本发明公开了一种复合菇饮料,是由双孢菇、杏鲍菇、花生红衣、蓝莓、菊花、代代花、低聚异麦芽糖、柠檬酸、苹果酸、木糖醇和水组成的。本发明还公开了该复合菇饮料的制备方法。根据中医理论“药补不如食补”的原理,利用双孢菇、杏鲍菇和蓝莓的营养和药用价值,加上花生红衣、菊花、代代花和其它辅料,采用医食同源、药食同源的中医理论,通过多种营养物质的有机结合,有效的将不同成分融入到产品中,这些成分相互配合,协同作用,经多年验证,本发明的复合菇饮料口感清凉,酸甜适口,集保健与营养为一体,具有健胃消食、润肺理气、活血降脂的功效,还可以增强人体免疫力和体质。

技术领域
本发明属于食品加工领域,具体涉及一种复合菇饮料及其制备方法。
背景技术
双孢菇,别名口蘑、圆蘑菇等,据测定,每100克鲜品中含蛋白质2.9克、脂肪0.2克、碳水化合物2.4克、粗纤维0.6克、灰分0.6克、钙8毫克、磷66毫克、铁1.3毫克、维生素(B1)0.11毫克,维生素(B2)0.16毫克、维生素C4毫克、烟酸3.3毫克。现代医学表明,双孢菇对病毒性疾病有一定的免疫作用。其所含的蘑菇多糖和异蛋白具有一定的抗癌活性,能抑制肿瘤的发生、发展,所含的酪氨酸酶能溶解一定的胆固醇、降低血压,是一种降压剂,所含的胰蛋白酶、麦芽糖酶、解朊酶有助于食物的消化。中医认为,双孢菇味甘平,有提神、消食、平肝阳等作用。
杏鲍菇,又名刺芹侧耳、隶属于伞菌目、侧耳科、侧耳属,杏鲍菇菌肉肥厚、质地脆嫩,特别是菌柄组织致密、结实,呈乳白色,可全部食用,且菌柄比菌盖更脆滑、爽口,被称为“平菇王”、“干贝菇”,具有愉快的杏仁香味和如鲍鱼的口感,杏鲍菇营养丰富,含有大量的蛋白质、糖类和多种维生素。据测定蛋白质含量达25%,脂肪1.4%,粗纤维6.9%,灰分6.96%。在蛋白质中含有18种氨基酸,其中人体必需的8种氨基酸齐全。此外,还含有多种矿物质元素。据现有研究资料证实,经常食用杏鲍菇可降低人体血液中的胆固醇含量,具有明显的降血压作用,对胃溃疡、肝炎、心血管病、糖尿病也具有一定的预防和治疗作用,并能提高人体免疫力,增强人体抗病能力。加之杏鲍菇保鲜期长,适合保鲜、加工,深得人们的喜爱。因此,杏鲍菇被称为新世纪理想的健康食品。
蓝莓果肉细腻,风味独特,酸甜适口,又具有清爽宜人的香气。蓝莓果实中除了富含水果中常见的多种营养成分,还含有花色素苷、类黄酮等抗氧化剂,属高氨基酸、高锌、高铁、高铜、高维生素的果品,具有良好的营养保健功效,其功效包括增强视力、消除眼睛疲劳、防止脑神经老化、抗癌、软化血管、增强人体免疫等,其营养价值远高于苹果、葡萄、橘子等水果,被称为“水果皇后”和“浆果之王”,是近几年世界发展最为迅速的集营养与保健于一身的水果,风靡当今欧美日等国家和地区,联合国粮农组织也将蓝莓确定为人类五大健康食品之一。
由于当食用菌栽培技术和蓝莓种植技术的成熟和普及,造成产量直线上升,产销矛盾逐渐增大,但不耐贮藏,采收后必须尽快销售和使用,否则容易腐败变质。为了提高产品的附加值、降低产业经营风险、提高产品在国际市场上的竞争力,大力开展精深加工,具有重要的现实意义。
发明内容
本发明的目的在于针对现有技术的不足,提供了一种具有健胃消食、润肺理气、活血降脂,增强人体免疫力的复合菇饮料。
本发明还提供了一种复合菇饮料的制备方法。
本发明的目的是通过如下内容实现的:
一种复合菇饮料,是由以下重量百分比的原料组成的:双孢菇20-30%、杏鲍菇15-25%、花生红衣2-5%、蓝莓10-18%、菊花1-2%、代代花0.5-1%、低聚异麦芽糖1-1.5%、柠檬酸0.2-0.3%、苹果酸0.05-0.09%、木糖醇1-3%,余量为水。
优选的,一种复合菇饮料,是由以下重量百分比的原料组成的:双孢菇25%、杏鲍菇20%、花生红衣3.5%、蓝莓14%、菊花1.5%、代代花0.8%、低聚异麦芽糖1.2%、柠檬酸0.25%、苹果酸0.07%、木糖醇2%,余量为水。
一种复合菇饮料的制备方法,包括以下步骤:
1)挑选新鲜、无腐烂、无异味、无机械损伤的双孢菇和杏鲍菇,清洗干净,沸水中烫漂10分钟,取出晾凉;
2)将晾凉后的双孢菇和杏鲍菇加入8倍菇体重量的水,破碎,离心,取上清液于300目滤布中连续过滤3次,取滤液,得双菇汁;
3)取新鲜蓝莓,加入2倍蓝莓重量的水,打浆,50目滤布粗滤,再用200目滤布过滤,取滤汁,得蓝莓汁;
4)取花生红衣、菊花和代代花,粉碎,加入15倍重量的热水浸提3h,300目滤布过滤,将滤渣再用25倍重量的水浸提2h,300目滤布过滤,合并两次滤液,减压浓缩至重量浓度10%-15%,得复合提取液;
5)将双菇汁、蓝莓汁、复合提取液、低聚异麦芽糖、柠檬酸、苹果酸、木糖醇和水混合,调配均匀;
6)将调配好的汁液均质两次,经脱气、灌装、杀菌、冷却,即可制得本发明的复合菇饮料。
所述均质温度为65℃,均质压力为28MPa,均质时间为5min。
本发明中主要成分为双孢菇、杏鲍菇、花生红衣、蓝莓、菊花和代代花,分别具有以下药理作用:
双孢菇所含的蘑菇多糖和异蛋白具有一定的抗癌活性,可抑制肿瘤的发生;所含的酪氨酸酶能溶解一定的胆固醇,对降低血压有一定作用;所含的胰蛋白酶、麦牙糖酶等均有助于食物的消化。中医认为双孢菇味甘性平有提神消化、降血压的作用。经常食用双孢菇,可以防止坏血病,预防肿癌,促进伤口愈合和解除铅,砷,汞等的中毒,兼有补脾,润肺,理气,化痰之功效,能防止恶性贫血,改善神经功能,降低血脂。
杏鲍菇具有降血脂、降胆固醇、促进胃肠消化、增强机体免疫能力、防止心血管病等功效。
花生红衣能抑制纤维蛋白的溶解,增加血小板的含量,改善血小板的质量,改善凝血因子的缺陷,加强毛细血管的收缩机能,促进骨髓造血机能,对各种出血及出血引起的贫血、再生障碍性贫血等疾病有明显效果。
蓝莓能有效降低胆固醇,防止动脉粥样硬化,促进心血管健康;有增强心脏功能、预防癌症和心脏病的功效,能防止脑神经衰老、增强脑力;可以强化视力,减轻眼球疲劳。
菊花具有疏风、清热、明目、解毒之功效。主要治疗头痛、眩晕、目赤、心胸烦热、疔疮、肿毒等症。现代药理研究表明,菊花具有治疗冠心病、降低血压、预防高血脂、抗菌、抗病毒、抗炎、抗衰老等多种药理活性。
代代花具有行气宽中,消食,化痰的功效,用于胸腹闷胀痛、食积不化、痰饮、脱肛。
本发明的有益效果:
1.根据中医理论“药补不如食补”的原理,利用双孢菇、杏鲍菇和蓝莓的营养和药用价值,加上花生红衣、菊花、代代花和其它辅料,采用医食同源、药食同源的中医理论,通过多种营养物质的有机结合,有效的将不同成分融入到产品中,这些成分相互配合,协同作用,经多年验证,本发明具有健胃消食、润肺理气、活血降脂的功效,还可以增强人体免疫力和体质。
2.本发明的复合菇饮料口感清凉,酸甜适口,集保健与营养为一体,不添加防腐剂和人工色素,满足人们对天然绿色食品的需求,是一款大众化风味饮料,具有广阔的市场前景。
3.本发明制备方法简单易行,产品安全、无毒副作用,经过均质后,产品具有极高的稳定性,显著提高产品的保存质量,提高产品的风味和档次。

以下将对本发明的优选实施例进行详细的描述;应当理解,优选实施例仅为了说明本发明,而不是为了限制本发明的保护范围。
实施例1
一种复合菇饮料,是由以下重量百分比的原料组成的:双孢菇30%、杏鲍菇15%、花生红衣2%、蓝莓18%、菊花1%、代代花0.5%、低聚异麦芽糖1%、柠檬酸0.2%、苹果酸0.05%、木糖醇1%,余量为水。
一种复合菇饮料的制备方法,包括以下步骤:
1)挑选新鲜、无腐烂、无异味、无机械损伤的双孢菇和杏鲍菇,清洗干净,沸水中烫漂10分钟,取出晾凉;

实施例2
一种复合菇饮料,是由以下重量百分比的原料组成的:双孢菇25%、杏鲍菇20%、花生红衣3.5%、蓝莓14%、菊花1.5%、代代花0.8%、低聚异麦芽糖1.2%、柠檬酸0.25%、苹果酸0.07%、木糖醇2%,余量为水。

1)挑选新鲜、无腐烂、无异味、无机械损伤的双孢菇和杏鲍菇,清洗干净,沸水中烫漂10分钟,取出晾凉;

5)将双菇汁、蓝莓汁、复合提取液、低聚异麦芽糖、柠檬酸、苹果酸、木糖醇和水混合,调配均匀;
6)将调配好的汁液在65℃、28MPa条件下均质两次,每次5min,经脱气、灌装、杀菌、冷却,即可制得本发明的复合菇饮料。
实施例3
一种复合菇饮料,是由以下重量百分比的原料组成的:双孢菇20%、杏鲍菇25%、花生红衣5%、蓝莓10%、菊花2%、代代花1%、低聚异麦芽糖1.5%、柠檬酸0.3%、苹果酸0.09%、木糖醇3%,余量为水。
一种复合菇饮料的制备方法,包括以下步骤:
1)挑选新鲜、无腐烂、无异味、无机械损伤的双孢菇和杏鲍菇,清洗干净,沸水中烫漂10分钟,取出晾凉;
2)将晾凉后的双孢菇和杏鲍菇加入8倍菇体重量的水,破碎,离心,取上清液于300目滤布中连续过滤3次,取滤液,得双菇汁;
3)取新鲜蓝莓,加入2倍蓝莓重量的水,打浆,50目滤布粗滤,再用200目滤布过滤,取滤汁,得蓝莓汁;
4)取花生红衣、菊花和代代花,粉碎,加入15倍重量的热水浸提3h,过滤,将滤渣再用25倍重量的水浸提2h,300目滤布过滤,合并两次滤液,减压浓缩至重量浓度15%,得复合提取液;
5)将双菇汁、蓝莓汁、复合提取液、低聚异麦芽糖、柠檬酸、苹果酸、木糖醇和水混合,调配均匀;
6)将调配好的汁液在65℃、28MPa条件下均质两次,每次5min,经脱气、灌装、杀菌、冷却,即可制得本发明的复合菇饮料。
官能评价
在全市范围内分别随机选取5个年龄阶段的测试人群,每个年龄段各90名,随机分成3组,每组30名,对本发明实施例1至3提供的复合菇饮料进行酸甜度及风味官能评价,官能评价标准见表1,甜度及风味评价结果见表2、表3。

从表2、3的评价结果中可以看出,本发明制备的复合菇饮料酸甜度总体满意度达到98%,风味群众总体满意度为97%,是一种营养丰富,口感风味好,易于人群接受的良好饮品。
食用实验
实验对象:随机选择100名免疫力低下、消化不良的受试者,随机分成实验组和对照组,每组各50名受试者。
实验组:经本发明制备的复合菇饮料派给上述50名受试者,每日3瓶,期间不改变原有生活习惯。实验结果表明,饮用30天后,41人表示精神充沛,消化不良、脾胃虚弱等各项症状趋于好转,9人表示精神状态有所改善,消化不良等各项症状有所缓解;饮用60天后,48人表示精神充沛,消化不良、脾胃虚弱等各项症状基本消失,免疫力增强,2人精神状态改善,消化不良、脾胃虚弱等各项症状好转。
对照组:50名受试者不饮用任何保健饮料,期间不改变原有生活习惯。实验结果表明,60天后,受试者的精神状态、免疫力低下、消化不良、脾胃虚弱等症状均无改善或缓解。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。因此,本发明专利的保护范围应以所附权利要求为准。
Claims (4)
1.一种复合菇饮料,其特征在于,是由以下重量百分比的原料组成的:双孢菇20-30%、杏鲍菇15-25%、花生红衣2-5%、蓝莓10-18%、菊花1-2%、代代花0.5-1%、低聚异麦芽糖1-1.5%、柠檬酸0.2-0.3%、苹果酸0.05-0.09%、木糖醇1-3%,余量为水。
2.根据权利要求1所述的复合菇饮料,其特征在于,是由以下重量百分比的原料组成的:双孢菇25%、杏鲍菇20%、花生红衣3.5%、蓝莓14%、菊花1.5%、代代花0.8%、低聚异麦芽糖1.2%、柠檬酸0.25%、苹果酸0.07%、木糖醇2%,余量为水。
3.一种权利要求1所述的复合菇饮料的制备方法,其特征在于,包括以下步骤:
1)挑选新鲜、无腐烂、无异味、无机械损伤的双孢菇和杏鲍菇,清洗干净,沸水中烫漂10分钟,取出晾凉;
2)将晾凉后的双孢菇和杏鲍菇加入8倍菇体重量的水,破碎,离心,取上清液于300目滤布中连续过滤3次,取滤液,得双菇汁;
3)取新鲜蓝莓,加入2倍蓝莓重量的水,打浆,50目滤布粗滤,再用200目滤布过滤,取滤汁,得蓝莓汁;
4)取花生红衣、菊花和代代花,粉碎,加入15倍重量的热水浸提3h,300目滤布过滤,将滤渣再用25倍重量的水浸提2h,300目滤布过滤,合并两次滤液,减压浓缩至重量浓度10%-15%,得复合提取液;
5)将双菇汁、蓝莓汁、复合提取液、低聚异麦芽糖、柠檬酸、苹果酸、木糖醇和水混合,调配均匀;
6)将调配好的汁液均质两次,经脱气、灌装、杀菌、冷却,即可制得本发明的复合菇饮料。
4.根据权利要求3所述的制备方法,其特征在于,所述均质温度为65℃,均质压力为28MPa,均质时间为5min。
