本发明涉及一种固体饮料,尤其是涉及一种香菇黑豆粉及其制备方法。
背景技术
固体饮料是以糖、乳和乳制品、蛋或蛋制品、果汁或食用植物提取物等为主要原料,添加适量的辅料或食品添加剂制成的固体制品。固体饮料主要分为蛋白型固体饮料和普通型固体饮料,蛋白型固体饮料是以乳及乳制品、蛋及蛋制品、其他动植物蛋白、氨基酸等为主要原料,添加或不添加辅料制成的、蛋白质含量大于或等于4%的制品,常见的有豆奶粉、核桃粉、麦乳精等;普通型固体饮料是以果粉或经烘烤的咖啡、茶叶、菊花、茅根等植物提取物为主要原料的制品,常见的有酸梅粉、菊花晶、速溶茶粉、茅根精、氨基酸饮料等。
香菇肉质肥厚细嫩、味道鲜美、香气独特、营养丰富,具有很高的营养、药用和保健价值,是制备固体饮料的适宜原料。公开号为CN105685753A的中国专利公开了一种固体饮料,其成分包括:10-20份双孢蘑菇、12-16份香菇、8-12份平菇、18-24份草菇、20-25份金针菇、3-4份葡萄籽粉、1-3份蓝莓干粉末、2-3份番石榴干粉末、4-6份综合植物酵素、5-7份大豆膳食纤维粉、2-4份维生素、8-9份复合甜味剂和1-2份抗结剂。上述发明采用双孢蘑菇、香菇、草菇、平菇和金针菇作为主要原料,能起到预防血管硬化、降低血压、辅助降低血糖等作用。尽管现有技术采用香菇等原料制备固体饮料,然而相关产品大多存在组分单一、口感不佳、功能有限等问题。
鉴于此,特提出本发明。
发明内容
本发明提供一种香菇黑豆粉及其制备方法,该香菇黑豆粉不仅营养丰富、口感好,同时具有多重功效。
本发明提供的一种香菇黑豆粉,包括主料20-24份和辅料12-16份,所述主料包括香菇10-12份和黑豆10-12份,所述辅料包括干制红枣、枸杞子、荞麦、黄花、黑芝麻、白芝麻、亚麻籽、谷物、坚果与籽类、食用菌、花类、药食同源类、牛蹄筋和杂粮粉中的两种以上。
本发明的香菇黑豆粉以香菇和黑豆作为主要原料,以干制红枣、枸杞子、荞麦、黄花、黑芝麻、白芝麻、亚麻籽、谷物、坚果与籽类、食用菌、花类、药食同源类、牛蹄筋、杂粮粉等为辅料,通过科学组配,使各成分之间的营养和功效互补并协同发挥作用,营养更加丰富,功能更加全面。
香菇的功能成分包括香菇多糖、有机碱、香菇嘌呤、香菇嘌呤酯类衍生物、双链核糖核酸等,此外还含有30多种酶、18种氨基酸,不饱和脂肪酸含量丰富,其中亚油酸、油酸含量高达90%以上,还含有大量的矿物质和锰、锌、铜、镁、硒等微量元素,具有防治肿瘤、增强免疫力、降血脂、抗血栓、健胃保肝等功能。
黑豆含蛋白质49.8%左右、粗纤维5%左右、脂肪12%左右,其脂肪组成是棕榈酸2.4-6.8%、硬脂酸4.4-7.3%、花生油酸0.4-1.0%、油酸23.0-35.6%、亚油酸51.7-57%、亚麻酸2.0-9.8%,不饱和脂肪酸达86.1%左右,此外还含有多种微量元素、维生素、强心苷、大豆皂苷等功能因子,具有降低人体血胆固醇含量,减少患心脏病的危险、清除自由基,延缓衰老、调理血脂蛋白,预防、治疗血脂升高,免疫调节、防癌等功效。
红枣含有蛋白质、糖类、有机酸、维生素A、维生素C、多种微量元素、钙以及氨基酸等丰富的营养成分,红枣性温、味甘,具益气补血、健脾和胃、袪风功效。红枣中的三萜类化合物及环磷酸腺苷具有较强的抑癌、抗过敏作用;红枣中的抗疲劳物质能增强人的耐力,具有减轻毒性物质对肝脏损害的功效;红枣中的黄酮类化合物具有镇静降血压等作用。
枸杞子含有大量的蛋白质、氨基酸、维生素、铁、锌、磷、钙等人体必需的营养成分,具有促进和调节免疫功能、保肝和抗衰老三大药理作用。枸杞多糖能促进腹腔巨噬细胞的吞噬能力,对人体具有改善新陈代谢、调节内分泌、促进蛋白合成、加速肝脏解毒和受损肝细胞的修复,抑制胆固醇和甘油三酯的功能,并且对肝脏的脂质过氧化损伤有明显的保护和修复作用,枸杞子还含有丰富的胡萝卜素、维生素A、维生素B、维生素C,具有良好的明目作用,枸杞子含有β-胡萝卜素、叶黄素等,具有提高人体免疫功能、防止肿瘤形成及预防动脉粥样硬化等作用。
荞麦富含生物类黄酮、糖醇、D-手性肌醇等高活性药用成分,具有降糖、降脂、降胆固醇、抗氧化、抗衰老、清除自由基等功能。荞麦含有丰富的膳食纤维,可以促进胃肠蠕动,还可以降低血糖血脂;荞麦含有丰富的维生素E及B族维生素,对于人的生长发育及代谢具有重要作用,其中烟酸参与人体的脂质代谢,具有解毒功效,还可以扩张血管、降低胆固醇,芦丁可以保护视力,软化血管,降低人体血脂,有效预防脑溢血,还具有抗炎作用;荞麦含有多种微量元素,镁可以溶解人体的纤维蛋白,扩张血管,有效降低胆固醇,锰也是人体必需的微量元素之一。
黄花含有蛋白质、脂肪、碳水化合物、钙、磷、铁、胡萝卜素、核黄素、硫胺素、尼克酸等营养成分,具有较好的健脑、抗衰老等功效。黄花含有丰富的卵磷脂,对增强和改善大脑功能有重要作用,同时能清除动脉内的沉积物,对注意力不集中、记忆力减退、脑动脉阻塞等有特殊疗效。黄花能显著降低血清胆固醇的含量,有利于高血压患者的康复,还能抑制癌细胞的生长。
黑芝麻含有大量的脂肪和蛋白质,还含有糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分,具有健胃、保肝、促进红细胞生长、乌发、美容等功效。
白芝麻含有脂肪25-50%、蛋白质8-20%、糖类3-10%、维生素a、维生素e、卵磷脂、钙、铁、镁等营养成分。白芝麻中的亚油酸有调节胆固醇的作用,维生素e能防止过氧化脂质对皮肤的危害,抵消或中和细胞内有害物质游离基的积聚,白芝麻还具有养血等功效。
亚麻籽的主要成分为脂肪、蛋白质、膳食纤维,其他成分还包括矿物质、α-亚麻酸、木酚素、亚麻籽胶、维生素等。亚麻籽含有生氰糖苷、抗VB6因子、植酸等有毒物质或抗营养因子,具有提升抗压力、减轻过敏反应、减轻哮喘、改善器官组织发炎、降低胆固醇、减低心脏负荷、改善滞水症、肾功能、便秘,促进细胞健康、脑筋发育,平衡及改善身体血糖量,增加肌肉的持久力等功效。
谷物的蛋白质含量在8-12%之间,是B族维生素的重要来源,其中维生素B1、B2和尼克酸较多,小米、玉米中含有胡萝卜素,谷类胚芽中含有较多的维生素E。
坚果与籽类是植物的精华部分,营养丰富,除含有蛋白质、脂肪、碳水化合物之外,还含有维生素B、维生素E等、磷、钙、锌、铁等微量元素及膳食纤维等。坚果与籽类中还含有单不饱和脂肪酸、多不饱和脂肪酸,包括亚麻酸、亚油酸等人体的必需脂肪酸,对人体生长发育、增强体质、预防疾病有较好的功效,对心脏病、癌症、血管病有预防和治疗作用,同时还可明目健脑。
食用菌含有丰富的蛋白质和氨基酸,氨基酸组成较为全面,赖氨酸含量丰富,此外还含有VB1、VB12、VC、VK、VD及磷、钠、钾、钙、铁和许多微量元素。食用菌具有抗癌,抗菌、抗病毒,降血压、降血脂、抗血栓、抗心律失常、强心等,健胃、助消化作用,止咳平喘、祛痰作用,利胆、保肝、解毒,降血糖,通便利尿,免疫调节等功效。
牛蹄筋含有丰富的蛋白聚糖和胶原蛋白,具有强筋壮骨之功效。
杂粮粉含有丰富的营养素,其中燕麦富含蛋白质,小米富含色氨酸、胡萝卜素,豆类富含优质蛋白,高粱富含脂肪酸及丰富的铁,薯类含胡萝卜素和维生素C。粗粮还有减肥之功效,如玉米还含有大量镁,镁可加强肠壁蠕动,可以预防热性疾病,防治心脑血管疾病、防治糖尿病等。
进一步地,在本发明的香菇黑豆粉中,所述辅料包括如下重量份的组分:干制红枣0.8-1.2份、枸杞子0.8-1.0份、荞麦1.0-1.2份、黄花0.9-1.2份、黑芝麻0.8-0.9份、白芝麻0.9-1.1份、亚麻籽1.0-1.2份、谷物0.8-1.3份、坚果与籽类0.8-1.2份、食用菌1.1-1.2份、花类0.8-1.0份、药食同源类0.8-1.3份、牛蹄筋0.8-1.0份和杂粮粉0.8-1.2份。
本发明对谷物不作严格限制,谷物例如可以选自黑米、糙米、薏米、燕麦、大米、黄豆、红豆、绿豆和豇豆中的至少一种。
本发明对坚果与籽类不作严格限制,坚果与籽类例如可以选自开心果仁、松子仁、南瓜子仁、香椿籽仁和油菜籽仁中的至少一种。
本发明对食用菌不作严格限制,食用菌例如可以选自金针菇、猴头菇、黑木耳和银耳中的至少一种。
本发明对花类不作严格限制,花类例如可以选自茉莉花、丁香花和菊花中的至少一种。
茉莉花含有儿茶素、维生素c、维生素a、咖啡碱、黄烷醇、茶多酚等成分,还含有大量芳香油、香叶醇、橙花椒醇、丁香酯等20多种化合物。丁香为双子叶植物药桃金娘科植物,味辛性温,气味芳香,功效为温中、暖肾、降逆。菊花有疏风、平肝之功。
本发明对药食同源类不作严格限制,药食同源类例如可以选自白扁豆、桃仁、杏仁、莲子、决明子、百合、芡实、山药、茯苓、紫苏籽和酸枣仁中的至少一种。
本发明的香菇黑豆粉的水分含量≤5g/100g。
本发明还提供上述香菇黑豆粉的制备方法,包括:按重量份将所述主料和辅料干燥、粉碎、混合、灭菌,制得香菇黑豆粉。
本发明的香菇黑豆粉以香菇和黑豆作为主要原料,配以多种辅料,通过科学组配,使各成分之间的营养和功效互补并协同发挥作用,营养更加丰富,功能更加全面。
