市面上提供各种含有各种健康成分的饮料。在当代社会,一直努力通过提供具有高附加值的食品和饮料来增强营养,该高附加值由饮料内容物中所包括的各种形式的对人体有益的成分提供。这样,可以满足消费者实现更好的体形和肌肉张力、过上充实生活、心情愉悦以及预防性增强健康的需求。在内容物中包括水解胶原蛋白的饮料可以方便且易于饮用的形式提供。这些饮料中的胶原蛋白可为体内有价值的蛋白质的来源,这些胶原蛋白可以高度且完全的同化性来表征。同时,当在饮料中添加胶原蛋白时,其结合了每天摄入的待刺激的流体的优势,这通常是所推荐的最健康的饮食的基础。足够的流体摄入对于许多具有特殊和更多流体需求的人群而言是极其重要的,例如现役运动员或其工作和生活具有高体力活动或精神压力的人。额外摄入的水解胶原蛋白是人们日常营养的宝贵来源。同样,胶原蛋白提供了一组完整的在人体中合成胶原蛋白基质所需的全部氨基酸。这对于活跃的人、老人、孕妇和哺乳期妇女、接受美容手术的人等尤为重要。

美国专利公开第2010/0316768号和国际专利公开第WO2004023899号公开了用于人/动物的耐储存的即用型水样组合物;作为纤维-水和/或安全饮用水的助剂,直接饮用,管饲,或用于食品/饮料的制备/冲调。这些公开内容教导了具有附加输送体系的强化纤维-水,所述附加输送体系是具有不同尺寸、形状、材料、颜色并且不可见的包囊/颗粒,其提供一种或多种功能:改善的味道、掩味性、控释应用、活性物质的生物利用度;避免了吸湿性;使相互作用最小化;改善了热、氧化和保质期以及装饰性。

各种方法和溶液在本领域中是已知的。然而,它们实质上不同于本公开。其它发明未能解决本公开所教导的所有问题,即具有胶原蛋白有益性质的饮料。
发明内容
本发明涉及具有水和浓度范围为约.001克/升至8.44克/升的胶原蛋白的饮料,其中所述胶原蛋白是经水解的。所述胶原蛋白浓度范围可介于1毫克/升至约8440毫克/升或1ppm至约8440ppm。所述水解胶原蛋白具有胶原蛋白肽。所述胶原蛋白肽通过多种胶原蛋白源的水解而产生。所述多种胶原蛋白源源自动物原材料、非有机或有机农场饲养的动物、来自不同动物物种的动物及所述动物屠体的不同部分中的至少一种。水可由自来水、泉水或矿泉水以及冰山水或冰川水中的至少一种组成。所述饮料可以是碳酸化的或非碳酸化的。

本发明涉及包含功能成分水解胶原蛋白的饮料,其浓度为:0.001g/L至8.44g/L,也可以表示为:1ppm至8440ppm。关于即用型饮料或关于按规定比例向制备的粉末或液体形式的浓缩物中添加额外的水稀释之后所获得的饮料,应核查饮料中的水解胶原蛋白的这种浓度。功能成分水解胶原蛋白,也称为胶原蛋白肽,是通过在受控条件下对原材料诸如来自各种动物来源的胶原蛋白源进行水解而产生的。
含水解胶原蛋白的饮料特征在于具有很大的多样性,这取决于它们可包括的其它组合成分。饮料可仅含水解胶原蛋白和水。
用于制备饮料的水可以是自来水或泉水或矿泉水或由冰山(冰川)获得的水。使用自来水时,自来水应由中央供水系统强制提供或是提取的地下水,或提取自天然或人工建造的池塘。另外,出于预防目的或在需要的情况下,水可以通过适当医疗机构批准的另外纯化或加工方法另外纯化或加工:此类方法的实例为:
-通过过滤系统进行机械过滤,
-通过化学活性过滤器过滤来分离不必要的铁(Fe)和锰(Mn)的盐,
-通过超滤-使用超滤(反渗透系统)来降低总矿化度;
-通过在离子交换过滤器系统中过滤来降低总矿化度,
-通过水的蒸馏(蒸发和进一步冷凝)来降低总矿化度,
-通过UV过滤器(UV灯)去污,
-通过使用化学加工剂如氯气(Cl2)、二氧化氯(C1O2)、臭氧(O3)、活性氧(O2)等去污。
另外,用于饮料的水可通过添加二氧化碳-CO2来另外碳酸化。所添加的二氧化碳的量可达到7.0个体积单位(7.0v/v)。在最常见的饮料组合中,该量通常可在0.5和5.0v/v之间变化。
可用稳定性防腐剂制备含水解胶原蛋白的饮料。所用防腐剂应被允许用于该类饮料。分别地,防腐剂可以是溶解在产品中并且仅为其含量的一部分的化学物质(如山梨酸钾[E202]、苯甲酸钠[E211]等)或者可以是用于制备该产品,但随后溶于其它成分的化学活性物质(如二甲基二碳酸盐[E242])。
可以不用任何防腐剂制备含水解胶原蛋白的饮料并且它们在所述情况下的稳定通过应用适当的技术制备方法来确保。此类方法例如:
-与“清洁灌装”组合对产品进行巴氏灭菌且随后储存在冷藏条件下,
-通过UHT-灭菌对产品进行巴氏灭菌,接着对产品进行无菌灌装(在无菌环境下灌装);
-对产品进行巴氏灭菌,接着对产品进行热灌装,
-灌装产品并进一步进行隧道式巴氏灭菌,确保达到产品的商业无菌性;
-对产品进行巴氏灭菌并在包装产品时使用特殊的纳米材料,结合进一步储存在冷藏条件下。
在灌装饮料的过程中,无论是添加防腐剂还是不加防腐剂来制备饮料,在灌装之前、灌装期间或之后都可以使用包装气体并添加在包装中。包装气体是不同于空气的气体,并且是惰性气体如:氮气[E941]、二氧化碳[E290]、氦气[E939]等。为了保护产品免受诸如氧化、味道、香味和外观变化等不利过程,在灌装过程中添加这些气体。这些气体有助于确保产品的保质期,同时有助于保持所加营养素的品质。
关于现成产品的外观,含水解胶原蛋白的饮料可以是无色或有色的、澄清或浑浊的并且在底部可含较大颗粒的细微沉淀和/或在液体中具有均匀分散的颗粒。它们可以是平稳的流体或是碳酸化的。
在含有水解胶原蛋白的可能有色的其它饮料中,可添加各种着色剂,如来自植物或动物来源的合成或有机着色剂,或者可来自各种水果和/或蔬菜浓缩物、蔬菜提取物。可允许分类为具有E编号的添加剂的所加着色剂可被允许用于饮料中。所用着色剂的确切量将根据所用试剂和成品中所需的强烈度而变化。通常,若利用,则按组合物的重量或体积计,着色剂应以约0.0001%至约0.5%、约0.001%至约0.1%或约0.003%至约0.2%的水平存在。某些制剂将不会有添加的着色剂。
可以通过添加各种甜味剂或几种甜味剂的混合物来制备不甜或变甜的含水解胶原蛋白的饮料。
使本饮料变甜可通过添加甜味剂来进行,大多数甜味剂是低热量甜味剂。可以使用液态或硬质甜味剂,如晶体或颗粒。甜味剂的实例包括:
-呈液体形式的是多元醇:山梨糖醇(E420)、木糖醇[E967]、甘露糖醇[E421]、麦芽糖醇[E965]等,
-呈硬质形式的是:阿斯巴甜(Aspartame)[E951]、环磺酸盐[E952]、纽甜[E961]、安赛蜜K[E950]等,
使饮料变甜可通过添加各种类型的源自天然来源的糖来进行。这些糖可以分别地未精制或不同程度地精制。此类糖的实例为:精制白糖、未精制或部分精制的糖、蜂蜜、果糖、葡萄糖、葡萄糖-果糖糖浆、源自水果的糖浆、植物提取物。
本发明饮料的所需甜度可根据°Bx=1.0÷16.0(白利糖度单位)变化或在使用人工或天然低热量甜味剂的情况下,对于即饮型饮料而言,所需甜味强烈度应匹配°Bx=1.0÷16.0的当量。一个白利糖度单位(°Bx)对应于1%糖水溶液,即每100ml水1.0g糖。
为了调节酸度和/或给予含水解胶原蛋白的饮料酸味,可添加果汁或果汁浓缩物。这些果汁可具有酸味、酸度调节添加剂或E编号添加,如柠檬酸[E330]、磷酸[E338]、磷酸盐[E339;E340;E341;E343]、柠檬酸盐[E331;E332;E333]等。本发明的含水解胶原蛋白的饮料的优选实施方案的可滴定酸度可以是0.01%w/v至约0.85%w/v、约0.1%w/v至约0.45%w/v、0.12%w/v至约0.35%w/v范围内的值、或这些范围内的任何范围或单个值。
对于含水解胶原蛋白的饮料,可添加其它成分如:增稠剂和/或稳定剂。增稠剂是增加食品粘度的物质。稳定剂是使得可能维持食品的理化状态的物质。稳定剂包括使得维持食品中的两种或更多种不混溶物质均匀分散成为可能的物质。稳定性物质保持或加强食品的现有颜色并且所述物质通过在蛋白质间形成交联而增加食物的结合能力。用作增稠剂和稳定剂的成分的实例是以下物质:阿拉伯树胶[E414]、瓜尔豆胶[E412]、角叉菜胶[E407]、果胶[E440]等。
为增强和改变本发明的含水解胶原蛋白的饮料的味道强烈度,可添加诸如风味增强剂等成分。这些是增强食品的现有味道和/或气味的物质。例如:谷氨酸[E620]、鸟苷酸[E626]、肌苷酸[E630]等。为了增加口味,可向本发明的饮料中添加有机物。此类有机物包括,例如:食言、植物、水果、种子的提取物和酊剂、酵母提取物等。

为向本发明的饮料提供风味,可添加香料以及具有调味性质的成分。本文公开的含水解胶原蛋白的饮料可任选地含有一种或多种调味剂或风味组合物。例如,天然和/或合成的水果调味剂、植物调味剂、其它调味剂及其混合物。所添加的浓缩香料可提取自天然来源,如:水果、食物、植物部分、烟等,但也可由经批准随食品一起使用的合成调味剂组成。为增加本发明饮料的风味,可添加具有调味性质的成分如具有浓郁香气的香草和香料提取物、水果提取物和水果浓缩物。

可向本发明的饮料中添加具有增强其营养价值的用途的维生素和矿物质。维生素包括但不限于维生素A、维生素D、维生素E、维生素K、维生素C、硫胺(维生素B1)、核黄素(维生素B2)、烟酸(维生素B3)、维生素B6、叶酸(维生素B9)、维生素B12、生物素(维生素B7)、泛酸(维生素B5)。矿物质包括但不限于钾(K)、氯(Cl)、钙(Ca)、磷(P)、镁(Mg)、铁(Fe)、锌(Zn)、铜(Cu)、锰(Mn)、氟(F)、硒(Se)、铬(Cr)、钼(Mo)、碘(I)。补充物通常以在良好生产规范下普遍接受的量存在并且通常以介于约7.5%至约100%RDV的量存在,其中此RDV是确立的。但是可以约101%至约150%RDV、约120%至约200%RDV、约150%至约300%RDV、约200%至约500%RDV的水平存在。

使饮料富含维生素和矿物质可以用有机维生素和矿物质源来进行。例如此类维生素为:针叶樱桃提取物、蔷薇果提取物等,作为所用有机矿物质源的可以是:海水有机浓缩物、海藻、蛋壳提取物等。维生素和矿物质的使用可以根据对于维生素和矿物质所确定的每日推荐值(RDV)变化到100%且超过100%。
本发明含水解胶原蛋白的饮料可通过添加适当的电解质来制备,该饮料通常被分类为转用饮料类别,如:等渗运动饮料、高渗运动饮料和低渗运动饮料。
可向本发明的饮料中添加额外氨基酸。额外富集氨基酸可通过添加呈其L-形式的氨基酸来进行。例如L-谷氨酰胺、L-异亮氨酸、L-亮氨酸、L-缬氨酸、L-牛磺酸等可添加到本发明的饮料中。另外,氨基酸可作为单独的氨基酸以及与其它氨基酸呈组合添加。
可向本发明的含水解胶原蛋白的饮料中添加不同于胶原蛋白的其它类型的蛋白质。这些蛋白质可以是具有更高或更低分子量的水解蛋白。为了额外富集,可向本发明添加其它蛋白质,如来自于蔬菜的蛋白质以及动物来源的蛋白质。例如,可向本发明的饮料中添加来自大豆、豌豆、乳、蛋等的蛋白质。
在添加其它类型的蛋白质和/或蛋白质水解物的情况下,饮料中结合蛋白的总浓度应在0.001g/l g/L至8.44g/L变化,也可表示为:1ppm至8440ppm。在这些实施方案中,饮料中的蛋白质总浓度是饮料中含有的所有蛋白质源,包括添加的水解胶原蛋白的总和。

实施例1(如表1所示)包括含水解胶原蛋白的浑浊、有色饮料。下面表1中列出了按重量百分比表示的成分。所用成分如下:通过超滤技术纯化的水、水解牛胶原蛋白B 5000HD(Rousselot Inc.)、结晶果糖、桃子香料、柠檬酸[E330]、抗氧化剂:抗坏血酸,酸度调节剂:柠檬酸钠[E331],维生素和矿物质的混合粉末:D-泛酸钙;盐酸吡哆辛;羟钴胺素,D-生物素;葡萄糖酸钙;葡萄糖酸镁;氯化锌,RDV水平:泛酸-15%;维生素B6-15%;维生素B12-15%;生物素-15%;Ca-15%;Mg-15%;Zn-15%;),澄清的浓缩桃子汁、角叉菜胶[E407]、瓜耳胶[E412]、色料:胡罗卜素。

优选制备方法:
通过以下方法获得饮料。将初步水解的胶原蛋白置于由不锈钢制成且最大容量为2500l或其它的容器中,其中在供水路上装有搅拌器和流式加热器。容器内的水通过流式加热器升温至一定的温度:(最低60℃÷最高90)±5℃。容器搅拌器开始工作。将初步称取量的粉末形式的胶原蛋白供给到混合装置的混合室中,该混合装置自动接收供给的粉状胶原蛋白,用水将其均匀地润湿,将所得胶原蛋白在混合装置和混合容器之间循环,借助于真空效应将其吸入并将其转送到容器中进行初步溶解。该过程需要至少5分钟。随机停止混合装置,即停止在混合容器和混合装置之间的循环。用容器的搅拌器另外搅拌所得水解胶原与一定比率的水的初步溶液以初步溶解。搅拌需要至少10分钟。
所获得的水解胶原蛋白的初步浓缩溶液通过渗透性为至少20μm的过滤套管进行过滤。将浓缩溶液通过泵送至过滤装置,之后将其转送至第二混合容器,该容器由不锈钢制成,最大容量为10500l,用于制备饮料本身。
过滤完成后,将浓缩溶液转移到第二混合容器中。第二容器装备有两个搅拌器-用于低液位的下搅拌器和上搅拌器,以及自动液位计,其读取实际液体体积,同时液位计向断流阀发出信号,从而对流向容器的饮用水进行定量。下搅拌器在第二混合容器中的液位达到2000l之后自动开始工作。在已经使下搅拌器工作后,向可用量的2000l溶液中加入饮用水,并且当第二混合容器中的液位达到4500l时,上搅拌器也自动开始工作。
对于其它库存单位(或SKU),其中饮料含有除胶原蛋白之外的其它成分,如:调味剂、维生素、矿物质等。先前精确测量的所有附加成分与胶原蛋白溶液类似地溶于例如1000l水中,但温度为(6÷25℃)。该复水溶液以与已经转移的胶原蛋白溶液相同的方式转移。继续添加温度位(6÷25℃)的饮用水,直到液位计读数为10000l。随后,液位计自动向断流阀自动发出信号,并停止给水。在同时操作上部和下搅拌器时溶液的搅拌持续最少10分钟。此后,停止上搅拌器并且仅使用部搅拌器搅拌即用饮料。
即用饮料代表浓度为10kg/10000l水,即1g/l(1000mg/l)的水解胶原蛋白溶液。继续这样搅拌,将饮料转送以进行灭菌和灌装。当第二混合容器中的液位由于将产品连续取出到灌装线的灭菌器而下降到2000l以下时,该搅拌器自动停止。在转送以进行灭菌和灌装之前,必须对即用饮料进行分析以确认饮料的品质属性。为此,通过第二混合容器装配的龙头取即用饮料的样品。在制备实验室测试该样品关于:外观、澄清度、气味和风味的标准化指标的一致性。在确认评估的情况下,可以将即用饮料转送到灌装区。
将测试的饮料供给到位于灌装和封闭块之前的灭菌区。为饮料灭菌,确保微生物对腐败的稳定性及其特性的恶化。由于所用饮用水和水解胶原蛋白的原材料不是无菌的,并且初步溶解和最终溶解为标准饮料本身的过程是在非无菌环境下进行的,所以推测即用饮料被微生物污染。在超高温下短时间(几秒钟)进行以商品名UHT灭菌著称的灭菌。这种灭菌过程保证了活性细胞微生物的终止,确保了准备好的产品的商业无菌性。此外,通过这样灭菌稳定化的即用饮料可以在商业场所运输、暴露并在室温下销售,即没有必要支撑冷链,提供了在冷藏条件下对产品不间断的运输和分配。所谓的UHT灭菌允许最大限度地保持饮料活性成分的有用性,同时保持天然和原始味道和风味的新鲜度并避免出现味道缺陷。
饮料进入巴氏灭菌器的第一部分-灭菌器,其包括三个部分:用于加热,用于保持温度和冷却。三个部分中的每一个都装备了完全隔离的双室,其相互通过紧密分离热交换表面间接接触。进入第一预热部分的饮料以间接反向流动与离开保持部分的已处理饮料相遇。以这种方式,确保了节能,而进入的饮料吸收离去饮料的一部分热量。进入的饮料的预热有助于并保证容易且有效地迅速达到所需保持温度-实际灭菌,这是在保持部分中进行的。在保持部分中,饮料以间接反向流动(通过热交换表面)与热介质-热蒸汽相遇。通过计算机系统自动控制输入的灭菌温度和保持时间(停留在保持部分中)。在输入的灭菌温度下的保持时间结束后,饮料自动被推入预热部分,以便再次以反向流动与进入的饮料相遇并给出其一部分热量。随后,已经半冷却的灭菌饮料进入冷却部分,在那里通过反向流动的冰冷水进行其最终致冷,直到达到灌装饮料的所需给定温度。
值得推荐的饮料UHT灭菌模式是:
-在137℃下灭菌并在13000l/h流量下保持4.2s;(可能这些参数会根据生产/灌装线特征而波动)
-灭菌的冷却产品在20℃下离开灭菌器。
通过无菌灌装和封闭单块(closure mono-block)进行的灭菌即用饮料的灌装。灌装在封闭的无菌系统中进行以便防止最终污染。灌装是在受控条件下通过无菌室进行的,每个无菌室通过化学清洁剂清洁并预先灭菌。
将无菌空气维持在限定压力下并且每个灌装区部分具有抗菌过滤器,其在灌装过程中保护机器免受微生物污染。保持的压力差(无菌空气压力较大)确保了不允许非无菌空气进入的屏障。也可以通过液封(消毒剂)来保证与环境的隔离。消毒剂代表灭菌、灌装和封闭圆盘传送带内部与环境之间的液体屏障,并保护机器免受微生物污染。
灌装产品的瓶子是在进行由坯料-PET吹塑后制备的。通过气动带式输送机将瓶子转送至无菌灌装和封闭块。就在将其供给到灌装和封闭块之前,在约140℃的高温下通过迅速超高温加热进行瓶子的吹塑过程,这保证了清洁包装。最后在灌装之前通过喷洒过氧化氢溶液对包装进行灭菌和且随后借助于无菌、干燥的暖空气迅速干燥。用于包装封闭的盖也在用于盖初步灭菌的隔室中灭菌。瓶和盖的灭菌(也称为“干燥灭菌”)在温度:140℃(对于瓶而言)和相应地150℃(对于盖而言)下分两个步骤进行:
-VHP-注射(处于蒸发相的过氧化氢);
-活化并用干燥、无菌空气进行干燥。
用于灌装的冷却饮料在20℃温度下转送,并且是非接触性灌装的(在产品定量期间瓶和灌装阀之间没有物理接触)。灌装过程中自动控制供给用于灌装的饮料的温度和流量。饮料的填充在氮气环境中进行,确保惰性气氛,这另外保持了产品在储存期间不被氧化。封闭和标记的瓶子通过压箔机包装成堆。自动地将堆放在货盘上,并将准备好的货盘转送到储存区域。
虽然本公开提到示例性实施方案,但本领域技术人员将会理解,在不脱离本公开的范围的情况下,可以进行各种变化并且等同物可以替代其要素。另外,本领域技术人员将认识到许多修改以在不脱离本发明精神的情况下,使特定仪器、情况或材料适应于本公开的教导。

Claims (41)
1.一种饮料,其包含:
水;
和浓度范围为约.001克/升至8.44克/升的胶原蛋白。
2.根据权利要求1所述的饮料,其中所述胶原蛋白是经水解的。
3.根据权利要求1所述的饮料,其中所述胶原蛋白浓度范围介于1毫克/升至约8440毫克/升。
4.根据权利要求1所述的饮料,其中所述胶原蛋白浓度范围介于1ppm至约8440ppm。
5.根据权利要求1所述的饮料,其中所述胶原蛋白浓度范围介于8.44克/升至.001克/升胶原蛋白、8440毫克/升至约1毫克/升和8440ppm至约1ppm中的至少一种。
6.根据权利要求2所述的饮料,其中所述水解胶原蛋白由胶原肽组成。
7.根据权利要求2所述的饮料,其中所述胶原蛋白肽通过多种胶原蛋白源的水解而产生。
