Abstract
本发明涉及一种调补气血的代餐食品及其制备方法,所述调补气血的代餐食品采用玫瑰花、灸甘草、荷叶、大枣、椰子粉、藕粉和小麦粉为原料并进行适当重量配比,最终制备得到具有补气益血、补脾和胃、益气复脉、生津利水、纤美身材和增强人体免疫力功效的代餐食品。本发明代餐食品可以加工为代餐粉、饼干或糕点,选择多样化,满足不同人群的需求,且在药食同源的基础上丰富传统食品口味,提升营养成分的同时,能够纤美身材、滋补气血、提升机体免疫力。本发明针对不同原料进行不同的提取工艺,以使各原料功效得到最大程度的发挥。本发明所述调补气血的代餐食品的制备方法简单、效率高、无污染,符合大规模生产要求,容易实施。

本发明属于保健饮品技术领域,具体涉及一种调补气血的代餐食品及其制备方法。
背景技术
所谓代餐,顾名思义就是取代部分或全部正餐的食物,代餐除了能够快速、便捷的为人体提供大量的各种营养物质外,具有高纤维、低热量、易饱腹等特点,也集中营养均衡、效果显著、食用方便等优点于一身,现有代餐食品原料和加工较传统,仅仅采用谷类、蔬菜、水果等常见食材,无法满足消费者所需的纤美身材、调补气血、健脾胃、提高机体免疫力等方面的保健要求,现有的代餐食品能够饱腹,但是缺乏保健作用,所以亟需一种能够满足消费者保健需求、搭配合理、适用范围广的代餐食品。
发明内容
为了解决现有技术存在的上述问题,本发明提供了一种具有补气益血、补脾和胃、益气复脉、生津利水、纤美身材和增强人体免疫力功效的代餐食品极其制备方法。本发明代餐食品可以加工为代餐粉、饼干或糕点,选择多样化,满足不同人群的需求。
本发明所采用的技术方案为:
一种调补气血的代餐食品,原料组分包括:
玫瑰花5-15重量份、灸甘草6-14重量份、荷叶5-15重量份、大枣15-25 重量份、椰子粉20-40重量份、藕粉100-300重量份、小麦粉70-90重量份。
进一步优选所述调补气血的代餐食品的原料组分包括:
玫瑰花10重量份、灸甘草10重量份、荷叶10重量份、大枣20重量份、椰子粉30重量份、藕粉200重量份、小麦粉80重量份。
进一步地,所述代餐食品为代餐粉或代餐糕点中的一种。
进一步地,所述代餐粉的制备方法,包括如下步骤:
(1)按上述重量份取玫瑰花、大枣,依次进行除杂、清洗、干燥、低温研磨,得到玫瑰花粉和大枣粉备用;
(2)按上述重量份取灸甘草,依次进行除杂、清洗、干燥;加入乙醚进行煎煮、过滤,将滤液进行浓缩,将所得浓缩液进行醇沉,得到沉淀物;将所得沉淀物进行喷雾干燥、粉碎,得到灸甘草提取物;
(3)按上述重量份取荷叶,依次进行除杂、清洗、干燥、粉碎,加入水混合研磨,再加入苹果酸进行酸化,随后加入酵母菌进行发酵,得到荷叶发酵原液;
(4)将步骤(1)中所得玫瑰花粉和大枣粉、步骤(2)中所得灸甘草提取物、步骤(3)中所得荷叶发酵原液、椰子粉、藕粉和小麦粉混合,依次进行搅拌、干燥、粉碎,得到所述调补气血的代餐粉。
进一步地,步骤(1)中,所述低温研磨的温度为10-20℃,所述低温研磨的时间为60-120min。
进一步地,步骤(2)中,所述乙醚的加入量为灸甘草质量的4-6倍,所述煎煮时间为1.5-2小时,所述醇沉时间为3-5小时。
进一步地,步骤(3)中,所述加水质量与荷叶质量比为1:(1-2),所述苹果酸的质量与荷叶的质量比为1:(8-10),所述酸化时间为6-7h,所述酵母的质量与荷叶的质量比为1:(8-10),所述发酵温度为36-38℃,所述发酵时间为20-30天。

一种制备所述调补气血的代餐糕点的方法,包括如下步骤:
(1)按上述重量份取玫瑰花、大枣,依次进行除杂、清洗、干燥、低温研磨,得到玫瑰花粉和大枣粉备用;
(2)按上述重量份取灸甘草,依次进行除杂、清洗、干燥;加入乙醚进行煎煮、过滤,将滤液进行浓缩,将所得浓缩液进行醇沉,得到沉淀物;将所得沉淀物进行喷雾干燥、粉碎,得到灸甘草提取物;
(3)按上述重量份取荷叶,依次进行除杂、清洗、干燥、粉碎,加入水混合研磨,再加入苹果酸进行酸化,随后加入酵母菌进行发酵,得到荷叶发酵原液;
(4)将步骤(1)中所得玫瑰花粉和大枣粉、步骤(2)中所得灸甘草提取物、步骤(3)中所得荷叶发酵原液、椰子粉、藕粉和小麦粉混合,依次进行低温搅拌、切条冷冻、切片、烘烤、冷却,得到所述调补气血的代餐糕点。

玫瑰,玫瑰花中含有300多种化学成份,如芳香的醇、醛、脂肪酸、酚和含香精的油和脂,常食玫瑰制品中以柔肝醒胃,舒气活血,美容养颜,令人神爽;玫瑰初开的花朵及根可入药,有理气、活血、收敛等作用、主治月经不调,跌打损伤、肝气胃痛,乳臃肿痛等症;玫瑰的成熟鲜果中,含有大量的维生素 A、B、C,还含有十多种氨基酸、可溶性糖、生物碱;其中维生素C的含量最丰富、每100g内含2000多mg,有“维生素C之王”之称;还含有蛋白质、脂肪、碳水化合物、钙、磷、钾、铁、镁等,其中蛋白质含量8.5%,脂肪4.7%,可溶性糖1.2%,碳水化合物68%;玫瑰花渣中不含有任何有害的元素,其中含葡萄糖18.33%~23.66%,含淀粉21.75%~22.63%,且含有丰富的氨基酸,其氨基酸总量高达10.9%。
灸甘草,味甘,性平;归心、脾、肺、胃经。补脾和胃,益气复脉。脾胃虚弱,倦怠乏力,心动悸,脉结代。

本实施例提供一种调补气血的代餐粉,原料组分包括:
玫瑰花5g、灸甘草6g、荷叶5g、大枣15g、椰子粉20g、藕粉100g、小麦粉70g。
进一步,本实施例提供所述调补气血的代餐粉的制备方法,包括如下步骤:
(1)按上述重量份取玫瑰花、大枣,依次进行除杂、清洗、干燥,10℃下研磨60min,得到玫瑰花粉和大枣粉备用;
(2)按上述重量份取灸甘草,依次进行除杂、清洗、干燥;加入灸甘草4 倍质量的乙醚煎煮1.5h,过滤,浓缩,将所得浓缩液醇沉3h,得到沉淀物;将所得沉淀物进行喷雾干燥、粉碎,得到灸甘草提取物;
(3)按上述重量份取荷叶,依次进行除杂、清洗、干燥、粉碎,加入与荷叶等质量的水混合研磨,再加入占荷叶质量1/8的苹果酸酸化6h,随后加入占荷叶质量1/8的酵母菌在36℃下发酵20天,得到荷叶发酵原液;
(4)将步骤(1)中所得玫瑰花粉和大枣粉、步骤(2)中所得灸甘草提取物、步骤(3)中所得荷叶发酵原液、椰子粉、藕粉和小麦粉混合,22℃下搅拌 20min,干燥,粉碎至粒径为100目,得到所述调补气血的代餐粉。
实施例2
本实施例提供一种调补气血的代餐糕点,原料组分包括:
玫瑰花15g、灸甘草14g、荷叶15g、大枣25g、椰子粉40g、藕粉300g、小麦粉90g。
进一步,本实施例提供所述调补气血的代餐糕点的制备方法,包括如下步骤:
(1)按上述重量份取玫瑰花、大枣,依次进行除杂、清洗、干燥,20℃下研磨120min,得到玫瑰花粉和大枣粉备用;
(2)按上述重量份取灸甘草,依次进行除杂、清洗、干燥;加入灸甘草6 倍质量的乙醚煎煮2h,过滤,浓缩,将所得浓缩液醇沉5h,得到沉淀物;将所得沉淀物进行喷雾干燥、粉碎,得到灸甘草提取物;
(3)按上述重量份取荷叶,依次进行除杂、清洗、干燥、粉碎,加入占荷叶质量1/2的水混合研磨,再加入占荷叶质量1/10的苹果酸酸化6h,随后加入占荷叶质量1/10的酵母菌在38℃下发酵30天,得到荷叶发酵原液;
(4)将步骤(1)中所得玫瑰花粉和大枣粉、步骤(2)中所得灸甘草提取物、步骤(3)中所得荷叶发酵原液、椰子粉、藕粉和小麦粉混合,26℃下搅拌 40min,切条后在零下15℃下冷冻3h,切成厚度为2.5cm的饼片,200℃烘烤 14min,湿度为80%、温度为40℃的条件下冷却,得到所述调补气血的代餐糕点。
实施例3
本实施例提供一种调补气血的代餐糕点,原料组分包括:
玫瑰花10g、灸甘草10g、荷叶10g、大枣20g、椰子粉30g、藕粉200g、小麦粉80g。
进一步,本实施例提供所述调补气血的代餐糕点的制备方法,包括如下步骤:
(1)按上述重量份取玫瑰花、大枣,依次进行除杂、清洗、干燥,15℃下研磨90min,得到玫瑰花粉和大枣粉备用;
(2)按上述重量份取灸甘草,依次进行除杂、清洗、干燥;加入灸甘草5 倍质量的乙醚煎煮1.75h,过滤,浓缩,将所得浓缩液醇沉4h,得到沉淀物;将所得沉淀物进行喷雾干燥、粉碎,得到灸甘草提取物;

对比例1
与实施例3的区别仅在于灸甘草的处理方式不同,本对比例中将灸甘草依次进行除杂、清洗、干燥后加水进行煎煮、过滤,重复三次,合并滤液后进行加热浓缩,得到灸甘草提取液。
对比例2
与实施例3的区别仅在于荷叶的处理方式不同,本对比例中将荷叶依次进行除杂、清洗、干燥后加水进行煎煮、过滤,重复三次,合并滤液后进行加热浓缩,得到荷叶提取液。
对比例3
与实施例3的区别仅在于灸甘草和荷叶的处理方式不同,本对比例中将灸甘草和荷叶分别进行除杂、清洗、干燥,15℃下研磨90min,与其他原料混合后加适量水进行后续制备过程即可。
实验例
一、实施例3和对比例1-3所得代餐糕点的效果试验
1、试验对象:128名受试者,分别患有不同程度的气血不足、脾胃失调、免疫力低下等症状,将这些受试者不分年龄、性别,均分为四组(对应实施例 3和对比例1-3)。
2、试验过程:分别食用实施例3和对比例1-3所得代餐糕点,让受试者连续食用30天,随后查看受试者身体状况。
3、试验结果判断标准:(1)有效:气血不足、脾胃失调、免疫力低下等症状减轻,有所改善;(2)显效:气血不足、脾胃失调、免疫力低下等症状消失; (3)无效:气血不足、脾胃失调、免疫力低下等症状无任何改善。
4、试验结果:见表1。

从表1中可以看出,本发明实施例3所述代餐糕点对气血不足、脾胃失调、免疫力低下等症状具有较好的调理效果,有效率为96.7%,充分证实了本发明所述调补气血的代餐糕点的补气益血、补脾和胃、益气复脉、生津利水和增强人体免疫力等功效的保健效果。
二、实施例3所得代餐糕点对小鼠腹腔巨噬细胞吞噬功能的影响
1、方法
(1)小鼠30只,随机分为2组,试验组食用本发明实施例3所得代餐糕点,对照组食用等量小鼠饲料,每天三次,连续喂养10天;
(2)试验第11天,经腹腔向每组试验小鼠腹腔中注射4%鸡血红细胞,每只小鼠注射0.3mL,1.5小时后,颈椎脱臼处死,立即向腹腔中注射0.6mL 生理盐水,3分钟后取腹腔液于载玻片上,37℃孵育20分钟,染色镜检,观察统计,计算吞噬率和吞噬指数。
(3)每只小鼠有2000个巨噬细胞,吞噬率=(吞噬鸡血红细胞的巨噬细胞数/2000)*100%;吞噬指数=被吞噬的鸡血红细胞总数/吞噬鸡血红细胞的巨噬细胞数。
2、结果

由表2可得,与对照组相比,食用代餐糕点小鼠巨噬细胞的吞噬率和吞噬指数明显得到了提高,表明本发明实施例3所得代餐糕点可增强小鼠腹腔巨噬细胞对鸡血红细胞的吞噬率,提高小鼠细胞的免疫功能。

Claims (10)
1.一种调补气血的代餐食品,其特征在于,原料组分包括:
玫瑰花5-15重量份、灸甘草6-14重量份、荷叶5-15重量份、大枣15-25重量份、椰子粉20-40重量份、藕粉100-300重量份、小麦粉70-90重量份。
2.根据权利要求1所述的调补气血的代餐食品,其特征在于,原料组分包括:
玫瑰花10重量份、灸甘草10重量份、荷叶10重量份、大枣20重量份、椰子粉30重量份、藕粉200重量份、小麦粉80重量份。
3.根据权利要求1-2任一项所述调补气血的代餐食品,其特征在于,所述代餐食品为代餐粉或代餐糕点中的一种。
4.一种权利要求3所述调补气血的代餐粉的制备方法,其特征在于,包括以下步骤:
(1)按上述重量份取玫瑰花、大枣,依次进行除杂、清洗、干燥、低温研磨,得到玫瑰花粉和大枣粉备用;
(2)按上述重量份取灸甘草,依次进行除杂、清洗、干燥;加入乙醚进行煎煮、过滤、浓缩,将所得浓缩液进行醇沉,得到沉淀物;将所得沉淀物进行喷雾干燥、粉碎,得到灸甘草提取物;
(3)按上述重量份取荷叶,依次进行除杂、清洗、干燥、粉碎,加入水混合研磨,再加入苹果酸进行酸化,随后加入酵母菌进行发酵,得到荷叶发酵原液;
(4)将步骤(1)中所得玫瑰花粉和大枣粉、步骤(2)中所得灸甘草提取物、步骤(3)中所得荷叶发酵原液、椰子粉、藕粉和小麦粉混合,依次进行低温搅拌、干燥、粉碎,得到所述调补气血的代餐粉。
5.根据权利要求4所述调补气血的代餐粉的制备方法,其特征在于,步骤(1)中,所述低温研磨的温度为10-20℃,所述低温研磨的时间为60-120min;
步骤(2)中,所述乙醚的加入量为灸甘草质量的4-6倍,所述煎煮时间为1.5-2h,所述醇沉时间为3-5h。
6.根据权利要求4所述调补气血的代餐粉的制备方法,其特征在于,步骤(3)中,所述加水质量与荷叶质量比为1:(1-2),所述苹果酸的质量与荷叶的质量比为1:(8-10),所述酸化时间为6-7h,所述酵母菌的质量与荷叶的质量比为1:(8-10),所述发酵温度为36-38℃,所述发酵时间为20-30天;
步骤(4)中,所述搅拌温度为22-26℃,所述搅拌时间为20-40min,所述粉碎后的粒径为100-300目。
7.一种权利要求3所述调补气血的代餐糕点的制备方法,其特征在于,包括以下步骤:
(1)按上述重量份取玫瑰花、大枣,依次进行除杂、清洗、干燥、低温研磨,得到玫瑰花粉和大枣粉备用;
(2)按上述重量份取灸甘草,依次进行除杂、清洗、干燥;加入乙醚进行煎煮、过滤、浓缩,将所得浓缩液进行醇沉,得到沉淀物;将所得沉淀物进行喷雾干燥、粉碎,得到灸甘草提取物;
(3)按上述重量份取荷叶,依次进行除杂、清洗、干燥、粉碎,加入水混合研磨,再加入苹果酸进行酸化,随后加入酵母菌进行发酵,得到荷叶发酵原液;
(4)将步骤(1)中所得玫瑰花粉和大枣粉、步骤(2)中所得灸甘草提取物、步骤(3)中所得荷叶发酵原液、椰子粉、藕粉和小麦粉混合,依次进行低温搅拌、切条冷冻、切片、烘烤、冷却,得到所述调补气血的代餐糕点。
8.根据权利要求7所述调补气血的代餐糕点的制备方法,其特征在于,步骤(1)中,所述低温研磨的温度为10-20℃,所述研磨时间为60-120min;
步骤(2)中,所述乙醚的加入量为灸甘草质量的4-6倍,所述煎煮时间为1.5-2h,所述醇沉时间为3-5h。
9.根据权利要求7所述调补气血的代餐糕点的制备方法,其特征在于,步骤(3)中,所述加水质量与荷叶质量比为1:(1-2),所述苹果酸的质量与荷叶的质量比为1:(8-10),所述酸化时间为6-7h,所述酵母的质量与荷叶的质量比为1:(8-10),所述发酵温度为36-38℃,所述发酵时间为20-30天。
10.根据权利要求7所述调补气血的代餐糕点的制备方法,其特征在于,步骤(4)中,所述低温搅拌温度为22-26℃,所述搅拌时间为20-40min,所述冷冻温度为零下10℃到零下15℃,所述冷冻时间为2-3h,所述切片厚度为1.5-2.5cm,所述烘烤温度为180-200℃,所述烘烤时间为10-14min,所述冷却温度为30-40℃,所述冷却环境湿度为70-80%。
