本发明主要涉及糖果加工领域,尤其涉及一种补硒牛皮糖。
背景技术
牛皮糖号称“扬州一绝”,是扬州特产。口味香甜,外层芝麻均匀,切面棕色光亮,呈半透明状,富有弹性,味香,细嚼不粘牙,在海内外享有盛誉,口感达到了弹性、韧性、柔软性三性为一体的最佳状态。
硒是人体必需的矿质元素之一,能够增强抵抗力,抑制肿瘤,排毒养颜,抗氧化,改善机体代谢,抗病毒,抗衰老,清除体内垃圾,保肝明目,降血糖,降血压,保护心脑血管,缓解关节炎。
目前市场上的牛皮糖产品,热量高,多食容易导致肥胖,随着人们保健意识的不断增强,传统的高糖高脂牛皮糖已经不能得到青睐,市场亟需一种具有保健功能的牛皮糖。
发明内容
为了弥补已有技术的缺陷,本发明的目的是提供一种补硒牛皮糖。
一种补硒牛皮糖,由以下重量份的原料制成:低聚果糖56~58、低聚木糖41~43、玉米淀粉27~29、紫薯淀粉16~18、富硒茶籽油16~18、富硒香菇12~14、西瓜子10~11、富硒牛奶5~6、白薇1.4~1.6、马鞭草1.4~1.6、牛蒡子1.1~1.3、款冬0.4~0.6、食盐0.4~0.6、开菲尔0.6~0.8、麦绿素0.2~0.3、善存粉0.2~0.3、溶菌酶0.02~0.03。
所述的补硒牛皮糖,有机硒含量为23~25mg/Kg。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:木聚糖酶:β-葡聚糖苷酶:脂肪酶=14~15:11~12:10~11:7~8:7~8。
一种补硒牛皮糖的制备方法,其具体步骤为:
(1)将富硒香菇洗净,打浆,过140~160目筛,充分粉碎,无颗粒感,得香菇浆;
(2)将白薇、马鞭草、牛蒡子和款冬粉碎,过120~140目筛,得中药粉,加入中药粉重量3~4倍量的纯净水,混合均匀,加入复合酶,搅拌均匀,置于38~39℃水浴,47~49转/分钟,搅拌酶解4~5小时,加热煮沸后,停火,浸泡2~3小时,10000转/分钟离心12分钟,得提取液和中药渣,向药渣中加入药渣重量2~3倍量的体积分数为62~64%的酒精溶液,34~36转/分钟,搅拌处理36~40分钟,充分提取有效成分,提高中药利用率,10000转/分钟离心10分钟,得提取液和中药渣,合并所有提取液,67~69℃烘箱中干燥至无水分含量为香菇重量的2.2~2.4倍,得中药提取物;
(3)将中药提取物与香菇浆混合均匀,加入富硒牛奶和善存粉,34~36转/分钟搅拌12~14分钟,加入开菲尔,42~44转/分钟搅拌13~15分钟,充分混合均匀,置于22~24℃发酵20~24小时,使口感酸甜,促进物质分解,产生益生因子,利于吸收利用,加入食盐和麦绿素,混合均匀,置于3~5℃放置6~8小时,抑制杂菌生长,控制发酵,防止口感过酸,酸味适中,得发酵香菇浆;
(4)将西瓜子粉碎,粒径为2~3mm,得西瓜子粉,将锅烧热至132~136℃,关闭火源,倒入西瓜子粉,56~58转/分钟搅拌翻炒8~10分钟,得炒西瓜子粉;
(5)将玉米淀粉和紫薯淀粉混合均匀,得混合粉,加入发酵香菇,32~34转/分钟搅拌4~5分钟,加入混合粉重量2.2~2.4倍量的纯净水,搅拌9~12分钟,慢速搅拌,避免蛋白质析出,得淀粉浆;
(6)将低聚果糖和1/2富硒茶籽油加入锅中,加入低聚果糖重量0.3~0.4倍量的水,煮沸,加入淀粉浆,43~45转/分钟,搅拌熬煮26~28分钟,加入剩下1/2的富硒茶籽油,熬煮2~3分钟,加入低聚木糖,52~54转/分钟,搅拌熬煮16~18分钟,加入溶菌酶,搅拌熬煮4~6分钟,呈焦香粘稠状,得糖浆;
(7)将炒西瓜子粉均匀铺于模具底部,加入糖浆,均匀铺在模具里,表面均匀洒一层炒西瓜子粉,置于2~4℃的冷却室内冷却12~14分钟,脱模,切割,切面蘸一层炒西瓜子粉,得补硒牛皮糖;
(8)用石头纸进行包装,得成品。
所述步骤(5)的加水,分3~4次加入,每次间隔3~4分钟,充分搅拌后呈均匀浆状。
紫苏籽油:营养丰富,富含不饱和脂肪酸,能够保护肝脏,降血脂,降血压,保护心脑血管,保护视力,提高智力,抑制过敏。
白薇:富含多种有效成分,能够除虚烦,清热散肿,生肌止痛,抗菌解毒,促进微循环,保护心脏。
马鞭草:富含微量元素硒、维生素和胡萝卜素,具有提神,平缓情绪,消除呕心,促进消化,利水消肿,改善神经衰弱,提高免疫力的功效,。
牛蒡子:抗菌消炎,抗病毒,降血糖,降血压,保肾护肝,抗肿瘤,促进胃肠功能,增强免疫力。

一种补硒牛皮糖,由以下重量份的原料制成:低聚果糖56、低聚木糖41、玉米淀粉27、紫薯淀粉16、富硒茶籽油16、富硒香菇12、西瓜子10、富硒牛奶5、白薇1.4、马鞭草1.4、牛蒡子1.1、款冬0.4、食盐0.4、开菲尔0.6、麦绿素0.2、善存粉0.2、溶菌酶0.02。
所述的补硒牛皮糖,有机硒含量为23mg/Kg。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:木聚糖酶:β-葡聚糖苷酶:脂肪酶=14:11:10:7:7。
一种补硒牛皮糖的制备方法,其具体步骤为:
(1)将富硒香菇洗净,打浆,过140目筛,充分粉碎,无颗粒感,得香菇浆;
(2)将白薇、马鞭草、牛蒡子和款冬粉碎,过120目筛,得中药粉,加入中药粉重量3倍量的纯净水,混合均匀,加入复合酶,搅拌均匀,置于38℃水浴,47转/分钟,搅拌酶解4小时,加热煮沸后,停火,浸泡2小时,10000转/分钟离心12分钟,得提取液和中药渣,向药渣中加入药渣重量2倍量的体积分数为62%的酒精溶液,34转/分钟,搅拌处理36分钟,充分提取有效成分,提高中药利用率,10000转/分钟离心10分钟,得提取液和中药渣,合并所有提取液,67℃烘箱中干燥至无水分含量为香菇重量的2.2倍,得中药提取物;
(3)将中药提取物与香菇浆混合均匀,加入富硒牛奶和善存粉,34转/分钟搅拌12分钟,加入开菲尔,42转/分钟搅拌13分钟,充分混合均匀,置于22℃发酵20小时,使口感酸甜,促进物质分解,产生益生因子,利于吸收利用,加入食盐和麦绿素,混合均匀,置于3℃放置6小时,抑制杂菌生长,控制发酵,防止口感过酸,酸味适中,得发酵香菇浆;
(4)将西瓜子粉碎,粒径为2~3mm,得西瓜子粉,将锅烧热至132℃,关闭火源,倒入西瓜子粉,56转/分钟搅拌翻炒8分钟,得炒西瓜子粉;
(5)将玉米淀粉和紫薯淀粉混合均匀,得混合粉,加入发酵香菇,32转/分钟搅拌4分钟,加入混合粉重量2.2倍量的纯净水,分3次加入,每次间隔3分钟,搅拌9分钟,慢速搅拌,避免蛋白质析出,得淀粉浆;
(6)将低聚果糖和1/2富硒茶籽油加入锅中,加入低聚果糖重量0.3倍量的水,煮沸,加入淀粉浆,43转/分钟,搅拌熬煮26分钟,加入剩下1/2的富硒茶籽油,熬煮2分钟,加入低聚木糖,52转/分钟,搅拌熬煮16分钟,加入溶菌酶,搅拌熬煮4分钟,呈焦香粘稠状,得糖浆;
(7)将炒西瓜子粉均匀铺于模具底部,加入糖浆,均匀铺在模具里,表面均匀洒一层炒西瓜子粉,置于2℃的冷却室内冷却12分钟,脱模,切割,切面蘸一层炒西瓜子粉,得补硒牛皮糖;
(8)用石头纸进行包装,得成品。
实施例2
一种补硒牛皮糖,由以下重量份的原料制成:低聚果糖57、低聚木糖42、玉米淀粉28、紫薯淀粉17、富硒茶籽油17、富硒香菇13、西瓜子10、富硒牛奶5、白薇1.5、马鞭草1.5、牛蒡子1.2、款冬0.5、食盐0.5、开菲尔0.7、麦绿素0.2、善存粉0.2、溶菌酶0.02。
所述的补硒牛皮糖,有机硒含量为24mg/Kg。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:木聚糖酶:β-葡聚糖苷酶:脂肪酶=14:12:11:8:7。
一种补硒牛皮糖的制备方法,其具体步骤为:
(1)将富硒香菇洗净,打浆,过150目筛,充分粉碎,无颗粒感,得香菇浆;
(2)将白薇、马鞭草、牛蒡子和款冬粉碎,过130目筛,得中药粉,加入中药粉重量3倍量的纯净水,混合均匀,加入复合酶,搅拌均匀,置于38℃水浴,48转/分钟,搅拌酶解4.5小时,加热煮沸后,停火,浸泡2.5小时,10000转/分钟离心12分钟,得提取液和中药渣,向药渣中加入药渣重量2.5倍量的体积分数为63%的酒精溶液,35转/分钟,搅拌处理38分钟,充分提取有效成分,提高中药利用率,10000转/分钟离心10分钟,得提取液和中药渣,合并所有提取液,68℃烘箱中干燥至无水分含量为香菇重量的2.3倍,得中药提取物;
(3)将中药提取物与香菇浆混合均匀,加入富硒牛奶和善存粉,35转/分钟搅拌13分钟,加入开菲尔,43转/分钟搅拌14分钟,充分混合均匀,置于23℃发酵22小时,使口感酸甜,促进物质分解,产生益生因子,利于吸收利用,加入食盐和麦绿素,混合均匀,置于4℃放置7小时,抑制杂菌生长,控制发酵,防止口感过酸,酸味适中,得发酵香菇浆;
(4)将西瓜子粉碎,粒径为2~3mm,得西瓜子粉,将锅烧热至134℃,关闭火源,倒入西瓜子粉,57转/分钟搅拌翻炒9分钟,得炒西瓜子粉;
(5)将玉米淀粉和紫薯淀粉混合均匀,得混合粉,加入发酵香菇,33转/分钟搅拌4.5分钟,加入混合粉重量2.3倍量的纯净水,分3次加入,每次间隔4分钟,搅拌12分钟,慢速搅拌,避免蛋白质析出,得淀粉浆;
(6)将低聚果糖和1/2富硒茶籽油加入锅中,加入低聚果糖重量0.3倍量的水,煮沸,加入淀粉浆,44转/分钟,搅拌熬煮27分钟,加入剩下1/2的富硒茶籽油,熬煮2分钟,加入低聚木糖,53转/分钟,搅拌熬煮17分钟,加入溶菌酶,搅拌熬煮5分钟,呈焦香粘稠状,得糖浆;
(7)将炒西瓜子粉均匀铺于模具底部,加入糖浆,均匀铺在模具里,表面均匀洒一层炒西瓜子粉,置于3℃的冷却室内冷却13分钟,脱模,切割,切面蘸一层炒西瓜子粉,得补硒牛皮糖;

一种补硒牛皮糖的制备方法,其具体步骤为:
(1)将富硒香菇洗净,打浆,过160目筛,充分粉碎,无颗粒感,得香菇浆;
(2)将白薇、马鞭草、牛蒡子和款冬粉碎,过140目筛,得中药粉,加入中药粉重量4倍量的纯净水,混合均匀,加入复合酶,搅拌均匀,置于39℃水浴,49转/分钟,搅拌酶解5小时,加热煮沸后,停火,浸泡3小时,10000转/分钟离心12分钟,得提取液和中药渣,向药渣中加入药渣重量3倍量的体积分数为64%的酒精溶液,36转/分钟,搅拌处理40分钟,充分提取有效成分,提高中药利用率,10000转/分钟离心10分钟,得提取液和中药渣,合并所有提取液,69℃烘箱中干燥至无水分含量为香菇重量的2.4倍,得中药提取物;
(3)将中药提取物与香菇浆混合均匀,加入富硒牛奶和善存粉,36转/分钟搅拌14分钟,加入开菲尔,44转/分钟搅拌15分钟,充分混合均匀,置于24℃发酵24小时,使口感酸甜,促进物质分解,产生益生因子,利于吸收利用,加入食盐和麦绿素,混合均匀,置于5℃放置8小时,抑制杂菌生长,控制发酵,防止口感过酸,酸味适中,得发酵香菇浆;
(4)将西瓜子粉碎,粒径为2~3mm,得西瓜子粉,将锅烧热至136℃,关闭火源,倒入西瓜子粉,58转/分钟搅拌翻炒10分钟,得炒西瓜子粉;
(5)将玉米淀粉和紫薯淀粉混合均匀,得混合粉,加入发酵香菇,34转/分钟搅拌5分钟,加入混合粉重量2.4倍量的纯净水,分4次加入,每次间隔3分钟,搅拌12分钟,慢速搅拌,避免蛋白质析出,得淀粉浆;
(6)将低聚果糖和1/2富硒茶籽油加入锅中,加入低聚果糖重量0.4倍量的水,煮沸,加入淀粉浆,45转/分钟,搅拌熬煮28分钟,加入剩下1/2的富硒茶籽油,熬煮3分钟,加入低聚木糖,54转/分钟,搅拌熬煮18分钟,加入溶菌酶,搅拌熬煮6分钟,呈焦香粘稠状,得糖浆;
(7)将炒西瓜子粉均匀铺于模具底部,加入糖浆,均匀铺在模具里,表面均匀洒一层炒西瓜子粉,置于4℃的冷却室内冷却14分钟,脱模,切割,切面蘸一层炒西瓜子粉,得补硒牛皮糖;
(8)用石头纸进行包装,得成品。
对比例
市售普通牛皮糖。
实施例和对比例牛皮糖的感官评定:
随机选择30人,每人对实施例和对比例的牛皮糖进行评定,每项满分10分,分别对每项进行打分,结果取平均值,并根据分数解释牛皮糖的各指标特征。实施例和对比例牛皮糖的感官评定结果见表1。

从表1的结果表明,本发明的补硒牛皮糖,色泽混匀,口感丰富,香味浓郁、和谐,酸甜适口,软硬适中,爽弹,不粘牙,得到广大消费者的喜爱。
实施例和对比例牛皮糖的保健效果:
有效:不适症状减轻或消失;
无效:不适症状不变或更加严重。
随机选择关节炎、高血压、健忘、免疫力低下、痤疮、胃肠功能障碍和高血糖的患者各100名,随机分为2组,每组50名,所有患者受试前3天停用所有药物,实施例和对比例组每人每天食用该组牛皮糖20克,受试时间为30天。实施例和对比例牛皮糖的保健效果见表2。

从表2可以看出,实施例的补硒牛皮糖分别经多种疾病的患者食用后,能够有效抑制多种疾病,减轻疾病症状,其有效率明显较对比例高,说明本发明提供的补硒牛皮糖具有较好的保健效果。

1.一种补硒牛皮糖,其特征在于,由以下重量份的原料制成:低聚果糖56~58、低聚木糖41~43、玉米淀粉27~29、紫薯淀粉16~18、富硒茶籽油16~18、富硒香菇12~14、西瓜子10~11、富硒牛奶5~6、白薇1.4~1.6、马鞭草1.4~1.6、牛蒡子1.1~1.3、款冬0.4~0.6、食盐0.4~0.6、开菲尔0.6~0.8、麦绿素0.2~0.3、善存粉0.2~0.3、溶菌酶0.02~0.03。

(1)将富硒香菇洗净,打浆,过140~160目筛,得香菇浆;
(2)将白薇、马鞭草、牛蒡子和款冬粉碎,过120~140目筛,得中药粉,加入中药粉重量3~4倍量的纯净水,混合均匀,加入复合酶,搅拌均匀,置于38~39℃水浴,47~49转/分钟,搅拌酶解4~5小时,加热煮沸后,停火,浸泡2~3小时,10000转/分钟离心12分钟,得提取液和中药渣,向药渣中加入药渣重量2~3倍量的体积分数为62~64%的酒精溶液,34~36转/分钟,搅拌处理36~40分钟, 10000转/分钟离心10分钟,得提取液和中药渣,合并所有提取液,67~69℃烘箱中干燥至无水分含量为香菇重量的2.2~2.4倍,得中药提取物;
(3)将中药提取物与香菇浆混合均匀,加入富硒牛奶和善存粉,34~36转/分钟搅拌12~14分钟,加入开菲尔,42~44转/分钟搅拌13~15分钟,充分混合均匀,置于22~24℃发酵20~24小时,加入食盐和麦绿素,混合均匀,置于3~5℃放置6~8小时,得发酵香菇浆;
(4)将西瓜子粉碎,粒径为2~3mm,得西瓜子粉,将锅烧热至132~136℃,关闭火源,倒入西瓜子粉,56~58转/分钟搅拌翻炒8~10分钟,得炒西瓜子粉;
(5)将玉米淀粉和紫薯淀粉混合均匀,得混合粉,加入发酵香菇,32~34转/分钟搅拌4~5分钟,加入混合粉重量2.2~2.4倍量的纯净水,搅拌9~12分钟,得淀粉浆;
(6)将低聚果糖和1/2富硒茶籽油加入锅中,加入低聚果糖重量0.3~0.4倍量的水,煮沸,加入淀粉浆,43~45转/分钟,搅拌熬煮26~28分钟,加入剩下1/2的富硒茶籽油,熬煮2~3分钟,加入低聚木糖,52~54转/分钟,搅拌熬煮16~18分钟,加入溶菌酶,搅拌熬煮4~6分钟,得糖浆;
(7)将炒西瓜子粉均匀铺于模具底部,加入糖浆,均匀铺在模具里,表面均匀洒一层炒西瓜子粉,置于2~4℃的冷却室内冷却12~14分钟,脱模,切割,切面蘸一层炒西瓜子粉,得补硒牛皮糖;
(8)用石头纸进行包装,得成品。
5.根据权利要求4所述补硒牛皮糖的制备方法,其特征在于,所述步骤(5)的加水,分3~4次加入,每次间隔3~4分钟。
