本发明公开了一种铁皮石斛保健饮料及其制备方法,该保健饮料组份包括铁皮石斛、红枣、西洋参、甜叶菊、乌灵参、虎皮草、金银花、甘草、桔梗、白砂糖、食品营养强化剂、阿拉伯胶、水等。首先将铁皮石斛、洗净,晾干、破碎、离心,制得铁皮石斛提取液;取红枣,洗净、晾干、切片、煎煮、冷却、过滤,制得红枣提取液;取西洋参、甜叶菊、乌灵参、虎皮草、金银花、甘草、桔梗,洗净、晾干,混合、煎煮,过滤,制得中草药提取液;再将铁皮石斛提取液、红枣提取液、中草药提取液混合,添加白砂糖、食品营养强化剂、阿拉伯胶,均质处理后装罐、杀菌,即可产品。本饮料不含色素添加剂、营养丰富,保健效果好,且工艺简单,适合大规模工业生产。

本发明属于保健饮料加工领域,具体涉及一种利用铁皮石斛制备的保健饮料及其制备方法。
背景技术
随着社会经济的发展、人们对健康日益关注,对饮料的要求也在逐渐升高,尤其是在口味、营养以及具有特殊养生保健功能方面越来越受到消费者的青睐。
铁皮石斛为兰科多年生附生草本植物,主要分布于我国安徽、浙江、福建、云南等地。具有益胃生津,滋阴清热的功能,用于热病津伤,口干烦渴,胃阴不足,食少干呕,病后虚热不退,阴虚火旺,骨蒸劳热,目暗不明,筋骨痿软(中华人民共和国药典2010年版第一部,265-266)。现代研究表明,铁皮石斛有效成分主要为石斛碱、石斛多糖、氨基酸、酚类、挥发油等,具有促消化,抗风湿,抗肿瘤,降低血糖血脂,抗疲劳,增强免疫等作用。目前铁皮石斛成品工艺大部分停留在将嫩茎扭成螺旋状或弹簧状,晒干,商品为枫斗存储,枫斗再加工必须通过高温,破坏铁皮石斛有益成分。
目前中药饮料也存在一些问题,化学添加剂过多,副作用明显、因此,有必要开发一种药效明确、工艺合理、化学添加剂少的中药保健饮料。
发明内容
本发明的目的是提供一种铁皮石斛保健饮料,该铁皮石斛保健饮料按重量计包括如下组分:铁皮石斛20-30份、红枣5-10份、西洋参1-3份、甜叶菊1-3份、乌灵参1-3份、虎皮草1-2份、金银花1-2份、甘草1-2份、桔梗1-2份、白砂糖0.5-1份、食品营养强化剂1-2份、阿拉伯胶0.5-1份、余量为水。
所述的食品营养强化剂是为增强营养成分而加入食品中的天然的属于天然营养素范围的食品添加剂,可以改善食品感官性状,提高营养价值,且毒副作用极小,不会对人体产生危害作用,包括但不限于氨基酸及含氮化合物、维生素类、不饱和脂肪酸、低聚糖、膳食纤维等。优选所述的食品营养强化剂由如下重量配比的组分组成:维生素E 30-40%,低聚异麦芽糖30-40%,木糖醇30-40%。
本发明还公开了上述铁皮石斛保健饮料的制备方法,其制备方法包括如下步骤:
(1)取铁皮石斛,将其洗净,晾干水分,切成小节;
(2)将小节状铁皮石斛与4-6倍重量的纯净水一起装入破碎机或打汁机内进行破碎,得铁皮石斛液体混合物;
(3)离心铁皮石斛液体混合物,收集上清液,得铁皮石斛提取液,备用;
(4)取红枣洗净、充分晾干,再切片,将片状红枣加入到4-5倍的100℃的纯净水中煎煮,煎煮60-120min,煎煮完成后带水温自然冷却至30-40℃时,过滤去除滤渣,得红枣提取液,备用;
(5)取西洋参、甜叶菊、乌灵参、虎皮草、金银花、甘草、桔梗分别洗净、充分晾干,再一起混合,用3-5倍的纯净水在80-90℃温度下煎煮,煎煮200-300min,煎煮完成后带水温自然冷却至30-40℃时,过滤去除滤渣,得中草药提取液,备用;
(6)将步骤(3)制备的铁皮石斛提取液、步骤(4)制备的红枣提取液、步骤(5)制备的中草药提取液混合,再添加白砂糖、食品营养强化剂、阿拉伯胶,得铁皮石斛混合液;
(7)将制备的铁皮石斛混合液均质处理;
(8)装罐后在80-90℃下杀菌30-60min,即可。
作为本发明的一种优选技术方案,该铁皮石斛保健饮料的制备步骤(3)中,所述离心处理是经3000-5000rpm的条件下离心5-10min。
作为本发明的一种优选技术方案,该铁皮石斛保健饮料的制备步骤(7)中,均质处理是将混合液用高压均质机20-30MPa均质两次,均质后用真空脱气机在700-800mmHg压力下脱气至无泡沫产生。
与现有技术相比,本发明的技术效果体现在:
(1)本发明组方科学合理,铁皮石斛补充体内血、精、津液等物质,调节人体阴阳平衡;红枣具有健脾益胃、补气养血、缓和药性等功效;西洋参、甜叶菊、乌灵参、虎皮草、金银花、甘草、桔梗等中草药对身体具有清热解毒、生津润燥、益气止渴、提神功能,其复合制备的饮料,通过补气、补肾、补脾、调节阴阳,多味药相辅相成,达到增强保健效果;
(2)本发明的铁皮石斛饮料不含其他色素添加剂、营养丰富,富含植物多糖;
(3)该生产工艺简单,适合大规模工业化生产。

取铁皮石斛300g,将其洗净,晾干水分,切成小节,将小节状铁皮石斛与4倍重量的纯净水一起装入破碎机或打汁机内进行破碎,得铁皮石斛液体混合物,经3000rpm的条件下离心5min,收集上清液,得铁皮石斛提取液,备用;再取50g红枣洗净、充分晾干,再切片,将片状红枣加入到4倍的100℃的纯净水中煎煮,煎煮60min,煎煮完成后带水温自然冷却至30℃时,过滤去除滤渣,得红枣提取液,备用;取10g西洋参、10g甜叶菊、10g乌灵参、10g虎皮草、10g金银花、10g甘草、10g桔梗,分别洗净、充分晾干,再一起混合,用3倍的纯净水在80℃温度下煎煮,煎煮200min,煎煮完成后带水温自然冷却至30℃时,过滤去除滤渣,得中草药提取液,备用;再将制备的铁皮石斛提取液、红枣提取液、中草药提取液混合,再添加5g白砂糖、10g食品营养强化剂(维生素E 30%,低聚异麦芽糖40%,木糖醇30%)、5g阿拉伯胶,得铁皮石斛混合液,将制备的铁皮石斛混合液用高压均质机20MPa均质两次,均质后用真空脱气机在700mmHg压力下脱气至无泡沫产生,最后装罐后在80℃下杀菌30min,即可。
实施例二:
取铁皮石斛400g,将其洗净,晾干水分,切成小节,将小节状铁皮石斛与5倍重量的纯净水一起装入破碎机或打汁机内进行破碎,得铁皮石斛液体混合物,经4000rpm的条件下离心8min,收集上清液,得铁皮石斛提取液,备用;再取75g红枣洗净、充分晾干,再切片,将片状红枣加入到4.5倍的100℃的纯净水中煎煮,煎煮90min,煎煮完成后带水温自然冷却至35℃时,过滤去除滤渣,得红枣提取液,备用;取20g西洋参、20g甜叶菊、20g乌灵参、15g虎皮草、15g金银花、15g甘草、15g桔梗,分别洗净、充分晾干,再一起混合,用4倍的纯净水在85℃温度下煎煮,煎煮250min,煎煮完成后带水温自然冷却至35℃时,过滤去除滤渣,得中草药提取液,备用;再将制备的铁皮石斛提取液、红枣提取液、中草药提取液混合,再添加7.5g白砂糖、15g食品营养强化剂(维生素E 40%,低聚异麦芽糖30%,木糖醇30%)、7.5g阿拉伯胶,得铁皮石斛混合液,将制备的铁皮石斛混合液用高压均质机25MPa均质两次,均质后用真空脱气机在750mmHg压力下脱气至无泡沫产生,最后装罐后在85℃下杀菌45min,即可。
实施例三:
取铁皮石斛5000g,将其洗净,晾干水分,切成小节,将小节状铁皮石斛与6倍重量的纯净水一起装入破碎机或打汁机内进行破碎,得铁皮石斛液体混合物,经5000rpm的条件下离心10min,收集上清液,得铁皮石斛提取液,备用;再取1000g红枣洗净、充分晾干,再切片,将片状红枣加入到5倍的100℃的纯净水中煎煮,煎煮120min,煎煮完成后带水温自然冷却至40℃时,过滤去除滤渣,得红枣提取液,备用;取300g西洋参、300g甜叶菊、300g乌灵参、200g虎皮草、200g金银花、200g甘草、200g桔梗,分别洗净、充分晾干,再一起混合,用5倍的纯净水在90℃温度下煎煮,煎煮300min,煎煮完成后带水温自然冷却至40℃时,过滤去除滤渣,得中草药提取液,备用;再将制备的铁皮石斛提取液、红枣提取液、中草药提取液混合,再添加100g白砂糖、200g食品营养强化剂(维生素E 30%,低聚异麦芽糖30%,木糖醇40%)、100g阿拉伯胶,得铁皮石斛混合液,将制备的铁皮石斛混合液用高压均质机30MPa均质两次,均质后用真空脱气机在800mmHg压力下脱气至无泡沫产生,最后装罐后在90℃下杀菌60min,即可。
以下举几个典型例子进一步说明。
1.王××,45岁,患高血脂,贺州市八步区莲塘镇人,饮用本发明制作的饮料6个月,血脂基本恢复正常。
2.何×,55岁,体质弱,易产生疲劳感。饮用本发明制作的饮料5个月后,明显好转,精神倍增。

Claims (7)
1.一种铁皮石斛保健饮料,其特征在于,该铁皮石斛保健饮料按重量计包括如下组分:铁皮石斛20-30份、红枣5-10份、西洋参1-3份、甜叶菊1-3份、乌灵参1-3份、虎皮草1-2份、金银花1-2份、甘草1-2份、桔梗1-2份、白砂糖0.5-1份、食品营养强化剂1-2份、阿拉伯胶0.5-1份、余量为水。
2.一种如权利要求1所述的铁皮石斛保健饮料,其特征在于,该铁皮石斛保健饮料按重量计包括如下组分:铁皮石斛25份、红枣7.5份、西洋参2份、甜叶菊2份、乌灵参2份、虎皮草1.5份、金银花1.5份、甘草1.5份、桔梗1.5份、白砂糖0.75份、食品营养强化剂1.5份、阿拉伯胶0.75份、余量为水。
3.一种如权利要求1或2所述的铁皮石斛保健饮料,其特征在于,所述食品营养强化剂是为增强营养成分而加入食品中的天然的属于天然营养素范围的食品添加剂,可以改善食品感官性状,提高营养价值,且毒副作用极小,不会对人体产生危害作用,包括但不限于氨基酸及含氮化合物、维生素类、不饱和脂肪酸、低聚糖、膳食纤维等。
4.一种如权利要求3所述的铁皮石斛保健饮料,其特征在于,所述食品营养强化剂由如下重量配比的组分组成:维生素E 30-40%,低聚异麦芽糖30-40%,木糖醇30-40%。
5.一种铁皮石斛保健饮料的制备方法,其特征在于,该制备方法包括如下步骤:
(1)取铁皮石斛,将其洗净,晾干水分,切成小节;
(2)将小节状铁皮石斛与4-6倍重量的纯净水一起装入破碎机或打汁机内进行破碎,得铁皮石斛液体混合物;
(3)离心铁皮石斛液体混合物,收集上清液,得铁皮石斛提取液,备用;
(4)取红枣洗净、充分晾干,再切片,将片状红枣加入到4-5倍的100℃的纯净水中煎煮,煎煮60-120min,煎煮完成后带水温自然冷却至30-40℃时,过滤去除滤渣,得红枣提取液,备用;
(5)取西洋参、甜叶菊、乌灵参、虎皮草、金银花、甘草、桔梗分别洗净、充分晾干,再一起混合,用3-5倍的纯净水在80-90℃温度下煎煮,煎煮200-300min,煎煮完成后带水温自然冷却至30-40℃时,过滤去除滤渣,得中草药提取液,备用;
(6)将步骤(3)制备的铁皮石斛提取液、步骤(4)制备的红枣提取液、步骤(5)制备的中草药提取液混合,再添加白砂糖、食品营养强化剂、阿拉伯胶,得铁皮石斛混合液;
(7)将制备的铁皮石斛混合液均质处理;
(8)装罐后在80-90℃下杀菌30-60min,即可。
6.一种如权利要求5所述的铁皮石斛保健饮料的制备方法,其特征在于,所述的铁皮石斛保健饮料的制备步骤(3)中,所述离心处理是经3000-5000rpm的条件下离心5-10min。
7.一种如权利要求5所述的铁皮石斛保健饮料的制备方法,其特征在于,所述的铁皮石斛保健饮料的制备步骤(7)中,均质处理是将混合液用高压均质机20-30MPa均质两次,均质后用真空脱气机在700-800mmHg压力下脱气至无泡沫产生。
