背景技术
青少年时代是一个人生长发育的关键阶段,在这个时候,青少年的生长发育处于旺盛期,需要大量的能量和各种营养素的摄入,促进其体格和智力的正常发育就必须保证其充足的营养素供给和适宜的能量摄入,目前在能量摄入方面,受到快速发展的社会经济和急剧转变的生活方式的影响,能量摄入不足和能量摄入过量问题同时困扰着儿童青少年,能量摄入过少,难以满足机体营养需求,影响生长发育,能量摄入过多,过剩的能量会以脂肪的形式储存,易引发肥胖。
青少年的健康成长,还包括了心理健康,青少年应具有正确的思想方法和道德观,需做到心胸开阔,知足常乐,不患得患失,不自寻烦恼。如何在饮食上增强青少年的体质,促进青少年的生长发育,使其健康成长,是目前亟需解决的问题。中国专利《富含功能肽铁锌营养面条》(专利申请号:CN201410157712.4)公开了一种富含功能肽、锌、铁等营养物质的面条,为青少年提供充足的营养物质,且该面条具有细腻、口感筋道,耐煮,不混汤等特点,但本发明针对请阿红的生长特点,提供了一种能增强青少年体质,促进青少年骨骼生长,提高机体免疫力,使青少年健康成长的面条。
发明内容
为了解决上述问题,本发明提供了一种强化青少年体质的姬松茸面条及其制备方法,该面条能通过增强青少年的体质,改善心肺功能,提高运动爆发力和耐力,从而提高青少年的机体免疫力,促进骨骼生长,完善青少年组织器官和系统的发育。
本发明可以通过以下技术方案来实现:
一种强化青少年体质的姬松茸面条,由下述重量份的原材料组成:刺五加总皂苷0.25-0.35份、蒺藜总皂苷0.25-0.35份、银杏叶提取物0.02-0.03份、螺旋藻硒多糖0.04-0.06份、山楂10-15份、干姬松茸6-8份、食盐0.8-1.2份、羧甲基纤维素钠0.4-0.5份、黄原胶0.25-0.35份、海藻酸钠0.22-0.23份、高筋小麦粉至100份。
优选地,一种强化青少年体质的姬松茸面条,由下述重量份的原材料组成:刺五加总皂苷0.3份、蒺藜总皂苷0.3份、银杏叶提取物0.025份、螺旋藻硒多糖0.05份、山楂12.5份、干姬松茸7份、食盐1份、羧甲基纤维素钠0.45份、黄原胶0.3份、海藻酸钠0.225份、高筋小麦粉至100份。
优选地,所述的刺五加总皂苷的制备方法为:取刺五加,干燥、粉碎至20目,浸泡于石油醚(60-90℃)中,室温放置3h,倾去浸提液,再加石油醚浸泡至浸提液无色,置于通风处干燥,挥干石油醚,按料液比1:10加入70%乙醇,在微波功率600W下微波提取3min,过滤,取滤液,减压浓缩至原滤液体积的1/5,选用径高比为1:40的AB-8型树脂洗脱,用水、10%乙醇依次洗脱,流速为1.44BV/h,洗脱至还原糖反应显阴性,再用70%乙醇以16BV/h的流速洗脱,时间为2-3h,收集洗脱液,干燥,得刺五加总皂苷。
优选地,所述的蒺藜总皂苷的制备方法为:取蒺藜全草,干燥、粉碎至20目,按料液比1:12加入水,50-60℃下回流提取3h,过滤,滤液备用,滤渣按料液比1:10加入水,50-60℃下回流提取2h,过滤,合并两次滤液,所得滤液浓缩至浸膏,加入等量乙醇,静置2h,过滤,取滤液,减压回收乙醇,干燥,得蒺藜提取物,加入蒸馏水使蒺藜提取物浓度为0.5g/mL,选用径高比为1:40的AB-8型树脂洗脱,用水、10%乙醇依次洗脱,流速为1.44BV/h,洗脱至还原糖反应显阴性,再用70%乙醇以16BV/h的流速洗脱,时间为2-3h,收集洗脱液,干燥,得蒺藜总皂苷。
优选地,所述的银杏叶提取物的制备方法为:取银杏叶,干燥、粉碎至20目,按料液比1:16加入30%乙醇,加入果胶酶、纤维素酶等量复合酶,复合酶与银杏叶的配料比为1:140,调节反应体系pH4.5,在50℃下酶解2h,酶解结束后,90℃下浸提90min,5000r/min离心8min,取上清液,干燥,得银杏叶提取物。
优选地,所述的螺旋藻硒多糖的制备方法为:
a.富硒螺旋藻的培养:将等量的极大螺旋藻、钝顶螺旋藻、盐泽螺旋藻混合采用Zarrouk液体培养基培养,外加8mg/L亚硒酸钠,用日光灯作为光源,光强度为160μmol/(㎡·s),光周期为16:8,光照时温度为35℃,暗时为25℃,间断通气培养12d,300目筛过滤,藻渣用新鲜的Zarrouk液体培养基清洗2-3次,4℃下冷冻干燥,得富硒螺旋藻粉;
b.螺旋藻硒多糖的提取:取富硒螺旋藻粉,按料液比1:10加入0.1%的焦磷酸钠,处理10-12min后,倾去液体,按料液比1:9加入80℃的热水,抽提2次,每次6h,合并提取液,提取液经4000r/min离心5min,取上清液,浓缩至浸膏,加入4倍体积的乙醇,4℃下静置12h,4000r/min离心2min,取沉淀,按料液比1:8加入水制成溶液,调节pH7.0,加入沉淀质量3%的中性蛋白酶,50℃下保温2.5h,90℃下灭酶10min,浓缩至原溶液体积的20%,得螺旋藻粗硒多糖溶液;
c.取螺旋藻粗硒多糖溶液,采用乙醇/硫酸铵双水相体系进行萃取,双水相体系的组成为35%乙醇与15%硫酸铵的体积比为1:2.5,25℃下各相分配平衡30min后,静置4h,采用Sephadex G-150柱洗脱,洗脱液为0.1mol/L的NaCl溶液,收集苯酚硫酸法测定洗脱曲线最高峰处溶液,再采用DEAE SephadexA-50柱洗脱,10管洗脱液为去离子水,30管洗脱液按0-2mol/L的NaCl溶液按梯度洗脱,同样方法收集最高峰处溶液,在3500Da的透析袋中透析,先在蒸馏水中透析24h,再用去离子水透析,换4次去离子水,共透析12h,透析结束后,干燥,得螺旋藻硒多糖。
本发明还提供一种强化青少年体质的姬松茸面条的制备方法,包括以下步骤:
(1)山楂浆的制作:选用生长成熟、无腐烂、无病虫害的新鲜山楂,用清水洗净,去皮,浸泡在2%柠檬酸溶液中,60-70℃下预煮12-15min,取出,冷水浸泡至常温,置于打浆机中打浆至无肉眼可见颗粒,得山楂浆;
(2)辅料预处理:将步骤(1)所得的山楂浆加热至40-50℃,将刺五加总皂苷、蒺藜总皂苷、银杏叶提取物、螺旋藻硒多糖加入山楂浆中,充分搅拌混合,得辅料混合物;
(3)主料预处理:将干姬松茸除杂、清洗干净后,45℃下鼓风干燥,粉碎至粒度为120目后,与食盐、羧甲基纤维素钠、黄原胶、海藻酸钠一起加入至面粉中,混合均匀,得主料混合物;
(4)和面:将步骤(2)所得的辅料混合物和步骤(3)所得的主料混合物混合均匀后,加入水8-10份,置于和面机中搅拌10-15min,得姬松茸面团;
(5)熟化:将步骤(4)所得的姬松茸面团在室温下静置15min,得熟化姬松茸面团;
(6)压片、切条:将步骤(5)所得的熟化姬松茸面团在压面机中压轧成片状,厚度为1-1.2mm且表面光滑的面片,得姬松茸面片;将马铃薯泥面片切条成粗细为2.5-3mm的面条,得姬松茸湿面切条;
(7)将步骤(6)所得的姬松茸湿面切条在常温下干燥至面条水分含量为5-6.5%,切断后包装,得成品强化青少年体质的姬松茸面条。
本发明所述各主要功效成分作用机理如下:
山楂中含丰富的营养物质,其中所含的解脂酶具有促进脂肪类食物的消化,及促进胃液分泌和增加胃内酶素等功能。
姬松茸肉质鲜嫩、风味独特,具有浓郁的杏仁香味且营养丰富,其中总氨基酸中含有40%人体必需的8种氨基酸,精氨酸、赖氨酸和蛋氨酸的含量尤为丰富。此外,姬松茸中还含有大量的β-葡聚糖、多肽、膳食纤维等功能成分,能够为青少年生长发育提供全面充足的营养。
刺五加总皂苷能够有效提高心肌中的心肌乳酸脱氢酶肌酸磷酸脱氢酶活性提高,并降低游离脂肪酸的含量,提高心肌的抗缺血作用,能够有助于青少年完善心肺功能,提高青少年心肌应激性,提高青少年的运动爆发力和耐力,并提高其耐缺氧能力,显著改善青少年体质,降低青少年猝死率。
蒺藜皂苷可促进Bcl-2及抑制蛋白Bax的mRNA及蛋白的表达,增加总PKCε、磷酸化PKCε及ERK1/2的蛋白表达,并促进ERK1/2由细胞浆向细胞核的转位,达到保护心肌细胞正常状态,提高缺氧心肌细胞存活率,减少凋亡细胞数量的效果;蒺藜皂苷还可通过调节细胞膜钙通道降低细胞内钙离子浓度,保证线粒体内钙离子敏感脱氧酶的正常作用,帮助青少年消除疲劳。
银杏叶有广泛生物活性,其主要药用价值成分为萜类内酯和银杏黄酮类,银杏提取物能够提高青少年机体SOD活性,加快清除自由基的速率,还能够通过肾上腺素能神经系统,增强生理性血管调节,稳定毛细血管通透性,帮助青少年适应巨大的能量消耗,保证机体各部分的的正常供能。
螺旋藻硒多糖具有抗氧化、提高SOD活力、清除自由基、减少脂质过氧化损伤等作用,还具有增强核酸内切酶的活性和促进DNA修复合成的功效,对生物大分子具有保护作用,有利于保护组织、器官的生理功能,有效提高青少年的身体素质。此外,螺旋藻硒多糖还能为青少年机体提供天然易吸收的硒元素,能够帮助维持和提高青少年机体运动能力,能够促进骨骼肌形态结构和功能的改善作用,并有效完善骨骼肌超微结构及形态功能,调节骨骼肌细胞凋亡速率,显著提高机体运动能力。螺旋藻硒多糖还能够调节机体免疫系统,提高机体的抗病能力,使血液中免疫球蛋白水平提高,增强机体对抗原产生抗体的能力,增强淋巴细胞转化能力和迟发性超敏反应,从而改善机体的免疫能力,促进青少年组织器官和系统的发育完善。
本发明具备以下有益效果:
1、本发明针对青少年多挑食、偏食的饮食特点,加入山楂能有效提高青少年的食欲,并帮助青少年吸收钙、铁等元素,加上姬松茸丰富的营养物质,使得制备的面条能够促进青少年骨骼生长;
2、本发明将刺五加总皂苷、蒺藜皂苷和银杏提取物等功效成分添加至面条中,能够帮助青少年完善心肺功能,提高青少年心肌应激性及缺氧心肌细胞存活率,从而提高青少年的运动爆发力和耐力,帮助青少年消除疲劳,改善青少年体质;
3、本发明制备的面条还添加了螺旋藻硒多糖,其含有多种生物活性,不仅能够帮助青少年维持和提高机体运动能力,促进骨骼肌形态结构和功能的改善,还能提高机体的免疫能力,促进青少年组织器官和系统的发育完善。

实施例1
一种强化青少年体质的姬松茸面条,由下述重量份的原材料组成:刺五加总皂苷0.25份、蒺藜总皂苷0.25份、银杏叶提取物0.02份、螺旋藻硒多糖0.04份、山楂10份、干姬松茸6份、食盐0.8份、羧甲基纤维素钠0.4份、黄原胶0.25份、海藻酸钠0.22份、高筋小麦粉81.77份。

b.螺旋藻硒多糖的提取:取富硒螺旋藻粉,按料液比1:10加入0.1%的焦磷酸钠,处理10-12min后,倾去液体,按料液比1:9加入80℃的热水,抽提2次,每次6h,合并提取液,提取液经4000r/min离心5min,取上清液,浓缩至浸膏,加入4倍体积的乙醇,4℃下静置12h,4000r/min离心2min,取沉淀,按料液比1:8加入水制成溶液,调节pH7.0,加入沉淀质量3%的中性蛋白酶,50℃下保温2.5h,90℃下灭酶10min,浓缩至原溶液体积的20%,得螺旋藻粗硒多糖溶液;
c.取螺旋藻粗硒多糖溶液,采用乙醇/硫酸铵双水相体系进行萃取,双水相体系的组成为35%乙醇与15%硫酸铵的体积比为1:2.5,25℃下各相分配平衡30min后,静置4h,采用Sephadex G-150柱洗脱,洗脱液为0.1mol/L的NaCl溶液,收集苯酚硫酸法测定洗脱曲线最高峰处溶液,再采用DEAE SephadexA-50柱洗脱,10管洗脱液为去离子水,30管洗脱液按0-2mol/L的NaCl溶液按梯度洗脱,同样方法收集最高峰处溶液,在3500Da的透析袋中透析,先在蒸馏水中透析24h,再用去离子水透析,换4次去离子水,共透析12h,透析结束后,干燥,得螺旋藻硒多糖。
上述一种强化青少年体质的姬松茸面条的制备方法,包括以下步骤:
(1)山楂浆的制作:选用生长成熟、无腐烂、无病虫害的新鲜山楂,用清水洗净,去皮,浸泡在2%柠檬酸溶液中,60-70℃下预煮12-15min,取出,冷水浸泡至常温,置于打浆机中打浆至无肉眼可见颗粒,得山楂浆;
(2)辅料预处理:将步骤(1)所得的山楂浆加热至40-50℃,将刺五加总皂苷、蒺藜总皂苷、银杏叶提取物、螺旋藻硒多糖加入山楂浆中,充分搅拌混合,得辅料混合物;
(3)主料预处理:将干姬松茸除杂、清洗干净后,45℃下鼓风干燥,粉碎至粒度为120目后,与食盐、羧甲基纤维素钠、黄原胶、海藻酸钠一起加入至面粉中,混合均匀,得主料混合物;
(4)和面:将步骤(2)所得的辅料混合物和步骤(3)所得的主料混合物混合均匀后,加入水8-10份,置于和面机中搅拌10-15min,得姬松茸面团;
(5)熟化:将步骤(4)所得的姬松茸面团在室温下静置15min,得熟化姬松茸面团;
(6)压片、切条:将步骤(5)所得的熟化姬松茸面团在压面机中压轧成片状,厚度为1-1.2mm且表面光滑的面片,得姬松茸面片;将马铃薯泥面片切条成粗细为2.5-3mm的面条,得姬松茸湿面切条;
(7)将步骤(6)所得的姬松茸湿面切条在常温下干燥至面条水分含量为5-6.5%,切断后包装,得成品强化青少年体质的姬松茸面条。
实施例2
一种强化青少年体质的姬松茸面条,由下述重量份的原材料组成:刺五加总皂苷0.3份、蒺藜总皂苷0.3份、银杏叶提取物0.025份、螺旋藻硒多糖0.05份、山楂12.5份、干姬松茸7份、食盐1份、羧甲基纤维素钠0.45份、黄原胶0.3份、海藻酸钠0.225份、高筋小麦粉77.85份。
实施例3
一种强化青少年体质的姬松茸面条,由下述重量份的原材料组成:刺五加总皂苷0.35份、蒺藜总皂苷0.35份、银杏叶提取物0.03份、螺旋藻硒多糖0.06份、山楂15份、干姬松茸8份、食盐1.2份、羧甲基纤维素钠0.5份、黄原胶0.35份、海藻酸钠0.23份、高筋小麦粉73.93份。
对比例1
与实施例1的区别在于,没有添加功效成分,使用常规面条作为对照组。
对比例2
与实施例1的区别在于,原料配方中没有添加刺五加总皂苷、蒺藜总皂苷和银杏叶提取物,具体为:螺旋藻硒多糖0.05份、山楂12.5份、干姬松茸7份、食盐1份、羧甲基纤维素钠0.45份、黄原胶0.3份、海藻酸钠0.225份、高筋小麦粉78.475份。
对比例3
与实施例1的区别在于,原料配方中没有添加螺旋藻硒多糖,具体为:刺五加总皂苷0.3份、蒺藜总皂苷0.3份、银杏叶提取物0.025份、山楂12.5份、干姬松茸7份、食盐1份、羧甲基纤维素钠0.45份、黄原胶0.3份、海藻酸钠0.225份、高筋小麦粉77.9份。
功效验证
试验例1
取小鼠60只,随机分成6组,每日灌喂实施例1-3和对比例1-3,在第1周开始,将各组小鼠进行5min无负重适应性游泳训练,往后每周增加2min,每周第7天游泳前测量体重,持续35d,其结果如表1所示:

由表1可知,饲喂实施例1-3能增加小鼠的体重,说明本发明的制备能促进小鼠体内蛋白质合成代谢,从而促进小鼠的生长发育,而
实施例1-3和对比例1-3具有差异,说明对比例效果不如实施例。
力竭游泳试验:在实验第35d称量体重后,把各组小鼠尾根部按照体重5%负荷铅皮,放入温度为25℃训练用水槽测量力竭游泳时间,当小鼠沉入水中5s不能浮起且不能完成翻正反射时计时结束,其结果如表2所示:

由表2可知,实施例1-3的游泳时间增加,说明本发明能增加小鼠的耐缺氧能力,有效保证小鼠骨骼肌的运动机能,从而提高小鼠的运动能力。
取样及生理指标的测定:取各组小鼠在末次力竭游泳后用乙醚麻醉,迅速解剖取出右小腿三头肌,4℃生理盐水洗净血液后用滤纸吸干水分称重,加入生理盐水匀浆成100g/L液体,3500r/min离心10min后取上清液4℃冷藏保存,测定骨骼肌SOD、GSH-Px、MDA的含量,其结果如表3所示:

由表3可知,实施例1-3的SOD和GSH-Px水平较高,其抗氧化能力较强,能加快清除自由基速率,帮助小鼠力竭游泳后的体能恢复,消除疲劳,而MDA水平下降,说明本发明制备的实施例1-3能降低骨骼肌细胞的损伤程度,从而保证了骨骼肌的运动机能。
综上所述,本发明制备的一种强化青少年体质的姬松茸面条,能够促进青少年的生长发育,增强运动能力,提高骨骼肌抗氧化水平,加快自由基的清除效率,从而帮助青少年恢复体能,为青少年的健康成长提供稳定的基础。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。
Claims (7)
1.一种强化青少年体质的姬松茸面条,其特征在于,由下述重量份的原材料组成:刺五加总皂苷0.25-0.35份、蒺藜总皂苷0.25-0.35份、银杏叶提取物0.02-0.03份、螺旋藻硒多糖0.04-0.06份、山楂10-15份、干姬松茸6-8份、食盐0.8-1.2份、羧甲基纤维素钠0.4-0.5份、黄原胶0.25-0.35份、海藻酸钠0.22-0.23份、高筋小麦粉至100份。
2.如权利要求1所述的一种强化青少年体质的姬松茸面条,其特征在于,由下述重量份的原材料组成:刺五加总皂苷0.3份、蒺藜总皂苷0.3份、银杏叶提取物0.025份、螺旋藻硒多糖0.05份、山楂12.5份、干姬松茸7份、食盐1份、羧甲基纤维素钠0.45份、黄原胶0.3份、海藻酸钠0.225份、高筋小麦粉至100份。
3.如权利要求1或2所述的一种强化青少年体质的姬松茸面条,其特征在于,所述的刺五加总皂苷的制备方法为:取刺五加,干燥、粉碎至20目,浸泡于石油醚(60-90℃)中,室温放置3h,倾去浸提液,再加石油醚浸泡至浸提液无色,置于通风处干燥,挥干石油醚,按料液比1:10加入70%乙醇,在微波功率600W下微波提取3min,过滤,取滤液,减压浓缩至原滤液体积的1/5,选用径高比为1:40的AB-8型树脂洗脱,用水、10%乙醇依次洗脱,流速为1.44BV/h,洗脱至还原糖反应显阴性,再用70%乙醇以16BV/h的流速洗脱,时间为2-3h,收集洗脱液,干燥,得刺五加总皂苷。
4.如权利要求1或2所述的一种强化青少年体质的姬松茸面条,其特征在于,所述的蒺藜总皂苷的制备方法为:取蒺藜全草,干燥、粉碎至20目,按料液比1:12加入水,50-60℃下回流提取3h,过滤,滤液备用,滤渣按料液比1:10加入水,50-60℃下回流提取2h,过滤,合并两次滤液,所得滤液浓缩至浸膏,加入等量乙醇,静置2h,过滤,取滤液,减压回收乙醇,干燥,得蒺藜提取物,加入蒸馏水使蒺藜提取物浓度为0.5g/mL,选用径高比为1:40的AB-8型树脂洗脱,用水、10%乙醇依次洗脱,流速为1.44BV/h,洗脱至还原糖反应显阴性,再用70%乙醇以16BV/h的流速洗脱,时间为2-3h,收集洗脱液,干燥,得蒺藜总皂苷。
5.如权利要求1或2所述的一种强化青少年体质的姬松茸面条,其特征在于,所述的银杏叶提取物的制备方法为:取银杏叶,干燥、粉碎至20目,按料液比1:16加入30%乙醇,加入果胶酶、纤维素酶等量复合酶,复合酶与银杏叶的配料比为1:140,调节反应体系pH4.5,在50℃下酶解2h,酶解结束后,90℃下浸提90min,5000r/min离心8min,取上清液,干燥,得银杏叶提取物。
6.如权利要求1或2所述的一种强化青少年体质的姬松茸面条,其特征在于,所述的螺旋藻硒多糖的制备方法为:
a.富硒螺旋藻的培养:将等量的极大螺旋藻、钝顶螺旋藻、盐泽螺旋藻混合采用Zarrouk液体培养基培养,外加8mg/L亚硒酸钠,用日光灯作为光源,光强度为160μmol/(㎡·s),光周期为16:8,光照时温度为35℃,暗时为25℃,间断通气培养12d,300目筛过滤,藻渣用新鲜的Zarrouk液体培养基清洗2-3次,4℃下冷冻干燥,得富硒螺旋藻粉;
b.螺旋藻硒多糖的提取:取富硒螺旋藻粉,按料液比1:10加入0.1%的焦磷酸钠,处理10-12min后,倾去液体,按料液比1:9加入80℃的热水,抽提2次,每次6h,合并提取液,提取液经4000r/min离心5min,取上清液,浓缩至浸膏,加入4倍体积的乙醇,4℃下静置12h,4000r/min离心2min,取沉淀,按料液比1:8加入水制成溶液,调节pH7.0,加入沉淀质量3%的中性蛋白酶,50℃下保温2.5h,90℃下灭酶10min,浓缩至原溶液体积的20%,得螺旋藻粗硒多糖溶液;
c.取螺旋藻粗硒多糖溶液,采用乙醇/硫酸铵双水相体系进行萃取,双水相体系的组成为35%乙醇与15%硫酸铵的体积比为1:2.5,25℃下各相分配平衡30min后,静置4h,采用Sephadex G-150柱洗脱,洗脱液为0.1mol/L的NaCl溶液,收集苯酚硫酸法测定洗脱曲线最高峰处溶液,再采用DEAE Sephadex A-50柱洗脱,10管洗脱液为去离子水,30管洗脱液按0-2mol/L的NaCl溶液按梯度洗脱,同样方法收集最高峰处溶液,在3500Da的透析袋中透析,先在蒸馏水中透析24h,再用去离子水透析,换4次去离子水,共透析12h,透析结束后,干燥,得螺旋藻硒多糖。
7.制备如权利要求1-6任一项所述的一种强化青少年体质的姬松茸面条的方法,其特征在于,包括以下步骤:
(1)山楂浆的制作:选用生长成熟、无腐烂、无病虫害的新鲜山楂,用清水洗净,去皮,浸泡在2%柠檬酸溶液中,60-70℃下预煮12-15min,取出,冷水浸泡至常温,置于打浆机中打浆至无肉眼可见颗粒,得山楂浆;
(2)辅料预处理:将步骤(1)所得的山楂浆加热至40-50℃,将刺五加总皂苷、蒺藜总皂苷、银杏叶提取物、螺旋藻硒多糖加入山楂浆中,分搅拌混合,得辅料混合物;
(3)主料预处理:将干姬松茸除杂、清洗干净后,45℃下鼓风干燥,粉碎至粒度为120目后,与食盐、羧甲基纤维素钠、黄原胶、海藻酸钠一起加入至面粉中,混合均匀,得主料混合物;
(4)和面:将步骤(2)所得的辅料混合物和步骤(3)所得的主料混合物混合均匀后,加入水8-10份,置于和面机中搅拌10-15min,得姬松茸面团;
(5)熟化:将步骤(4)所得的姬松茸面团在室温下静置15min,得熟化姬松茸面团;
(6)压片、切条:将步骤(5)所得的熟化姬松茸面团在压面机中压轧成片状,厚度为1-1.2mm且表面光滑的面片,得姬松茸面片;将马铃薯泥面片切条成粗细为2.5-3mm的面条,得姬松茸湿面切条;
(7)将步骤(6)所得的姬松茸湿面切条在常温下干燥至面条水分含量为5-6.5%,切断后包装,得成品强化青少年体质的姬松茸面条。
