Abstract
本发明涉及一种用于制作高汤的营养调味料的制备方法,属于调味品技术领域。步骤:取牛肝菌、香菇、螃蟹肉,依次采用纳豆芽孢杆菌和米曲霉发酵,发酵液浓缩,干燥,制成粉状调味基料;取海参制得海参粉末;将粉状调味基料、海参粉末、谷氨酸钠、L‑半胱氨酸盐酸盐、甘氨酸、L‑丙氨酸、大豆分离蛋白、魔芋粉、褐藻胶、葡萄甘露糖、多磷酸钠、姜汁、乙基麦芽酚、食盐、白糖、淀粉、香辛料、呈味核苷酸二钠、维生素、防腐剂和抗氧化剂混合均匀,得到调味料。本发明的高汤调味料营养丰富,具有滋补功能。

技术领域
本发明涉及一种用于制作高汤的营养调味料的制备方法,属于调味品技术领域。
背景技术
高汤是烹饪中常用的一种辅助原料,以往通常是指鸡汤,经过长时间熬煮,其汤水留下,用于烹制其他菜肴时,在烹调过程中代替水,加入到菜肴或汤羹中,目的是为了提鲜,使味道更浓郁。
高汤的做法很多,有荤有素,主要有鸡高汤、猪高汤、牛高汤、鱼高汤、蔬菜高汤等。但是采用传统方法进行制备时,容易导致制作过程费时费力,而且品味容易受到厨师经验的影响,使品味不易掌握。
CN102362656A提供一种香菇高汤调味粉,它由包括如下重量份数的原料制成:香菇粉:2-10份,复合调味料:2-6份,蘑菇醇:0.1-5份;复合调味料由包括下述组分混合而成:食盐、糖和味精。CN1602738A涉及一种酵母提取物,其可最适地增强所有高汤风味,同时增强高汤固有的厚重和混合风味,从而充分地改进其美味却无需破坏所有高汤的风味。特别是当分子量为10,000或更大的肽组分占酵母提取物至少10%时,和当分子量为2,000或更小的肽组分占酵母提取物至少55%时,得此酵母提取物。但是上述的高汤调味料具有鲜味和口感不佳的问题。
因此,需要提供一种味美、营养、制作和使用方便的高汤调味料。
发明内容
本发明的目的是:提供一种用于制作高汤的调味料,需要具有高汤品味鲜美且营养丰富的优点,技术方案如下:
一种用于制作高汤的营养调味料的制备方法,包括如下步骤:
第1步,按重量份计,取牛肝菌40~60份、香菇10~20份、螃蟹肉10~20份混合均匀后,切碎,再加入水200~400份,灭菌,冷却,按体积百分比为2~6%接种纳豆芽孢杆菌菌悬液进行摇床发酵,发酵结束后灭菌,得到发酵液;
第2步,在第1步得到的发酵液中加入米曲霉A100-8种曲发酵,结束后灭菌,离心取上层发酵液浓缩,干燥,制成粉状调味基料;
第3步,取海参4~6份,切成小块,蒸熟后,干燥,再研磨过筛,得到海参粉末;
第4步,按重量份计,将粉状调味基料10~20份、海参粉末1~2份、谷氨酸钠2~4份、L-半胱氨酸盐酸盐1~2份、甘氨酸1~2份、L-丙氨酸1~2份、大豆分离蛋白2~4份、魔芋粉1~2份、褐藻胶1~3份、葡萄甘露糖2~4份、多磷酸钠1~2份、姜汁2~4份、乙基麦芽酚2~4份、食盐5~10份、白糖3~5份、淀粉3~6份、香辛料1~4份、呈味核苷酸二钠2~4份、维生素0.1~0.2份、防腐剂0.01~0.03份和抗氧化剂0.2~0.4份混合均匀,得到调味料。
所述的第1步中,发酵温度为38~46℃,发酵时间56~60h;所述菌悬液中 纳豆芽孢杆菌含量为106~107CFU/mL。
所述的第2步中,发酵的温度为30~35℃,发酵时间1.0~1.5h。
所述的第2步中,米曲霉A100-8种曲在发酵液中的加入量质量百分比2~4%。
所述的第3步中,干燥温度110~120℃,干燥时间4~6小时。
所述的第3步中,过筛是采用400目筛。
另外,本发明中的维生素、抗氧化剂的非限定性实例包括生物素、肉碱、辅酶Q10、胆碱、叶酸、肌醇、番茄红 素、叶黄素、虾青素、玉米黄素、维生素A(β-胡萝卜素、类胡萝卜素、视黄 醇、视黄醇乙酸酯、视黄醇棕榈酸酯)、维生素B1(硫胺)、维生素B12(钴 胺素、氰钴胺素、腺苷钴胺(dibencozide)、羟基钴胺素、甲基钴胺素)、维 生素B2(核黄素)、维生素B3(烟酸、烟酰胺)、维生素B5(泛酸、泛酸钠、 泛酸钙、泛硫乙胺)、维生素B6(吡哆辛、吡哆醛、磷酸-5-吡哆醛酯、吡哆 胺)、维生素C(抗坏血酸、抗坏血酸盐)、维生素D(胆钙化醇、麦角钙化醇)、维生素E(生育酚、三烯生育酚)和维生素K(叶绿醌、phtyomenadione、 甲萘醌)。
本发明中的防腐剂可任选地包括在本发明的制剂组合物中的防腐剂的非限定性实例包括: 醋酸、柠檬酸、苯甲酸、山梨酸、二氧化硫、苯甲酸钾、山梨酸钾、苯甲酸 钠、山梨酸钠、苯甲酸钙、山梨酸钙、柠檬酸钠、柠檬酸钾、六偏磷酸钠、 亚硝酸盐、亚硫酸盐,等等。
有益效果
本发明的高汤调味料蛋白质指标可达到30%以上,可提供大量蛋白质、多肽和氨基酸成分,营养丰富,具有滋补功能。采用米曲霉的二段发酵,能够比活性酵母产生更好的增鲜的作用,同时能够提高蛋白质的含量;通过加入了大豆分离蛋白提高了香味和鲜美程度;另外,将海参采用蒸熟的方式而不是煮熟,可以保留海参中的胶体等物质,有助于提高汤汁的均匀性,同时可以提高鲜美程度。
具体实施方式
实施例1
第1步,按重量份计,取牛肝菌40份、香菇10份、螃蟹肉10份混合均匀后,切碎,再加入水200份,灭菌,冷却,按体积百分比为2%接种纳豆芽孢杆菌菌悬液进行摇床发酵,发酵温度为38℃,发酵时间56h;所述菌悬液中纳豆芽孢杆菌含量为106~107CFU/mL,发酵结束后灭菌,得到发酵液;
第2步,在第1步得到的发酵液中加入米曲霉A100-8种曲发酵,米曲霉A100-8种曲在发酵液中的加入量质量百分比2%,发酵的温度为30℃,发酵时间1.0h,结束后灭菌,离心取上层发酵液浓缩,干燥,制成粉状调味基料;
第3步,取海参4份,切成小块,蒸熟后,干燥,干燥温度110℃,干燥时间4小时,再研磨过400目筛,得到海参粉末;
第4步,按重量份计,将粉状调味基料10份、海参粉末1份、谷氨酸钠2份、L-半胱氨酸盐酸盐1份、甘氨酸1份、L-丙氨酸1份、大豆分离蛋白2份、魔芋粉1份、褐藻胶1份、葡萄甘露糖2份、多磷酸钠1份、姜汁2份、乙基麦芽酚2份、食盐5份、白糖3份、淀粉3份、香辛料1份、呈味核苷酸二钠2份、维生素0.1份、防腐剂0.01份和抗氧化剂0.2份混合均匀,得到调味料。
实施例2
第1步,按重量份计,取牛肝菌60份、香菇20份、螃蟹肉20份混合均匀后,切碎,再加入水400份,灭菌,冷却,按体积百分比为6%接种纳豆芽孢杆菌菌悬液进行摇床发酵,发酵温度为46℃,发酵时间60h;所述菌悬液中纳豆芽孢杆菌含量为106~107CFU/mL,发酵结束后灭菌,得到发酵液;
第2步,在第1步得到的发酵液中加入米曲霉A100-8种曲发酵,米曲霉A100-8种曲在发酵液中的加入量质量百分比4%,发酵的温度为35℃,发酵时间1.5h,结束后灭菌,离心取上层发酵液浓缩,干燥,制成粉状调味基料;
第3步,取海参6份,切成小块,蒸熟后,干燥,干燥温度120℃,干燥时间6小时,再研磨过400目筛,得到海参粉末;
第4步,按重量份计,将粉状调味基料20份、海参粉末2份、谷氨酸钠4份、L-半胱氨酸盐酸盐2份、甘氨酸2份、L-丙氨酸2份、大豆分离蛋白4份、魔芋粉2份、褐藻胶3份、葡萄甘露糖4份、多磷酸钠2份、姜汁4份、乙基麦芽酚4份、食盐10份、白糖5份、淀粉6份、香辛料4份、呈味核苷酸二钠4份、维生素0.2份、防腐剂0.03份和抗氧化剂0.4份混合均匀,得到调味料。
实施例3
第1步,按重量份计,取牛肝菌50份、香菇15份、螃蟹肉15份混合均匀后,切碎,再加入水300份,灭菌,冷却,按体积百分比为5%接种纳豆芽孢杆菌菌悬液进行摇床发酵,发酵温度为40℃,发酵时间58h;所述菌悬液中纳豆芽孢杆菌含量为106~107CFU/mL,发酵结束后灭菌,得到发酵液;
第2步,在第1步得到的发酵液中加入米曲霉A100-8种曲发酵,米曲霉A100-8种曲在发酵液中的加入量质量百分比3%,发酵的温度为32℃,发酵时间1.2h,结束后灭菌,离心取上层发酵液浓缩,干燥,制成粉状调味基料;
第3步,取海参5份,切成小块,蒸熟后,干燥,干燥温度115℃,干燥时间5小时,再研磨过400目筛,得到海参粉末;
第4步,按重量份计,将粉状调味基料15份、海参粉末1份、谷氨酸钠3份、L-半胱氨酸盐酸盐1份、甘氨酸2份、L-丙氨酸2份、大豆分离蛋白3份、魔芋粉2份、褐藻胶2份、葡萄甘露糖3份、多磷酸钠2份、姜汁3份、乙基麦芽酚3份、食盐8份、白糖4份、淀粉5份、香辛料2份、呈味核苷酸二钠3份、维生素0.1份、防腐剂0.02份和抗氧化剂0.3份混合均匀,得到调味料。
对照例1
与实施例3的区别在于:第2步中未采用米曲霉,而是采用了活性酵母粉。
第1步,按重量份计,取牛肝菌50份、香菇15份、螃蟹肉15份混合均匀后,切碎,再加入水300份,灭菌,冷却,按体积百分比为5%接种纳豆芽孢杆菌菌悬液进行摇床发酵,发酵温度为40℃,发酵时间58h;所述菌悬液中纳豆芽孢杆菌含量为106~107CFU/mL,发酵结束后灭菌,得到发酵液;
第2步,在第1步得到的发酵液中加入活性酵母粉种曲发酵,活性酵母粉种曲在发酵液中的加入量质量百分比3%,发酵的温度为32℃,发酵时间1.2h,结束后灭菌,离心取上层发酵液浓缩,干燥,制成粉状调味基料;
第3步,取海参5份,切成小块,蒸熟后,干燥,干燥温度115℃,干燥时间5小时,再研磨过400目筛,得到海参粉末;
第4步,按重量份计,将粉状调味基料15份、海参粉末1份、谷氨酸钠3份、L-半胱氨酸盐酸盐1份、甘氨酸2份、L-丙氨酸2份、大豆分离蛋白3份、魔芋粉2份、褐藻胶2份、葡萄甘露糖3份、多磷酸钠2份、姜汁3份、乙基麦芽酚3份、食盐8份、白糖4份、淀粉5份、香辛料2份、呈味核苷酸二钠3份、维生素0.1份、防腐剂0.02份和抗氧化剂0.3份混合均匀,得到调味料。
对照例2
与实施例3的区别在于:第4步中未加入大豆分离蛋白。
第1步,按重量份计,取牛肝菌50份、香菇15份、螃蟹肉15份混合均匀后,切碎,再加入水300份,灭菌,冷却,按体积百分比为5%接种纳豆芽孢杆菌菌悬液进行摇床发酵,发酵温度为40℃,发酵时间58h;所述菌悬液中纳豆芽孢杆菌含量为106~107CFU/mL,发酵结束后灭菌,得到发酵液;
第2步,在第1步得到的发酵液中加入米曲霉A100-8种曲发酵,米曲霉A100-8种曲在发酵液中的加入量质量百分比3%,发酵的温度为32℃,发酵时间1.2h,结束后灭菌,离心取上层发酵液浓缩,干燥,制成粉状调味基料;
第3步,取海参5份,切成小块,蒸熟后,干燥,干燥温度115℃,干燥时间5小时,再研磨过400目筛,得到海参粉末;
第4步,按重量份计,将粉状调味基料15份、海参粉末1份、谷氨酸钠3份、L-半胱氨酸盐酸盐1份、甘氨酸2份、L-丙氨酸2份、魔芋粉2份、褐藻胶2份、葡萄甘露糖3份、多磷酸钠2份、姜汁3份、乙基麦芽酚3份、食盐8份、白糖4份、淀粉5份、香辛料2份、呈味核苷酸二钠3份、维生素0.1份、防腐剂0.02份和抗氧化剂0.3份混合均匀,得到调味料。
对照例3
与实施例3的区别在于:第4步中未加入多磷酸钠。
第1步,按重量份计,取牛肝菌50份、香菇15份、螃蟹肉15份混合均匀后,切碎,再加入水300份,灭菌,冷却,按体积百分比为5%接种纳豆芽孢杆菌菌悬液进行摇床发酵,发酵温度为40℃,发酵时间58h;所述菌悬液中纳豆芽孢杆菌含量为106~107CFU/mL,发酵结束后灭菌,得到发酵液;
第2步,在第1步得到的发酵液中加入米曲霉A100-8种曲发酵,米曲霉A100-8种曲在发酵液中的加入量质量百分比3%,发酵的温度为32℃,发酵时间1.2h,结束后灭菌,离心取上层发酵液浓缩,干燥,制成粉状调味基料;
第3步,取海参5份,切成小块,蒸熟后,干燥,干燥温度115℃,干燥时间5小时,再研磨过400目筛,得到海参粉末;
第4步,按重量份计,将粉状调味基料15份、海参粉末1份、谷氨酸钠3份、L-半胱氨酸盐酸盐1份、甘氨酸2份、L-丙氨酸2份、大豆分离蛋白3份、魔芋粉2份、褐藻胶2份、葡萄甘露糖3份、姜汁3份、乙基麦芽酚3份、食盐8份、白糖4份、淀粉5份、香辛料2份、呈味核苷酸二钠3份、维生素0.1份、防腐剂0.02份和抗氧化剂0.3份混合均匀,得到调味料。
对照例4
与实施例3的区别在于:海参是采用煮熟的方式而不是煮熟。
第1步,按重量份计,取牛肝菌50份、香菇15份、螃蟹肉15份混合均匀后,切碎,再加入水300份,灭菌,冷却,按体积百分比为5%接种纳豆芽孢杆菌菌悬液进行摇床发酵,发酵温度为40℃,发酵时间58h;所述菌悬液中纳豆芽孢杆菌含量为106~107CFU/mL,发酵结束后灭菌,得到发酵液;
第2步,在第1步得到的发酵液中加入米曲霉A100-8种曲发酵,米曲霉A100-8种曲在发酵液中的加入量质量百分比3%,发酵的温度为32℃,发酵时间1.2h,结束后灭菌,离心取上层发酵液浓缩,干燥,制成粉状调味基料;
第3步,取海参5份,切成小块,加入150份水煮熟后取出干燥,干燥温度115℃,干燥时间5小时,再研磨过400目筛,得到海参粉末;
第4步,按重量份计,将粉状调味基料15份、海参粉末1份、谷氨酸钠3份、L-半胱氨酸盐酸盐1份、甘氨酸2份、L-丙氨酸2份、大豆分离蛋白3份、魔芋粉2份、褐藻胶2份、葡萄甘露糖3份、多磷酸钠2份、姜汁3份、乙基麦芽酚3份、食盐8份、白糖4份、淀粉5份、香辛料2份、呈味核苷酸二钠3份、维生素0.1份、防腐剂0.02份和抗氧化剂0.3份混合均匀,得到调味料。
称取以上实施例和对照例的产品各2g,分别溶于100ml温水中搅拌均匀,邀请10名感官评价员对2%的样品溶液和对比例溶液进行感官分析和打分(喜好性打分:≥8.5分,高汤风味明显,口感醇厚鲜美,香气浓郁自然;<8.5分,香气不自然,口感不够丰富),感官评价结果如下:

从表中可以看出,本发明的高汤调味料蛋白质指标可达到30%以上,可提供大量蛋白质、多肽和氨基酸成分,营养丰富,具有滋补功能。另外,实施例3相对于对照例1来说,采用米曲霉的二段发酵,能够比活性酵母产生更好的增鲜的作用,同时能够提高蛋白质的含量;实施例3相对于对照例2来说,通过加入了大豆分离蛋白提高了香味和鲜美程度;实施例3相对于对照例3来说,加入了多磷酸钠,有助于提高汤汁的均匀性;实施例3相对于对照例4来说,将海参采用蒸熟的方式而不是煮熟,可以保留海参中的胶体等物质,有助于提高汤汁的均匀性,同时可以提高鲜美程度。
Claims (6)
1.一种用于制作高汤的营养调味料的制备方法,其特征在于,包括如下步骤:
第1步,按重量份计,取牛肝菌40~60份、香菇10~20份、螃蟹肉10~20份混合均匀后,切碎,再加入水200~400份,灭菌,冷却,按体积百分比为2~6%接种纳豆芽孢杆菌菌悬液进行摇床发酵,发酵结束后灭菌,得到发酵液;
第2步,在第1步得到的发酵液中加入米曲霉A100-8种曲发酵,结束后灭菌,离心取上层发酵液浓缩,干燥,制成粉状调味基料;
第3步,取海参4~6份,切成小块,蒸熟后,干燥,再研磨过筛,得到海参粉末;
第4步,按重量份计,将粉状调味基料10~20份、海参粉末1~2份、谷氨酸钠2~4份、L-半胱氨酸盐酸盐1~2份、甘氨酸1~2份、L-丙氨酸1~2份、大豆分离蛋白2~4份、魔芋粉1~2份、褐藻胶1~3份、葡甘露聚糖2~4份、多磷酸钠1~2份、姜汁2~4份、乙基麦芽酚2~4份、食盐5~10份、白糖3~5份、淀粉3~6份、香辛料1~4份、呈味核苷酸二钠2~4份、维生素0.1~0.2份、防腐剂0.01~0.03份和抗氧化剂0.2~0.4份混合均匀,得到调味料。
2.根据权利要求1所述的用于制作高汤的营养调味料的制备方法,其特征在于:所述的第1步中,发酵温度为38~46℃,发酵时间56~60h;所述菌悬液中纳豆芽孢杆菌含量为106~107CFU/mL。
3.根据权利要求1所述的用于制作高汤的营养调味料的制备方法,其特征在于:所述的第2步中,发酵的温度为30~35℃,发酵时间1.0~1.5h。
4.根据权利要求1所述的用于制作高汤的营养调味料的制备方法,其特征在于:所述的第2步中,米曲霉A100-8种曲在发酵液中的加入量质量百分比2~4%。
5.根据权利要求1所述的用于制作高汤的营养调味料的制备方法,其特征在于:所述的第3步中,干燥温度110~120℃,干燥时间4~6小时。
6.根据权利要求1所述的用于制作高汤的营养调味料的制备方法,其特征在于:所述的第3步中,过筛是采用400目筛。
