Abstract
本发明公开了一种能量型可吸果冻功能饮料的配方及其制备方法,所述可吸果冻以每100g计,由下述重量配比的原料组成:氯化钾37‑43mg;刺槐豆胶30‑34mg、结冷胶139‑161mg、黄原胶30‑34mg;麦芽糊精MD10 4.7‑5.5g;麦芽糊精MD20 11‑13g;异构化糖F‑55 7.5‑8.8g;柠檬酸三钠64‑74mg;B族维生素复合物28‑32mg;抗坏血酸VC2.7‑3.2mg;葡萄浓缩果汁555‑645mg、柠檬酸146‑169mg;乳酸钙185‑215mg;香料65‑75mg;维生素E 12‑14mg;水余份。制备方法包括凝胶剂的制备和可吸果冻的制备;本发明产品口感好、清爽和具有葡萄香味,不仅具有营养价值较高、绿色安全等特点,而且还具有能够为白领阶层和特殊人群或者在特殊环境下工作人群迅速补充能量的特点。可以在补充水分的同时,基本满足消费人群早餐的能量需要,发挥应激状态下迅速补充能量的作用。
Description
技术领域
本发明涉及食品加工领域,具体地说是一种主要面向白领阶层、特殊人群和特殊环境下作业人群的能量型可吸果冻功能饮料的配方及其制备方法。
背景技术
由于社会分工的不同,职业的多样化已成为当今时代的一大特征。当代白领阶层,由于工作压力大,生活节奏加快,一般很少有时间吃早餐补充能量,再加上工作任务大多比较繁重,经常加班,机体和大脑常处于高度的紧张状态,很容易出现各种不良后果,需要在工作途中补充能量。另一方面,也出现了许多在特殊环境下工作的人群,如在高温和低温环境下工作的人群,专门从事体育运动的人群,日夜倒班的工作人群以及高强度的脑力劳动者等。在这样的工作环境下,这些人群的基础代谢率增加,应激反应增强,能量消耗的速度加快,如果得不到能量的及时补充,很容易出现全身无力、心慌气短、甚至晕厥的症状,严重时可能危及生命。目前,市场上相关的功能饮料以添加维生素和矿物质、调节机体代谢为主,还缺乏能够迅速补充能量的类型。在果冻类产品中,更没有将补充能量和调节代谢相结合的产品。因此,本发明专利的目的是研发出一种既能够迅速补充能量,又能够促使机体代谢处于良好状态的能量型可吸果冻功能饮料。
发明内容
本发明弥补了果冻市场上能量型功效产品的空白,提供一种能量型可吸果冻功能饮料的配方及其制备方法。该可吸果冻能够为白领阶层、特殊人群和特殊环境下工作人群迅速补充能量;同时也可作为休闲食品提供给广大消费者,特别是旅游爱好者,在补充水分的同时迅速补充能量。
本发明采用如下技术方案:
能量型可吸果冻功能饮料,其特点在于,所述可吸果冻饮料以每100g产品中含有原料计,由下述重量配比的原料组成:
氯化钾37-43mg;刺槐豆胶30-34mg、结冷胶139-161mg、黄原胶30-34mg;麦芽糊精MD10 4.7-5.5g、麦芽糊精MD20 11-13g;异构化糖F-55 7.5-8.8g;柠檬酸三钠64-74mg;B族维生素复合物28-32mg;抗坏血酸VC 2.7-3.2mg;葡萄浓缩果汁555-645mg;柠檬酸146-169mg;乳酸钙185-215mg;香料65-75mg;维生素E 12-14mg;水余份。
作为优选,所述异构化糖F-55由葡萄糖和果糖组成,所述果糖含量为55%。
作为优选,所述的麦芽糊精MD10,是还原糖(以葡萄糖计)占糖浆干物质的百分比即DE值低于11%。
作为优选,所述的麦芽糊精MD20,是还原糖(以葡萄糖计)占糖浆干物质的百分比即DE值在16%-20%之间。
作为优选,所述的维生素复合物为水溶性的B族维生素,其中包括维生素B1、维生素B2、维生素B6、维生素B12、烟酸、泛酸和叶酸。所述维生素B族各组分在100g产品中含量为;维生素B1 0.03-0.06mg,维生素B2 0.06-0.1mg,维生素B6 0.1-0.12mg,维生素B120.15-0.2mg,烟酸0.9-1.5mg,泛酸0.3-0.9mg。
作为优选,所述的抗坏血酸VC为具有生理活性的L-抗坏血酸。
作为优选,所述葡萄浓缩果汁可溶性固形物(以20℃折光计法)为12%-15%,总酸为0.3-0.5%。
上述能量型可吸果冻功能饮料的制备方法,包括如下步骤(以生产1000g产品计):
一、凝胶剂的制备
(1)取质量分数0.4%的氯化钾溶液100ml,向其加入320mg的刺槐豆胶和1.5g的结冷胶,在室温条件下边搅拌边加水110ml至溶液呈胶体状;
(2)向步骤(1)所得的胶体状溶液中加入320mg的黄原胶,再加入麦芽糊精MD10588mg,边搅拌边加水17ml至溶液再次呈胶体状,即得凝胶剂,所得凝胶剂常温放置备用;
二、可吸果冻饮料的制备
(1)向调配罐内加入300ml的水和82g的异构化糖并搅拌,再加入麦芽糊精MD20120g和麦芽糊精MD1050g,搅拌并确认完全溶解,控制罐内温度在45℃-50℃,然后再加入步骤(一)制备的凝胶剂;搅拌至凝胶剂均匀分散于溶液中;
(2)向调制罐中加入60℃的温水65ml,然后依次加入柠檬酸三钠690mg、B族维生素复合物300mg、抗坏血酸VC 30mg、葡萄浓缩果汁6ml;再加入50℃的温水18ml后,再依次加入柠檬酸1.5g、乳酸钙2g、维生素VE 130mg和香料700mg;最后用50℃的温水定容至1000ml,并保持调配罐的温度50℃-55℃,搅拌均匀即得能量型可吸果冻饮料。
本发明中各组分的有益功能列举如下:
1、本发明中的麦芽糊精MD10作为增稠剂与凝胶剂协同作用,使得产品的形态更加稳定,粘稠度适中,凝胶效果良好。麦芽糊精MD20作为“主能量源”使用,能够被人体迅速吸收并及时提供能量,是产品的主配方之一。
2、本发明中的B族维生素起着辅酶作用,是参与机体糖类、蛋白质、脂肪代谢的不可缺少的物质,加入产品之后能促进麦芽糊精迅速被人体利用。B族维生素是水溶性的维生素,白领阶层、特殊人群和特殊环境下工作人员的机体代谢加快,容易导致B族维生素的缺失,加入产品能给机体补充易缺失的B族维生素,维持机体健康。
3、本发明中的维生素C的补充有利于特殊环境下工作人群的肝脏代谢和解毒,同时产品中的麦芽糊精以及葡萄浓缩果汁中的还原糖也有利于维生素C的保存。在高强度的工作条件下维生素C会随汗液排出,所以需要补充VC。
4、本产品中添加了维生素E,它能够提高人体抗氧化能力,尤其是在过度劳累、训练完之后以及紧张的环境下。维生素E还能够促进肌肉对氧气的吸收,减轻疲劳,有助于缓解腿的抽筋和手足僵硬现象的发生。
5、本发明中葡萄浓缩果汁也是产品的主要配方之一,加入的目的一是:葡萄浓缩汁中含有丰富的还原糖,主要是葡萄糖,它与麦芽糊精一起为人体迅速提供能量,是一种高GI物质。二是:葡萄浓缩果汁里面含有丰富的有机酸和矿物质,不仅能够维持人体酸碱平衡,而且还能补充因排汗而带出的矿物质;三是:葡萄浓缩汁拥有着诱人的香气和良好的口感,加入产品之后能提升产品的品质,增进消费者的购买欲望。
6、本发明中的柠檬酸主要调节产品风味,赋予产品酸味,是一种良好的酸味剂,同时还具有降低pH抑制细菌生长的特点。柠檬酸钠也可作为酸度调节剂和风味剂使用,同时可起到缓冲剂的作用,能够提高糖原的利用率。
7、本发明中的香料作为赋香剂或加香剂,可用来改善或增强食品的香气和香味,使产品在味觉上更加吸引消费者。
8、本发明提供了一种能量型可吸果冻功能饮料的配方和其制备方法。该可吸果冻饮料能够为白领阶层和在特殊环境下作业或者高强度工作状态的人群在补充水分的同时迅速补充供能量,缓解因能量消耗过多而出现的身体异常症状。
9、本发明中刺槐豆胶与黄原胶复配之后有良好的凝胶协同效应,可使复合后的用量水平很低并改善凝胶组织结构,可提高黏度或形成凝胶。同时结冷胶的使用让凝胶富含汁水,有良好的风味释放性和入口即化的口感,满足消费者的感官嗜好,最为重要的是结冷胶的加入使黄原胶-刺槐豆胶的凝胶强度降低、弹性增强,更符合可吸果冻柔软、爽脆的特点。
10、本发明中的异构化糖F-55由葡萄糖和果糖组成,所述果糖含量为55%,它与麦芽糊精MD20以及浓缩葡萄汁等共同发挥供给能量的作用,都含有能被人体迅速吸收、利用的葡萄糖,可快速地向人体、特别是大脑组织提供能量。

具体实施方式
以下通过具体实施方式对本发明技术方案做进一步解释说明。
一种能量型可吸果冻功能饮料,其特征在于,所述可吸果冻饮料以每100g产品中含有原料计,由下述重量配比的原料组成:
氯化钾37-43mg;刺槐豆胶30-34mg、结冷胶139-161mg、黄原胶30-34mg;麦芽糊精MD10 4.7-5.5g;麦芽糊精MD20 11-13g;异构化糖F-55 7.5-8.8g;柠檬酸三钠64-74mg;B族维生素复合物28-32mg;抗坏血酸VC 2.7-3.2mg;葡萄浓缩果汁555-645mg、柠檬酸146-169mg;乳酸钙185-215mg、香料65-75mg;维生素E 12-14mg;水余份。
异构化糖F-55由葡萄糖和果糖组成,所述果糖含量为55%。
麦芽糊精MD10,是还原糖(以葡萄糖计)占糖浆干物质的百分比即DE值低于11%。
麦芽糊精MD20,是还原糖(以葡萄糖计)占糖浆干物质的百分比即DE值在16%-20%之间。
麦芽糊精MD10在产品中能够改变体系的粘度,有较好的乳化作用和增稠效果,它与产品中的凝胶剂相互协同作用,使产品的形态趋于稳定,粘稠度适中,凝胶效果良好。
麦芽糊精MD20作为主能量源来使用,它是一种高GI的物质,摄入后能够迅速被吸收和利用,为人体提供能量。
葡萄浓缩果汁可以直接从市场购买(江苏丰泽土畜产品有限公司),也可以通过以下方式制备:
原料的选择——清洗——去梗——破碎——加热提色——压榨过滤——澄清加热——杀菌冷却
1、原料的选择:选择良好风味汁多的品种,果实要新鲜、充分成熟,剔除未成熟的果实。
2、清洗:将果实用质量浓度为0.03%的高锰酸钾溶液浸3分钟,接着在流动的清水中清洗。
3、去梗:将果实去梗,同时注意不要将果肉扯坏。
4、破碎榨汁:葡萄沥干后进行破碎处理。破碎方法是机械破碎,采用榨汁机进行榨汁(YZ108H,浙江永康食品机械厂)其原理是利用压辊间的挤压力或刀片的切割力进行破碎。
5、加热提色:将破碎果实加热至60~70℃,维持15分钟,使葡萄的色素充分渗入果汁中。
6、压榨过滤:用压榨机或手工压榨破碎果实取汁,并用绒布袋过滤、除渣,将清汁移入贮料桶中,即得葡萄浓缩果汁。
7、澄清加热:采用明胶-单宁法来进行澄清,即100ml果汁中加入4-6mg的单宁,经过8小时之后再加入6-10mg的明胶,澄清温度以8-12℃为宜。当果汁絮状物全部沉入底部时,用虹吸管吸出澄清液,将果汁加热到80-85℃。
8、杀菌冷却:将葡萄汁在85℃水浴加热15分钟,以达到杀灭致病菌和有害菌的目的。
葡萄浓缩果汁可溶性固形物为12%-15%,总酸为0.3-0.5%,细菌总数小于100个/100ml,大肠杆菌小于6个/100ml,致病菌不得检出。
当然,本发明并不局限于上述方法制备的葡萄浓缩果汁。
麦芽糊精MD10和MD20有普通市售产品(山东鲁科化工有限责任公司)。
B族维生素和抗坏血酸以及维生素E也有市售产品(河南金润食品添加剂有限公司)。
香料可选天然香料,采用墨红浸膏,是由石油醚浸提墨红鲜花制取浸膏,得膏率一般为0.14%-0.16%。是一种橙红色膏状物,具有纯正的墨红鲜花香气,多用于饮料中,可用于调配杏子、桃子、苹果、草莓等果香型(产品名称:墨红浸膏商家:杭州方鸿日化有限公司)
上述能量型可吸果冻功能饮料的制备方法,包括如下步骤(以制备1000g产品计):
一、凝胶剂的制备
(1)取质量分数0.4%的氯化钾溶液100ml,加入320mg的刺槐豆胶和1.5g的结冷胶,在室温条件下边搅拌边加水110ml至溶液呈胶体状;
(2)向步骤(1)所得的胶体状溶液中加入320mg的黄原胶,再加入麦芽糊精MD10588mg,边搅拌边加水17ml至溶液再次呈胶体状,即得凝胶剂,所得凝胶剂常温放置备用;
二、可吸果冻饮料的制备
(1)向调配罐内加入300ml的水和82g的异构化糖并搅拌,再加入麦芽糊精MD20120g以及麦芽糊精MD10 50g,搅拌并确认完全溶解,罐内温度控制在45℃-50℃,然后再加入步骤(一)制备的凝胶剂;搅拌至凝胶剂均匀分散于溶液中;
(2)向调制罐中加入60℃的温水65ml后,依次加入柠檬酸三钠690mg、B族维生素复合物300mg、抗坏血酸VC 30mg、葡萄浓缩果汁6ml;再加入50℃的温水18ml后,再依次加入柠檬酸1.5g、乳酸钙2g、维生素VE 130mg和香料700mg;最后用50℃的温水定容至1000ml,并保持调配罐的温度50℃-55℃;搅拌均匀即得能量型可吸果冻功能饮料;将所得的能量型可吸果冻功能饮料在50-55℃条件下迅速装袋,并采用巴氏杀菌技术于85℃灭菌10min,冷却至常温即得可吸果冻功能饮料成品。
本发明将麦芽糊精和B族维生素一起加入果冻凝胶中制备出一种能量型可吸果冻功能饮料,并提供其制备方法,为果冻行业开拓了新的市场,丰富了果冻的品种,同时扩大消费人群的范围。能量型可吸果冻功能饮料的研制弥补了果冻市场上此类产品的缺乏,它不仅具有营养价值较高、绿色安全、轻巧便携的特点,而且还具有能够为白领阶层和特殊人群或者在特殊环境下工作人群迅速补充能量的特点。本实施例产品口感好、清爽和具有苹果香味。若产品以250g/袋来生产,每袋能够提供1000-1300KJ的热量,相当于1小碗米饭具有的能量,可以在补充水分的同时,基本满足白领人群早餐的能量需要,也能发挥应激状态下迅速补充能量的作用。B族维生素主要作为辅酶来参与体内糖类、蛋白质和脂肪的代谢,尤其在糖类代谢中发挥关键作用。对于本发明产品来说麦芽糊精和B族维生素的加入,前者能够及时满足机体对能量的需要,后者则参与能量的代谢,二者协同作用,共同发挥能量型可吸果冻功能饮料的功效。
Claims (6)
1.能量型可吸果冻功能饮料,其特征在于,所述可吸果冻功能饮料以每100g计,由下述重量配比的原料组成:
氯化钾37-43mg;
刺槐豆胶30-34mg、结冷胶139-161mg、黄原胶30-34mg;
异构化糖F-55 7.5-8.8g;
柠檬酸三钠64-74mg;
麦芽糊精MD10 4.7-5.5g、麦芽糊精MD20 11-13g;
葡萄浓缩果汁 555-645mg;
B族维生素复合物28-32mg;抗坏血酸VC 2.7-3.2mg;
维生素E 12-14mg;
柠檬酸146-169mg;
乳酸钙 185-215mg;
香料 65-75mg;
水余量。
2.根据权利要求1所述的能量型可吸果冻功能饮料,其特征在于,所述异构化糖F-55由葡萄糖和果糖组成,所述果糖含量为55%。
3.根据权利要求1所述的能量型可吸果冻功能饮料,其特征在于,所述的麦芽糊精选自MD10和MD20,其DE值的范围分别为<11%和16%~20%。
4.根据权利要求1所述的能量型可吸果冻功能饮料,其特征在于,所述葡萄浓缩果汁,总酸为0.3-0.5%,可溶性固形物为12%-15%。
5.根据权利要求1所述的能量型可吸果冻功能饮料,其特征在于,所述B族维生素包括如下组分:维生素B1、维生素B2、维生素B6、维生素B12、烟酸、泛酸和叶酸;所述B族维生素各组分在100g可吸果冻功能饮料中含量为:维生素B1 0.03-0.06mg,维生素B2 0.06-0.1mg,维生素B6 0.1-0.12mg,维生素B12 0.15-0.2mg,烟酸 0.9-1.5mg,泛酸0.3-0.9mg。
6.能量型可吸果冻功能饮料的制备方法,其特征在于,包括如下步骤:
一、凝胶剂的制备
(1)取质量分数0.4%的氯化钾溶液100 ml,向其加入320 mg的刺槐豆胶和1.5g的结冷胶,在室温条件下边搅拌边加水110 ml至溶液呈胶体状;
(2)向步骤(1)所得的胶体状溶液中加入320 mg的黄原胶,再加入麦芽糊精MD10588mg,边搅拌边加水17 ml至溶液再次呈胶体状,稠度适中,即得凝胶剂,所得凝胶剂常温放置备用;
二、可吸果冻饮料的制备
(1)向调配罐内加入300 ml的水和82g的异构化糖并搅拌,再加入麦芽糊精MD20 120 g以及麦芽糊精MD10 50g,搅拌并确认完全溶解,罐内温度控制在45℃-50℃,然后再加入步骤(一)制备的凝胶剂;搅拌至凝胶剂均匀分散于溶液中;
(2)向调制罐中加入60℃的温水65 ml,然后依次加入柠檬酸三钠690 mg、B族维生素复合物300 mg、抗坏血酸VC 30 mg、葡萄浓缩果汁6 ml;再加入50℃的温水18 ml后,再依次加入柠檬酸1.5 g、乳酸钙2 g、维生素VE 130 mg、香料700 mg;最后用50℃的温水定容至1000ml,并保持调配罐的温度50℃-55℃,搅拌均匀即得能量型可吸果冻功能饮料。
