,红小豆粉,绿豆粉和藕粉混合均匀,制得复合食用菌基础粉;

羊肚菌30kg,全麦15kg,小米10kg,黄豆粉10kg,黑芝麻6kg,山药3kg,藕粉5kg,茯苓3kg,香蕉2kg,红枣4kg,枸杞2kg,百合1kg,阿胶3kg,首乌1kg,莲子1kg。
制备方法为:
(1)将羊肚菌洗净,在5%的淡盐水中浸泡4小时,沸水蒸煮10min,捞出沥干,将处理好的食用菌与全麦和小米在110℃烘烤2h,粉碎,过200目筛,与黄豆粉和藕粉混合均匀,制得复合食用菌基础粉;
(2)将新鲜山药、香蕉去皮后切片,红枣去核,在-10℃冻干5h,粉碎,过200目筛,制得复合山药粉;
(3)将黑芝麻、茯苓、枸杞、百合、阿胶、首乌、莲子在真空度为300Pa,30℃真空干燥1.5h,粉碎,过200目筛,制得功能性添加料;
(4)将功能性添加料和复合山药粉加入到复合食用菌基础粉中混合均匀。
下面通过功效实验对本发明的的有益效果作进一步的详细说明:
1、动物:纯系成年小鼠,雄性,体重15-25g,各组15只,4项指标,每项指标分5个计量组共300只。
2、剂量设计:按照营养素的人体摄入量每人每日8g计,成人体重以60kg计,则相对于0.1333g/kg体重,三个剂量组分别为人体推荐量的30倍、10倍、5倍,即3.99g/kg(高剂量),1.33g/kg(中剂量),0.66g/kg(低剂量),将复合营养食用菌核桃乳浓缩至实验所需浓度,各组动物按体重0.2%灌胃溶剂进行灌胃,基础饲料组灌胃等溶剂的蒸馏水,阳性组以30倍剂量的葡萄糖灌胃。
3、指标设计:游泳负重实验、肝糖原、血乳酸及尿素氮
4、试验方法:以基础饲料喂食小鼠观察4天后,根据体重将动物随机分为5组:3个实验组、阳性对照组和阴性对照组。自正式实验开始,各组自由进食及饮水,28天后进行游泳负重实验及测定肝糖原、血乳酸。测定指标在灌胃30min后进行,其中游泳负重为5%体重负重游到死亡,血乳酸为游到10min,休息30min后取血。

由上表可见高剂量、中剂量组、低剂量组都没有显著低于阳、阴性对照剂量组,根据《保健食品功能学评价程序和检验方法规范》中抗疲劳动物尿素氮实验结果判定标准,可认为尿素氮实验阴性。

Claims (7)
1.一种复合营养食用菌粉,其特征是包括下列重量份原料:食用菌15-30份,全谷物15-25份,豆粉8-15份,黑芝麻3-7份,山药2-6份,藕粉5-7份,茯苓1-3份,香蕉2-4份,红枣4-7份,枸杞1-3份,百合1-4份,阿胶1-3份,首乌1-3份,莲子1-3份。
2.根据权利要求1所述的一种复合营养食用菌粉,其特征是包括下列重量份原料:食用菌20份,全谷物20份,豆粉10份,黑芝麻5份,山药5份,藕粉6份,茯苓2份,香蕉3份,红枣5份,枸杞2份,百合2份,阿胶2份,首乌2份,莲子1份。
3.根据权利要求1或2所述的一种复合营养食用菌粉,其特征在于食用菌为羊肚菌、猴头菇、香菇、双孢菇、杏鲍菇、白灵菇、平菇、金针菇、草菇、花菇、茶树菇、木耳、银耳、或真姬菇中的一种或其任意组合。
4.根据权利要求1或2所述的一种复合营养食用菌粉,其特征在于食用菌为羊肚菌6-8份,猴头菇4-7份,香菇3-6份,双孢菇2-5份。
5.根据权利要求1或2所述的一种复合营养食用菌粉,其特征在于全谷物为全麦、燕麦、玉米、糙米、大麦、荞麦、青稞、黑米、小米、高粱、或薏苡仁中的一种或其任意组合。
6.根据权利要求1或2所述的一种复合营养食用菌粉,其特征在于豆粉为黄豆粉、黑豆粉、红小豆粉、绿豆粉、豌豆粉、或扁豆粉中的一种或其任意组合。
7.根据权利要求1或2所述的一种复合营养食用菌粉,其特征在于所述的复合营养食用菌粉的制备方法为:
(1)将食用菌洗净,在5-7%的淡盐水中浸泡4-6小时,沸水蒸煮10-15min,捞出沥干,将处理好的食用菌与全谷物在110-150℃烘烤2-5h,粉碎,过200-300目筛,与豆粉和藕粉混合均匀,制得复合食用菌基础粉;
(2)将新鲜山药、香蕉去皮后切片,红枣去核,在-10℃~-5℃冻干5-8h,粉碎,过200-300目筛,制得复合山药粉;
(3)将黑芝麻、茯苓、枸杞、百合、阿胶、首乌、莲子在真空度为300-400Pa,30-40℃真空干燥1.5h,粉碎,过200-300目筛,制得功能性添加料;
(4)将功能性添加料和复合山药粉加入到复合食用菌基础粉中混合均匀。
