技术领域
本发明涉及营养食品领域,具体涉及到一种食疗面条及其制造工艺。
背景技术
一般原本就体虚乏力的病人在术后或者病后急需调养一段时间才能恢复元气,调养需要长时间而且也需要服用大量营养滋补品,目前市场上营养产品质量参差不齐,价格大多不菲,且由于病人身体虚弱,吸收能力较差,市面的营养滋补品并不一定适合此类病人。食疗是在中医理论指导下利用食物的特性来调节机体功能,使其获得健康或愈疾防病的一种方法,面条作为一种大众化主食深受民众喜爱,因此一种利用面食营养成分搭配的中医食疗面条成为市面上急需的营养产品。
发明内容
为了克服上述现有技术中的缺陷,本发明提供了一种食疗面条,该食疗面条通过中医知食疗理论利用面食成分与中药的结合,为体虚乏力的病人提供滋补营养效果。
技术方案
一种食疗面条,包括以下重量份的原料组成:小麦芯粉400-600份、面筋粉50-150份、葛根20-40份、蛹虫草10-20份、茯苓25-40份、陈皮2-6份、法内金6-18份、干姜2-6份、糯米40-60份、山药25-50份、白扁豆20-40份、瓜尔豆胶1-5份;强筋剂1-5份、食用盐1-5份。
优选的,包括以下重量份的原料组成:小麦芯粉500份;面筋粉100份;糯米50份;山药30份;葛根30份;蛹虫草15份;茯苓30份;白扁豆30份;陈皮5份;法内金15份;干姜5份;瓜尔豆胶3份;强筋剂4份;食用盐2份。
一种食疗面条的制造工艺,用于上述的一种食疗面条,包括以下制造步骤:
步骤一、取上述重量份的糯米、山药、葛根、蛹虫草、茯苓、白扁豆、陈皮、法内金、干姜研磨成粉并加入适量温水进行搅拌成糊状中药添加液留取备用;
步骤二、取上述重量份的瓜尔豆胶、强筋剂、食用盐、小麦芯粉和面筋粉搅拌后加入适量温水进行和面,和成后的软面团留取备用;
步骤三、取步骤一中备用的糊状中药添加液加入至将软面团内进行二次和面,和面完成后将面团静置30min;
步骤四、将静置好的面团放入压面机内进行初次压面为5-7mm厚度的面片;然后将面片放入压面机内进行第二次压面,压成3mm厚度的面片;将面片再次放入压面机内进行第三次压面,压制成1mm厚度的薄面片;将薄面片切割成均匀细度的面条后移至室外晒干后保存为成品。
所述强筋剂包括以下百分比组成成份:氯化钠50%,碳酸钠45%,三聚磷酸钠5%。
优选的,还包括滋养调补膏,所述滋养调补膏包括以下重量份的原料组成:红枣膏15-25份;黄芪膏15-30份;党参膏10-20份。

配方原料的介绍:
一、主配方的营养成分和性味功能:
小麦芯粉,味甘,性凉;归心、脾、肾经。具有养心除烦,健脾益肾,除热止渴等效用。适合脏燥,烦热,泄痢者食用,同时也是人们日常主食材。
面筋粉,是用面粉洗去淀粉和杂质,提取小麦中所特有的麦胶蛋白质和麦谷蛋白质的胶体混合物,小麦中只含30%。面筋的蛋白质含量高于瘦猪肉、鸡肉、鸡蛋和大部份豆制品,属于高蛋白、低脂肪、低糖、低热量食物,还含有丰富的钙、铁、磷、钾等多种微量及宏量元素。其中,100克水面筋含有能量140千卡、蛋白质23.5毫克、脂肪0.1毫克、炭水化合物11.4毫克、膳食纤维0.9毫克、维生素B10.1毫克、维生素B20.07毫克、烟酸1.1毫克、维生素E0.65毫克、钙76毫克、铁4.2毫克、纳15毫克。
面筋既适合作为主食,也可制作出美味菜肴。《本草纲目》指出:“解热、和中、劳热人宣煮食之。”;《食鉴本草》指出:“性凉寒、宽中、益气。”《随息居饮食谱》指出:“解热、止渴、消烦。”《医林篡要》指出:“解面毒、和筋养血、去痕。”
糯米,昧甘,性温;入脾、胃、肺经。具有补中益气,健脾养胃,止虚汗的功用。对于脾胃虚寒所致的反胃、食欲减少、泄泻和气虚引起的出汗,气虚无力有缓解作用,适合神经衰弱,肺结核,病后产后食用。糯米营养丰富,蛋白质、脂肪、炭水化合物、维生素B1、维生素B2、烟酸、钙、铁、磷含量都很高.其中磷元素可促进淀粉和脂肪代谢,为人体提供热量,恢复体力,适量进食可以促进食欲,改善神经系统。糯米还有收涩作用,对于尿频、自汗有一定的食疗效果。但糯米黏性大,难消化,所以痰热火盛、发热、黄疸、咳黄痰者不宜食用,老人、儿童、糖尿病、高血脂、肾病患者要少食用。
山药,属于既是食品又是药品的保健类中药材。作为中药,味甘,性平;归脾、肺、肾经。具有补脾养胃,生津益肺,补肾涩精。常用于脾虚食少,久泻不止,肺虚咳喘,肾虚遗精,白带过多,泄泻便溏,尿频,虚热消渴。作为食材,可制成多种美味食品。
葛粉,也称葛根粉,味甘,辛,性平;既有药用价值,也是营养保健食品,含有对人体非常有益的葛根素和黄酮类物质,提纯的葛根素临床用于增加冠状动脉血流量,降低血管阻力,调节血液循环,降低心肌耗氧。葛粉的功能:清热凉血,抗菌消炎,抗氧化、过敏、病毒和糖尿病并发症等。作为保健食材,能做出大众喜爱的各式食品。
蛹虫草粉,味甘,性平;归肺、肾经。蛹虫草与冬虫夏草同属于真菌类产品,含有18种氨基酸,其中虫草素、虫草多糖、SOD酶三种活性成份高于冬虫夏草。其药理作用:一是抗菌,尤其对肺炎球菌及致病性真菌有抑制作用;二是舒张支气管,加强肾上腺素;三是抑制平滑肌、心律、降血压、降血脂、消斑祛斑;四是消除自由基、抗衰防癌。传统用于补虚损、益精气、止咳化痰;适宜痰饮喘嗽、虚喘、痨嗽、咯血、畏寒、贫血、自汗盗汗,阳痿遗精,腰膝酸痛,病后久虚,阴虚阳亢,老人涕多泪出。具有阴阳双向调理效果。
茯苓粉,味甘,淡,性平;具有利水渗湿,益脾和胃,宁心安神之功用。现代医学研究表明,茯苓有增强肌体免疫功能,茯苓多糖有明显的抗肿瘤及保养肝脏的作用,尤其茯苓聚糖含量很高,对多种细菌有抑制作用,对降胃酸、预防消化道溃荡,回升化疗所致的白细胞减少及镇静有很好的效果。茯苓是寄生于松树垠部的菌类植物,作为中药传统用于水肿胀满、痰饮咳逆、泄泻、遗精、淋浊、惊悸、健忘等。因具有抗癌效果,而中医认为癌属于脾虚湿盛,痰饮内停,湿热壅结,所以临床用于食管、胃、肝、舌、乳腺、膀肮、肺癌治疗的食疗。
白扁豆粉,味甘,性微温;归脾、胃经。具有补脾和中、化湿消暑功效。用于治疗脾胃虚弱、食欲不振、大便溏泻、白带过多、暑混吐泻、胸闷腹涨等症状。
陈皮粉,味辛苦,性温;归牌、胃、肺经。气香宣散,可升可降,具有理气和中,燥湿化痰,利水通便的功能。传统用于脾胃不和,脘腹胀痛:痰湿阻肺,咳嗽多痰,胸膈满闷,小便不利,大便秘结,也用于烹饪时提鲜解腥。
法内金粉,味甘,性平,微寒;入脾、霄经。具有消积滞,健脾胃的功能。传统用于积食胀满,呕吐反胃,泻俐,疳积,消渴,遗尿,喉痹,牙疳口疮。古代医药典籍《本草纲目》、《本草述》、《本经》都有其相关食疗效果的记述。也是民间常用于消食、疳积的食物。
干姜粉,味辛,性热。归脾、胃、心、肺经。温中散寒、回阳通脉、燥湿消痰、温肺化饮、温经止血。有益于健运脾阳、驱脾胃虚寒、祛脘腹冷痛。
瓜尔豆胶,是植物瓜尔豆种子的提取物,由于具有很强的黏度和增稠性又能改善口感,而被广泛用于冰淇淋、果冻、酸乳、挂面等食品的添加剂添加瓜尔豆胶,有益于面条表面光滑易于成型,口感爽滑而不油腻,水渚而不混汤。
速效强筋剂的组成成份为氯化钠即食用盐50%,碳酸钠(Na2CO3)即纯碱45%,三聚磷酸钠(STPP)5%。制作面条能增强面筋蛋白的交联,形成淀粉间的网络结构,强化面的筋质,赋予制品良好的粘弹性、延伸性和韧性。
食用盐,用于和面,可强化面筋,面团更易拉伸,面条的口感更为柔和而有筋道。
二、面条主配方依据传统学医“食药同源”食疗理论,针对体虚乏力,病后初愈,脾胃虚弱及年老体衰者设计,口感软滑而不腻,色泽柔和而不混汤,食之清香而有余味。经数十次制作实践,多次变更配方才得以最终定型。产品经过试用,食疗效果明显。
三.调补膏方的性味功效
为了方便使用,我们选取优质红枣、黄芪、党参等食药两用的中药材,以传统工艺流程熬制成膏方,100克面条配一份,可以下在面条里混合食用,也可以单独食用。由于本调补膏滋属于温补用,所以湿热体质并不适用,其他体质均适用本调补膏。
红枣,味甘,性温;归脾、胃经。具有补脾和胃,益气生津,调营卫,解药毒的功能。传统用于脾虚食少,胃弱便溏,气血津液不足,营卫不和,心悸,妇人脏躁,体倦乏力。
黄茂,味甘,性温;归肺、牌、肝、肾经。具有益卫固表、利水消肿、托毒生肌,补气、养血、益中功效;还具有降低血液黏稠改善循环、双向调节血糖、保护肝脏、增强肌体免疫作用。适用于内伤劳倦、脾虚泄泻、气虚、血虚、自汗盗汗等体虚症状。
党参,味甘,性平。具有补中益气,生津清肺功能。是著名的药食两用滋补类中药材,传统用于脾胃虚弱,肠胃中冷,滑泻久痢,虚劳内伤,气喘烦渴,气血两亏,体倦无力,肺虚,食少,口渴,脱肛和慢性贫血食疗。《本草正义》记载:“党参力能补脾养胃,润肺生津,健运中气,本与人参不甚相远。其尤可贵者,则健脾运而不燥,养胃阴而不湿,润肺而不犯寒凉,养血而不偏滋腻,鼓舞清扬,振动中气,而无刚燥之弊,无往而不宜也。病后元虚无力,每服二、三钱,足振动其一日之神气。凡古今成方之所用人参,无不可以党参当之,即凡百证治之应用人参者,亦无不可以党参投之。”现代药理研究证明党参所含皂甙、生物碱、挥发油、黄苓素葡萄糖甙、多糖、菊糖对人体强健有显效。

1.一种食疗面条,其特征在于,包括以下重量份的原料组成:小麦芯粉400-600份、面筋粉50-150份、糯米40-60份、山药25-50份、葛根20-40份、蛹虫草10-20份、茯苓25-40份、白扁豆20-40份、陈皮2-6份、法内金6-18份、干姜2-6份、瓜尔豆胶1-5份;强筋剂1-5份、食用盐1-5份。
2.根据权利要求1所述的一种食疗面条,其特征在于,包括以下重量份的原料组成:小麦芯粉500份;面筋粉100份;糯米50份;山药30份;葛根30份;蛹虫草15份;茯苓30份;白扁豆30份;陈皮5份;法内金15份;干姜5份;瓜尔豆胶3份;强筋剂4份;食用盐2份。
3.一种食疗面条的制造工艺,其特征在于,用于制造权利要求1或2所述的一种食疗面条,包括以下制造步骤:
步骤一、取上述重量份的糯米、山药、葛根、蛹虫草、茯苓、白扁豆、陈皮、法内金、干姜研磨成粉并加入适量温水进行搅拌成糊状中药添加液留取备用;
步骤二、取上述重量份的瓜尔豆胶、强筋剂、食用盐、小麦芯粉和面筋粉搅拌后加入适量温水进行和面,和成后的软面团留取备用;
步骤三、取步骤一中备用的糊状中药添加液加入至将软面团内进行二次和面,和面完成后将面团静置30min;
步骤四、将静置好的面团放入压面机内进行初次压面为5-7mm厚度的面片;然后将面片放入压面机内进行第二次压面,压成3mm厚度的面片;将面片再次放入压面机内进行第三次压面,压制成1mm厚度的薄面片;将薄面片切割成均匀细度的面条后移至室外晒干后保存为成品。
4.根据权利要求1或2所述的一种食疗面条,其特征在于,所述强筋剂包括以下百分比组成成份:氯化钠50%,碳酸钠45%,三聚磷酸钠5%。
