本发明属于辣椒酱加工领域,具体涉及干菜花生米辣椒酱及其制备方法。
背景技术
辣椒是我国西南地区的人们普遍喜爱的一种调味品,中国的大多数地方都有食用辣椒酱的习惯。据不完全统计,我国辣椒产量已经超过3000万吨。辣椒是人们喜爱的蔬菜,我国辣椒食用人群约有40%,随着人口流动性增大,辣椒食用人群已遍布全国各地。为了满足四季食用辣椒的需求,除了直接食用新鲜的辣椒,人们还将辣椒加工成不同风味的酱类调味品。民间普遍采用的方法是将新鲜的红辣椒与姜、蒜等辅料混合切碎,用盐腌制进行储藏,在云南、贵州等地方俗称糟辣椒。
辣椒酱是辣椒加工的产品之一,辣椒酱也有很多的口味,如中华老字号“天车”、“德福斋”等品牌在一定区域享有知名度,新的一线品牌如“老干妈”等也深受大众喜爱。因此,辣椒制品的研究一直深受相关领域技术人员的青睐。现有辣椒酱的口味比较单一,并由传统手工制备而成。
对于辣椒酱的多样化研究始于最近20年,目前辣椒酱有油制和水制两种,油制辣椒酱主要用辣椒和食用油等原料制成,产品有辣椒油香味,容易保存,且保存期限长,但成本高。水制辣椒酱主要用水和辣椒经过发酵制成,颜色鲜红,有乳酸产生从而可促进食欲,但是,水制辣椒酱保存期限短,还需要添加防腐剂来延长保存期限,从而破坏产品的口感。
干菜大多由新鲜蔬菜经日光晒后而成,如干豆腐片、长治萝卜黄菜、茄子干、南瓜干、干豆角、雪里蕻。干菜最有名的是五台山的台蘑、中条山的猴头、大同的黄花菜和管涔山的银盘蘑。蔬菜晒干后水分丢失,维生素C、维生素B1、B2、叶酸等水溶性维生素及矿物质中的钾、还有一些敏感的如多酚类植物化学物质都会受到一定程度的损失。但吃脱水蔬菜是可以摄取到充足的膳食纤维和矿物质,与普通蔬菜一样能促进肠道蠕动、改善便秘。
花生又名“长生果”、“泥豆”,拉丁学名Arachis hypogaea Linn.,果实含有蛋白质、脂肪、糖类、维生素A、维生素B6、维生素E、维生素K,以及矿物质钙、磷、铁等营养成分,含有8种人体所需的氨基酸及不饱和脂肪酸,含卵磷脂、胆碱、胡萝卜素、粗纤维等物质,具有抗老化性、凝血止血、促进发育、增强记忆的作用。
辣椒能通过发汗而降低体温,并缓解肌肉疼痛,因此具有较强的解热镇痛作用;辣椒的有效成分辣椒素是一种抗氧化物质,它可以组织有关细胞的新陈代谢,从而终止细胞组织的癌变过程,降低癌症的发生率;辣椒强烈的香味能刺激唾液和胃液的分泌,增加食欲,促进肠道蠕动,帮助消化;辣椒所含的辣椒素,能通过促进脂肪的新陈代谢,防治体内脂肪的堆积,有利于降脂减肥防病。医药专家认为,辣椒能缓解胸腹冷痛,制止痢疾,杀抑胃腹内寄生虫,控制心脏病及冠状动脉硬化;还能刺激口腔粘膜,引起胃的蠕动,促进唾液分泌,增强食欲,促进消化。辣味品因其具有杀菌、防腐、调味、营养、驱寒等功能,为人类防病、治病、改良基因、促进人类进化起到了积极作用。因此,在日常菜谱中加入一点辣椒,对身体的健康大有益处。姚可成《食物本草》:消宿食,解结气,开胃口,辟邪恶,杀腥气诸毒。
目前市场上存在的辣椒酱产品品种繁多,比如鸡肉辣椒酱、牛肉辣椒酱、豆瓣辣椒酱、蘑菇辣椒酱等,但还没有以干菜和花生米来制作辣椒,且多数辣椒酱都具有添加剂或防腐剂,长期食用不利于人体的健康。
发明内容
本发明的目的在于:针对上述存在的不足,本发明提供了一种干菜花生米辣椒酱。本发明的干菜花生米辣椒酱,香味诱人,口感独特,能刺激唾液和胃液分泌,改善人的食欲,可以治疗因受寒引起的胃口不好、腹胀腹痛,促进人体血液循环、散寒驱湿,无食品添加剂或防腐剂,食用安全。
为了实现上述目的,本发明采用的技术方案如下:
一种干菜花生米辣椒酱,原料中包括干菜和花生米,具体由以下重量份的原料制备而成:干菜160-200份、花生米100-140份、红辣椒90-130份、桂皮20-60份、陈皮10-30份、黄芪1-20份、枸杞子10-20份、茉莉花30-70份、金银花30-70份、菊花30-70份、薄荷15-50份、积雪草20-60份、植物油12-30份、大蒜1-15份及生姜1-15份。
进一步地,所述的干菜花生米辣椒酱,由以下重量份的原料制备而成:干菜170-190份、花生米110-130份、红辣椒100-120份、桂皮30-50份、陈皮15-25份、黄芪5-15份、枸杞子13-18份、茉莉花40-60份、金银花40-60份、菊花40-60份、薄荷28-37份、积雪草30-50份、植物油18-24份、大蒜5-10份及生姜5-10份。
进一步地,所述的干菜花生米辣椒酱,由以下重量份的原料制备而成:干菜180份、花生米120份、红辣椒110份、桂皮40份、陈皮20份、黄芪10份、枸杞子15份、茉莉花50份、金银花50份、菊花50份、薄荷33份、积雪草40份、植物油21份、大蒜7份及生姜8份。
进一步地,所述的植物油为花生油、大豆油、亚麻油、菜籽油、葵花籽油、芝麻油其中的一种或者两种,采用两种植物油混合时它们的比例为1:1。
进一步地,所述的干菜由新鲜的白菜、芥菜、豆角、卷心菜、竹笋经日晒后得到,不添加防腐剂或任何食品添加剂。
进一步地,所述的干菜花生米辣椒酱的制备方法,由以下工艺步骤组成:
(1)原材料预处理:干菜浸泡洗净后,且成10-20mm长的小段,得到干菜小段;花生米去杂、洗净,放入烘干机烘干后,用二分之一的植物油炸熟,得到熟花生米;红辣椒去蒂、去掉其他杂质洗净后,用搅碎机搅碎成8-12mm的辣椒泥;桂皮、陈皮、黄芪按重量份配比加入煮锅中进行煎煮,煎煮60-85min后常压过滤,得到中药滤液;茉莉花、金银花、菊花、薄荷、积雪草按重量份配比混合,粉碎至粒度为30-50目后,将物料放入超临界CO2萃取装置中萃取,得到萃取液;按重量份数称取大蒜和生姜,去皮、洗净后沥干表面水分,打碎成泥状,得到姜蒜泥;
(2)原料混合:将枸杞子及步骤(1)得到的干菜小段、熟花生米、姜蒜泥混合均匀,在搅拌状态下依次加入步骤(1)得到的萃取液、中药滤液,搅拌均匀,得到干菜花生米辣椒酱生料;
(3)煮熟:将剩下的植物油倒入锅中,油热后加入辣椒泥炒15-22min,加入步骤(2)得到的干菜花生米辣椒酱生料,继续炒30-50min,得到干菜花生米辣椒酱半成品;
(4)将步骤(3)所得的干菜花生米辣椒酱半成品按200±2g标准重量装入辣椒食品罐中,再经过微波杀菌,抽真空、封口,检验合格,即得干菜花生米辣椒酱成品。
进一步地,所述的干菜花生米辣椒酱的制备方法,在步骤(1)超临界萃取的工艺参数为:萃取温度为30-40℃,压力15-30MPa,时间2-6小时。
进一步地,所述的干菜花生米辣椒酱的制备方法,在步骤(4)微波杀菌温度为90-100℃,时间为100-160s,频率为2100-2500MHz,功率为3-9kw。
本发明中的干菜味甜,食用脱水蔬菜是可以摄取到充足的膳食纤维和矿物质,与普通蔬菜一样能促进肠道蠕动、改善便秘。
花生又名“长生果”、“泥豆”,拉丁学名Arachis hypogaea Linn.,果实含有蛋白质、脂肪、糖类、维生素A、维生素B6、维生素E、维生素K,以及矿物质钙、磷、铁等营养成分,含有8种人体所需的氨基酸及不饱和脂肪酸,含卵磷脂、胆碱、胡萝卜素、粗纤维等物质,具有抗老化性、凝血止血、促进发育、增强记忆的作用。
红辣椒是一年生或有限多年生茄科植物,拉丁文名:Capsicum annuum L.,别名:牛角椒、长辣椒、菜椒、灯笼椒,茄科、辣椒属一年或有限多年生草本植物。味辛、性热,能温中健胃,散寒燥湿,发汗。辣椒中维生素C的含量在蔬菜中是最多的,每百克辣椒维生素C含量高达198毫克,而且维生素C可以控制心脏病和冠状动脉硬化,降低胆固醇。此外,维生素B、胡萝卜素以及钙、铁等矿物质含量亦较丰富。
桂皮又称肉桂、官桂或香桂,是最早被人类使用的香料之一,学名:Cinnamomumtamala (Bauch.-Ham.) Nees et Eberm,广东民间叫“阴香”属樟科肉桂之一种。桂皮因含有挥发油而香气馥郁,可使肉类菜肴祛腥解腻,芳香可口,进而令人食欲大增。在日常饮食中适量添加桂皮,可能有助于预防或延缓因年老而引起的Ⅱ型糖尿病。据英国《新科学家》杂志报道:桂皮能够重新激活脂肪细胞对胰岛素的反应能力,大大加快葡萄糖的新陈代谢。桂皮含苯丙烯酸类化合物,对前列腺增生有治疗作用,而且能增加前列腺组织的血流量,促进局部组织血运的改善。中医认为,桂皮性热,味甘辛、气芳香、无毒,具有暧胃祛寒活血舒筋、通脉止痛和止泻的功能。
陈皮别称橘皮,味苦、辛,性温,用于脘腹胀满,食少吐泻,咳嗽痰多,《本草纲目》:疗呕哕反胃嘈杂,时吐清水。
黄芪:拉丁学名:Astragalus membranaceus (Fisch.) Bunge.,别名棉芪、黄耆、独椹、蜀脂、百本、百药棉、黄参、血参、人衔等,味甘性微温,食用方便,可煎汤,煎膏,浸酒,入菜肴等,黄芪的药用迄今已有2000多年的历史,能消除实验性肾炎蛋白尿,增强心肌收缩力,具有增强机体免疫功能、保肝、利尿、抗衰老、抗应激、降压和较广泛的抗菌作用。
枸杞子味甘、性平,归肝、肾经,学名:FRUCTUS LYCII,别名甜菜子、红耳坠、地骨子、地骨皮,含有丰富的胡萝卜素、多种维生素和钙、铁等健康眼睛的必需营养物质,故有明目之功,俗称“明眼子”。具有滋补肝肾、益精明目、抗衰老、抗疲劳、抗辐射损伤的功效,能调节血脂,提高视力和呼吸道抗病能力,历代医家治疗肝血不足、肾阴亏虚引起的视物昏花和夜盲症,常常使用枸杞子。
茉莉花别称茉莉、香魂、莫利花、没丽、没利、抹厉、末莉、末利、木梨花,拉丁文名:Jasminum sambac (L.) Ait,味辛、甘,性温,具有辛、甘、凉、清热解毒、利湿作用。《食物本草》:“主温脾胃,利胸隔。”《药性切用》:“功专辟秽治痢,虚人宜之。”
金银花又名忍冬,学名:Lonicera japonica,别名金银藤、银藤、二色花藤、二宝藤、右转藤、子风,性寒、味甘,《神农本草经》载:“金银花性寒味甘,具有清热解毒、凉血化淤之功效,主治外感风热、瘟病初起、疮疡疔毒、红肿热痛、便脓血”。具有清热解毒、抗炎、咽喉肿痛的作用。
菊花别称寿客、金英、黄华、秋菊、陶菊、日精、女华、延年、隐逸花,拉丁学名:Dendranthema morifolium(Ramat.) Tzvel,
菊花是中国十大名花第三,花中四君子(梅兰竹菊)之一,也是世界四大切花(菊花、月季、康乃馨、唐菖蒲)之一,产量居首。菊花能入药治病,久服或饮菊花茶能令人长寿。
薄荷,土名叫“银丹草”别称野薄荷、夜息香,为唇形科植物,拉丁学名:Menthahaplocalyx Briq。是中华常用中药之一,它是辛凉性发汗解热药,治流行性感冒、头疼、目赤、身热、咽喉、牙床肿痛等症。外用可治神经痛、皮肤瘙痒、皮疹和湿疹等。平常以薄荷代茶,清心明目。薄荷含有薄荷醇,该物质可清新口气并具有多种药性,可缓解腹痛、胆囊问题如痉挛,还具有防腐杀菌、利尿、化痰、健胃和助消化等功效。
积雪草别名十八缺、马蹄草、雷公根、崩大碗、铜钱草、蚶壳草、老虎草、落得打等,味苦、辛,性寒。积雪草中含有的甙能治疗皮肤溃疡,对中枢神经系统有镇静、安定作用,具有清热解毒,利湿消肿、滋补、消炎、镇定、抗菌消炎的作用。
植物油是由不饱和脂肪酸和甘油化合而成的化合物,广泛分布于自然界中,是从植物的果实、种子、胚芽中得到的油脂。如花生油、豆油、亚麻油、蓖麻油、菜子油等。植物油的主要成分是直链高级脂肪酸和甘油生成的酯,脂肪酸除软脂酸、硬脂酸和油酸外,还含有多种不饱和酸,如芥酸、桐油酸、蓖麻油酸等。植物油主要含有维生素E、K、钙、铁、磷、钾等矿物质、脂肪酸等。植物油中的脂肪酸能使皮肤滋润有光泽。
大蒜又叫蒜头、大蒜头、胡蒜、葫、独蒜、独头蒜,拉丁学名:Allium sativum L.,性温,味辛、甘,入脾、胃、肺经。具有温中消食、行滞气、暖脾胃、消积、解毒、杀虫的功效。解毒杀虫,消肿止痛,止泻止痢,治肺,驱虫,此外 还有温脾暖胃。治痈疽肿毒,白秃癣疮,痢疾泄泻,肺痨顿咳,蛔虫蛲虫,饮食积滞,脘腹冷痛,水肿胀满。
生姜Zingiber officinale Rosc.洗净后打烂,绞取其汁入药。味辛、性温,入肺、胃、脾经。有化痰、止呕的功效,主要用于恶心呕吐及咳嗽痰多等症。《食疗本草》说它“止逆,散烦闷,开胃气”。《本草拾遗》记载生姜“汁解毒药,破血调中,去冷除痰,开胃”。《本草从新》指出“姜汁,开痰,治噎膈反胃”。《遵生八笺》转载苏东坡诗日:"一斤生姜半斤枣,二两白盐二两草(甘草),丁香沉香各半两,叫两茴香一处捣,煎也好,点也好,红白容颜直到老。"
本发明的干菜花生米辣椒酱健康无毒,其生产、感官要求、理化指标、卫生指标方面均符合《辣椒酱》中华人民共和国农业行业标准(NY/T 1070-2006)的要求。
综上所述,本发明由于采用了上述方案,本发明具有以下积极效果:
(1)本发明的干菜花生米辣椒酱,加入了干菜和花生米,香味诱人,口感独特,具有辣椒酱独有的风味,工艺简单,制作方便,操作方便,有很好的市场前景和很高的生产价值。

(2)原料混合:将枸杞子及步骤(1)得到的干菜小段、熟花生米、姜蒜泥混合均匀,在搅拌状态下依次加入步骤(1)得到的萃取液、中药滤液,搅拌均匀,得到干菜花生米辣椒酱生料;
(3)煮熟:将剩下的植物油倒入锅中,油热后加入辣椒泥炒22min,加入步骤(2)得到的干菜花生米辣椒酱生料,继续炒50min,得到干菜花生米辣椒酱半成品;
(4)将步骤(3)所得的干菜花生米辣椒酱半成品按200±2g标准重量装入辣椒食品罐中,再经过温度为100℃、时间为160s、频率为2500MHz、功率为9kw的微波进行杀菌,抽真空、封口,检验合格,即得干菜花生米辣椒酱成品。
实施例3
一种干菜花生米辣椒酱,由以下重量份的原料制备而成:干菜170份、花生米110份、红辣椒100份、桂皮30份、陈皮15份、黄芪5份、枸杞子13份、茉莉花40份、金银花40份、菊花40份、薄荷28份、积雪草30份、植物油18份、大蒜5份及生姜5份。

(2)原料混合:将枸杞子及步骤(1)得到的干菜小段、熟花生米、姜蒜泥混合均匀,在搅拌状态下依次加入步骤(1)得到的萃取液、中药滤液,搅拌均匀,得到干菜花生米辣椒酱生料;
(3)煮熟:将剩下的植物油倒入锅中,油热后加入辣椒泥炒17min,加入步骤(2)得到的干菜花生米辣椒酱生料,继续炒35min,得到干菜花生米辣椒酱半成品;
(4)将步骤(3)所得的干菜花生米辣椒酱半成品按200±2g标准重量装入辣椒食品罐中,再经过温度为93℃、时间为120s、频率为2200MHz、功率为5kw的微波进行杀菌,抽真空、封口,检验合格,即得干菜花生米辣椒酱成品。
实施例4
一种干菜花生米辣椒酱,由以下重量份的原料制备而成:干菜190份、花生米130份、红辣椒120份、桂皮50份、陈皮25份、黄芪15份、枸杞子18份、茉莉花60份、金银花60份、菊花60份、薄荷37份、积雪草50份、植物油24份、大蒜10份及生姜10份。

上述所述的干菜花生米辣椒酱的制备方法,由以下工艺步骤组成:
(1)原材料预处理:干菜浸泡洗净后,且成17mm长的小段,得到干菜小段;花生米去杂、洗净,放入烘干机烘干后,用二分之一的植物油炸熟,得到熟花生米;红辣椒去蒂、去掉其他杂质洗净后,用搅碎机搅碎成11mm的辣椒泥;桂皮、陈皮、黄芪按重量份配比加入煮锅中进行煎煮,煎煮75min后常压过滤,得到中药滤液;茉莉花、金银花、菊花、薄荷、积雪草按重量份配比混合,粉碎至粒度为45目后,将物料放入超临界CO2萃取装置中萃取,萃取温度为37℃、压力25MPa、时间5小时,得到萃取液;按重量份数称取大蒜和生姜,去皮、洗净后沥干表面水分,打碎成泥状,得到姜蒜泥;
(2)原料混合:将枸杞子及步骤(1)得到的干菜小段、熟花生米、姜蒜泥混合均匀,在搅拌状态下依次加入步骤(1)得到的萃取液、中药滤液,搅拌均匀,得到干菜花生米辣椒酱生料;
(3)煮熟:将剩下的植物油倒入锅中,油热后加入辣椒泥炒20min,加入步骤(2)得到的干菜花生米辣椒酱生料,继续炒45min,得到干菜花生米辣椒酱半成品;
(4)将步骤(3)所得的干菜花生米辣椒酱半成品按200±2g标准重量装入辣椒食品罐中,再经过温度为97℃、时间为140s、频率为2400MHz、功率为7kw的微波进行杀菌,抽真空、封口,检验合格,即得干菜花生米辣椒酱成品。
实施例5
一种干菜花生米辣椒酱,由以下重量份的原料制备而成:干菜180份、花生米120份、红辣椒110份、桂皮40份、陈皮20份、黄芪10份、枸杞子15份、茉莉花50份、金银花50份、菊花50份、薄荷33份、积雪草40份、植物油21份、大蒜7份及生姜8份。

(2)原料混合:将枸杞子及步骤(1)得到的干菜小段、熟花生米、姜蒜泥混合均匀,在搅拌状态下依次加入步骤(1)得到的萃取液、中药滤液,搅拌均匀,得到干菜花生米辣椒酱生料;
(3)煮熟:将剩下的植物油倒入锅中,油热后加入辣椒泥炒18min,加入步骤(2)得到的干菜花生米辣椒酱生料,继续炒40min,得到干菜花生米辣椒酱半成品;
(4)将步骤(3)所得的干菜花生米辣椒酱半成品按200±2g标准重量装入辣椒食品罐中,再经过温度为95℃、时间为130s、频率为2300MHz、功率为6kw的微波进行杀菌,抽真空、封口,检验合格,即得干菜花生米辣椒酱成品。
为了更好的说明本发明的干菜花生米辣椒酱无毒,具有健脾养胃的优点,做以下实验。
1、毒性试验
选取20只小白鼠,体征相当,雌雄均等,随机分成两组,每组10只。其中一组为正常量试验组,另外一组为超常量试验组。正常量试验组用量为2mg/10g,超量试验组用量为4mg/10g,每日早晚各一次,连服一周,每天观察服用后反应。结果表明:各组小鼠行为无异常,无呆滞、活动减少等中毒症状,食量、粪便均无异常,一般体征良好,表明本发明的干菜花生米辣椒酱安全、无毒副作用。
2、应用实例
(1)李女士,28岁,体质虚弱,1年前出现冬天外出受寒就没胃口、偶有腹胀腹痛症状,近段时间未使用健胃药物,经食用本发明的干菜花生米辣椒酱,每天当早午晚餐食用,食用6周后,现在受寒也会有胃口了,其本人自觉睡眠情况明显好转。
(2)周某,男,47岁,半年前出现腹胀腹痛症状,近段时间未使用任何健胃药物,经食用本发明的干菜花生米辣椒酱,每天当早午晚餐食用,食用6周后,现在腹痛症状没有了,其本人自觉腹胀腹痛情况明显好转。
(3)吕某,女,37岁,两年前出现冷天手脚冰凉、热天手心冒汗症状,近段时间未使用任何散寒驱湿药物,去年冬天经食用本发明的干菜花生米辣椒酱,每天当早午晚餐食用,食用8周后,其本人自觉手心冒汗、手脚冰凉情况明显好转。
综上所述,本发明的干菜花生米辣椒酱,香味诱人,口感独特,能刺激唾液和胃液分泌,改善人的食欲,可以治疗因受寒引起的胃口不好、腹胀腹痛,促进人体血液循环、散寒驱湿,无食品添加剂或防腐剂,食用安全。
对于本领域技术人员而言,显然本发明不限于上述示范性实施例的细节,而且在没有背离本发明的精神或基本特征的情况下,能够以其他的具体形式实现本发明。因此,无论从哪一点来看,均应将实施例看作是示范性的,而且是非限制性的,本发明的范围由所附权利要求而不是上述说明限定,因此旨在将落在权利要求的等同腰间的含义和范围内的所有变化囊括在本发明内。
Claims (8)
1.一种干菜花生米辣椒酱,原料中包括干菜和花生米,其特征在于,具体由以下重量份的原料制备而成:干菜160-200份、花生米100-140份、红辣椒90-130份、桂皮20-60份、陈皮10-30份、黄芪1-20份、枸杞子10-20份、茉莉花30-70份、金银花30-70份、菊花30-70份、薄荷15-50份、积雪草20-60份、植物油12-30份、大蒜1-15份及生姜1-15份。
2.根据权利要求1所述的干菜花生米辣椒酱,其特征在于,由以下重量份的原料制备而成:干菜170-190份、花生米110-130份、红辣椒100-120份、桂皮30-50份、陈皮15-25份、黄芪5-15份、枸杞子13-18份、茉莉花40-60份、金银花40-60份、菊花40-60份、薄荷28-37份、积雪草30-50份、植物油18-24份、大蒜5-10份及生姜5-10份。
3.根据权利要求1所述的干菜花生米辣椒酱,其特征在于,由以下重量份的原料制备而成:干菜180份、花生米120份、红辣椒110份、桂皮40份、陈皮20份、黄芪10份、枸杞子15份、茉莉花50份、金银花50份、菊花50份、薄荷33份、积雪草40份、植物油21份、大蒜7份及生姜8份。
4.根据权利要求1至3任一项所述的干菜花生米辣椒酱,其特征在于:所述的植物油为花生油、大豆油、亚麻油、菜籽油、葵花籽油、芝麻油其中的一种或者两种,采用两种植物油混合时它们的比例为1:1。
5.根据权利要求4所述的干菜花生米辣椒酱,其特征在于:所述的干菜由新鲜的白菜、芥菜、豆角、卷心菜、竹笋经日晒后得到,不添加防腐剂或任何食品添加剂。
6.根据权利要求5所述的干菜花生米辣椒酱的制备方法,其特征在于,由以下工艺步骤组成:
(1)原材料预处理:干菜浸泡洗净后,且成10-20mm长的小段,得到干菜小段;花生米去杂、洗净,放入烘干机烘干后,用二分之一的植物油炸熟,得到熟花生米;红辣椒去蒂、去掉其他杂质洗净后,用搅碎机搅碎成8-12mm的辣椒泥;桂皮、陈皮、黄芪按重量份配比加入煮锅中进行煎煮,煎煮60-85min后常压过滤,得到中药滤液;茉莉花、金银花、菊花、薄荷、积雪草按重量份配比混合,粉碎至粒度为30-50目后,将物料放入超临界CO2萃取装置中萃取,得到萃取液;按重量份数称取大蒜和生姜,去皮、洗净后沥干表面水分,打碎成泥状,得到姜蒜泥;
(2)原料混合:将枸杞子及步骤(1)得到的干菜小段、熟花生米、姜蒜泥混合均匀,在搅拌状态下依次加入步骤(1)得到的萃取液、中药滤液,搅拌均匀,得到干菜花生米辣椒酱生料;
(3)煮熟:将剩下的植物油倒入锅中,油热后加入辣椒泥炒15-22min,加入步骤(2)得到的干菜花生米辣椒酱生料,继续炒30-50min,得到干菜花生米辣椒酱半成品;
(4)将步骤(3)所得的干菜花生米辣椒酱半成品按200±2g标准重量装入辣椒食品罐中,再经过微波杀菌,抽真空、封口,检验合格,即得干菜花生米辣椒酱成品。
7.根据权利要求6所述的干菜花生米辣椒酱的制备方法,其特征在于:在步骤(1)超临界萃取的工艺参数为:萃取温度为30-40℃,压力15-30MPa,时间2-6小时。
8.根据权利要求6所述的干菜花生米辣椒酱的制备方法,其特征在于:在步骤(4)微波杀菌温度为90-100℃,时间为100-160s,频率为2100-2500MHz,功率为3-9kw。
