Abstract
本发明公开了一种维生素可吸果冻饮料及其制备方法,所述可吸果冻饮料以每100g产品中含有原料计,由下述重量配比的原料组成:氯化钾17‑30mg、氯化钠35‑50mg、氯化镁1‑3mg;刺槐豆胶40‑47mg、结冷胶145‑180mg、黄原胶40‑60mg;异构化糖F‑5510‑15g;柠檬酸三钠10‑24mg、谷氨酸钠1‑3mg;复合维生素55‑120mg、柠檬透明浓缩果汁0.8‑1.2g、维生素E 1‑3mg、柠檬酸110‑180mg;乳酸钙170‑300mg、香料110‑240mg,水余份。制备方法包括凝胶剂的制备和可吸果冻饮料的制备两个步骤;本发明克服了现有可吸果冻饮料市场上缺乏维生素类型、适合人群面狭窄的不足。富含多种维生素,具有提高机体免疫力、调节新陈代谢、维持生理稳定以及适应面广、携带方便等诸多优点。其中的刺槐豆胶和黄原胶作为可溶性的膳食纤维,能够促进肠胃蠕动,可舒解便秘,具有通便作用。
Description
技术领域
本发明涉及食品加工领域,具体地说是一种面向多数人群的维生素可吸果冻饮料的新配方及其制备方法。
背景技术
所谓可吸果冻饮料指的是内容物从包装容器倒出后,呈半流体凝胶状,能够用吸管或吸嘴直接吸食的果冻。现有的可吸果冻饮料产品多是针对儿童而设计,主要从色泽、包装、口味上去吸引他们,大众化的可吸果冻饮料产品在市场上极为少见,尤其是添加维生素的可吸果冻饮料更是没有。目前市场上只存在液态形式的维生素功能饮料,携带上的不方便,尤其是女性朋友在外出的时候放在包里更为不便。而本专利的维生素可吸果冻饮料是一种袋装携带方便的产品,既解决了携带上的不便又补充了人体所必须的各种维生素,且具有整场通便的作用。
维生素是维持人体生命过程所必需的在化学结构上没有共同性的一类微量、低分子有机化合物。近年来,有关维生素的作用有不少新发现,证明它不仅是防止多种缺乏病的必需营养素,而且具有预防多种慢性、退化性疾病的保健功能。在生活节奏加快、工作压力增大、饮食欠规律的现代生活中,维生素的摄入不足成为一个普遍的营养问题,对国民健康有较大影响。另一方面,便秘也是困扰中老年人,尤其是职场女性的一个健康问题。职场女性由于多呆在办公桌前,身体缺乏活动,外加饮食的不规律,使肠道肌肉松弛,蠕动功能减弱:加之女性身腹肌较弱,送便排出的力量弱,因此,肠内容物在肠道积存过久,水分被吸收,变成难以排出的粪便,从而产生便秘。如何开发一种适用面广、携带方便、富含维生素同时也可缓解便秘的可吸式果冻饮料是本发明需要解决的问题。
发明内容
本发明为了避免现有饮料市场和技术存在的不足,提供一种富含各种维生素的可吸果冻饮料配方及其制备方法。该可吸果冻饮料具有开胃通便、增加食欲、促进新陈代谢、消除疲劳、增强体质、缓解便秘的功效。
本发明解决技术问题采用如下技术方案:
维生素可吸果冻饮料,其特点在于,所述可吸果冻饮料以每100g产品中含有原料计,由下述重量配比的原料组成:
氯化钾17-30mg、刺槐豆胶40-47mg、结冷胶145-180mg、黄原胶40-60mg、异构化糖F-55 10-15g、柠檬酸三钠10-24mg、氯化钠35-50mg、氯化镁1-3mg、谷氨酸钠1-3mg、复合维生素55-120mg、柠檬透明浓缩果汁0.8-1.2g、维生素E 1-3mg、柠檬酸110-180mg、乳酸钙170-300mg、香料110-240mg;水余份。
作为优选,所述异构化糖F-55由葡萄糖和果糖组成,所述果糖含量为55%。
作为优选,所述维生素为复合维生素B族、维生素C和维生素E,B族维生素包括如下组分:维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸和泛酸。所述各维生素组分在100g产品中的含量为:维生素B1 0.1-0.2mg、维生素B2 0.2-0.3mg、维生素B6 0.3-0.4mg、维生素B12 0.5-0.7ug、烟酸3-5mg、叶酸55-60mg、泛酸1-3mg、维生素C 10-15mg;维生素E1-3mg。
作为优选,所述柠檬透明浓缩果汁白利糖度为60.0-65.0,总酸为2.30-2.50%,糖酸比为24.0-28.3。
上述维生素可吸果冻饮料的制备方法,包括如下步骤:
一、凝胶剂的制备
(1)取质量分数0.18%的氯化钾溶液170g,向其加入700mg的刺槐豆胶和2.5g的结冷胶,边搅拌边加水30ml至溶液呈胶体状;
(2)向步骤(1)所得的胶体状溶液中加入160ml水稀释并搅拌呈胶体状,然后再加入700mg的黄原胶,边搅拌边加水30ml至溶液再次呈胶体状,即得凝胶剂,所得凝胶剂常温放置备用;
二、可吸果冻饮料的制备
(1)向调制罐中加入680ml水,然后加入193g的异构化糖,搅拌的同时将罐内溶液加热至45℃-50℃,然后再加入步骤(1)制备的凝胶剂;搅拌至凝胶剂均匀分散于溶液中;
(2)向调制罐中加入50-55℃的温水120ml,再依次加入柠檬酸三钠250mg、氯化钠700mg、氯化镁35mg、谷氨酸钠35mg、复合维生素2g、柠檬透明浓缩果汁170g、维生素E 26mg,搅拌至所添加物质完全溶解于溶液中并分散均匀;
(3)再次向调制罐中加入30ml 50-55℃的温水,然后加入2.5g的柠檬酸和4g的乳酸钙,并搅拌均匀,再加入香料2.5g并搅拌均匀,最后用50-55℃温水将调制罐内粘稠状溶液定容至1600ml,并搅拌均匀即得维生素可吸果冻饮料。
本发明中各组分的有益功能列举如下:
1、本发明柠檬酸三钠即柠檬酸钠,作为酸度调节剂和风味剂,能够与柠檬酸共同调节饮料的最佳酸度。
2、本发明加入氯化钠是作为调味剂,提供给人体必需的钠离子。
3、本发明微量的镁离子可以作为镁离子营养强化剂,可补充人体少量的镁离子。
4、本发明谷氨酸钠作为增味剂而添加,可以增加产品的风味,使产品的整体感受态变得丰富。
5、本发明柠檬酸透明浓缩果汁作为产品的主要配方,作为酸味剂使用,加入的目的一是:它作为产品的主要成分,外观呈现柠檬黄色,加入之后能够改善产品的感官性状,并促进食欲;而且有良好的柠檬香气和口感,从感官上增加消费者的喜好程度。二是:柠檬透明浓缩果汁里面含有丰富的有机酸,能够维持人体酸碱平衡;同时也含有人体所必须的微量元素,这样能够与维生素形成协同的作用,提高产品的营养价值和保健功能。
6本发明可吸果冻饮料中还含有乳酸钙,可作为钙的营养强化剂来使用,能给人体补充少量的钙。
7、本发明饮料中的香料作为赋香剂或加香剂,可用来改善或增强食品的香气和香味,使产品在味觉上更加吸引消费者。
8、本发明为维生素添加的可吸果冻饮料,克服了原有可吸果冻饮料当中的缺乏补充维生素的类型而设计,具有适合各种人群,携带方便、富含人体易于缺乏的多种维生素,具有提高机体免疫力、调节新陈代谢、维持生理稳定等优点。
9、本发明采用刺槐豆胶作为增稠剂、乳化剂和稳定剂,它与配方中的黄原胶亲水胶体有良好的凝胶协同效应,可使复合后的用量水平很低并改善凝胶组织结构,可提高黏度或形成凝胶。当槐豆胶和黄原胶混合液浓度达到1%左右时,复配胶的粘度是槐豆胶单胶溶液粘度的150倍左右,是黄原胶单胶溶液粘度的3倍左右。
10、本发明成分中的结冷胶的主要成分由葡萄糖、葡萄糖醛酸和鼠李糖按2:1:1的比例组成。结冷胶可作为增稠剂、稳定剂,加热即溶解成透明的溶液,冷却后,形成透明且坚实的凝胶。本配方利用它制成的凝胶富含汁水,具有良好的风味释放性,有入口即化的口感,可以提高消费者感官嗜好。同时将结冷胶加到黄原胶-刺槐豆胶中可使其凝胶硬度降低而弹性增强。
11、由于物质在小剂量的溶剂中很容易溶解混匀,如果直接加入大剂量的溶剂中由于空间过大搅拌不均匀从而导致物质溶解不完全,形成粘黏在一起的块状,因此本发明采用边搅拌边加水,使凝胶体混合物先形成均匀稳定的胶体溶液,然后再加水进行定容,使其混匀在大量的试剂中。
12、本发明配方中,维生素B1,复合后能预防和治疗,如“脚气病”,周围神经炎及消化不良;维生素B2,复合后能增强机体代谢,促进机体发育;维生素B6,复合后有助于预防各种神经和皮肤疾病,促进氨基酸的代谢;维生素B12,复合后能使肌体造血机能处于正常状态,预防恶性贫血;维护神经系统健康,促进碳水化合物、脂肪和蛋白质的代谢,参与神经组织中一种脂蛋白的形成,防止恶性贫血的发生;烟酸,参与体内脂质代谢,组织呼吸的氧化过程和糖类无氧分解的过程;叶酸,有助于预防神经管缺陷,对于孕妇而言还有助于降低宝宝其他类型的出生缺陷的风险,预防孕妇贫血,对于DNA和细胞的基本结构都非常重要;维生素E,能减少细胞耗氧量,使人更有耐久力,有助减轻腿抽筋和手足僵硬的状况,抗氧化保护机体细胞免受自由基的毒害,改善脂质代谢预防冠心病和动脉粥样硬化等作用。
13、本发明中含有维生素C,复合后能促进人体对铁和钙等矿物质的吸收利用,提高机体免疫力和抗氧化功能。
14、刺槐豆胶和黄原胶作为可溶性的膳食纤维,能够促进肠胃蠕动,可舒解便秘,具有通便作用。

具体实施方式
以下通过具体实施方式对本发明技术方案做进一步解释说明。
一种维生素可吸果冻饮料,其特征在于,所述可吸果冻饮料以每100g产品中含有原料计,由下述重量配比的原料组成:
氯化钾17-30mg、刺槐豆胶40-47mg、结冷胶145-180mg、黄原胶40-60mg、异构化糖F-55 10-15g、柠檬酸三钠10-24mg、氯化钠35-50mg、氯化镁1-3mg、谷氨酸钠1-3mg、复合维生素55-120mg、柠檬透明浓缩果汁0.8-1.2g、维生素E 1-3mg、柠檬酸110-180mg、乳酸钙170-300mg、香料110-240mg;水余份。
其中,异构化糖,又称为果葡糖浆或高果糖,主要由葡萄糖和果糖组成,异构化糖F-55中果糖含量为55%。
维生素为复合维生素B族、维生素C和维生素E,包括如下组分:维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸、维生素C和维生素E。所述各维生素组分在100g产品中的含量为:维生素B1 0.1-0.2mg、维生素B2 0.2-0.3mg、维生素B6 0.3-0.4mg、维生素B12 0.5-0.7ug、烟酸3-5mg、叶酸55-60mg、泛酸1-3mg、维生素C 10-15mg;维生素E 1-3mg。
柠檬透明浓缩果汁可以直接从市场购买所得,如济南真果食品有限公司生产的柠檬透明浓缩果汁,也可以通过以下方式制备:
原料的选择和洗涤——破碎——酶解和护色——榨汁——澄清和过滤——柠檬透明浓缩果汁
1、原料的选择和洗涤:选择有良好风味,色泽稳定,新鲜,无烂果的柠檬;
2、破碎:去除柠檬外皮,将果实放在破碎机进行破碎处理,破碎至3-4mm大小为宜;
3、酶解和护色:添加质量分数0.2-0.25%的果胶酶用于分解果肉组织中的果胶物质,使果汁粘度降低,易于榨汁过滤,提高出汁率。护色剂是添加质量分数0.05-0.1%的L-抗坏血酸,使制品呈现良好的色泽。
4、榨汁:采用榨汁机进行榨汁(YZ108H,浙江永康食品机械厂)
5、澄清和过滤:将榨出的果汁置于密闭容器中,长时间静置使悬浮物沉淀,使果胶质逐渐水解而沉淀,从而降低果汁的粘度,然后用三至四层纱布进行过滤即得柠檬透明浓缩果汁。
本发明柠檬透明浓缩果汁白利糖度为60.0-65.0,总酸为2.30-2.50%,糖酸比为24.0-28.3。
当然,本发明并不局限于上述柠檬透明浓缩果汁。
维生素VE为脂溶性维生素,在组分中为25-30mg,普通市售产品。
香料选自天然香料或人造香料,天然香料可优选为柠檬油,其状态为鲜黄色澄明的油状液体,具有清甜的柠檬果香味,主要成分为柠檬烯和柠檬醛。(产品名称:柠檬油商家:江西吉安海瑞天然植物有限公司)
上述维生素可吸果冻饮料的制备方法,包括如下步骤:
一、凝胶剂的制备
(1)取质量分数0.18%的氯化钾溶液170g,向其加入700mg的刺槐豆胶和2.5g的结冷胶,边搅拌边加水30g至溶液呈胶体状;
(2)向步骤(1)所得的胶体状溶液中加入160g水稀释并搅拌呈胶体状,然后再加入700mg的黄原胶,边搅拌边加水30g至溶液再次呈胶体状,即得凝胶剂,所得凝胶剂常温放置备用;
二、可吸果冻饮料的制备
(1)向调制罐中加入680g水,然后加入193g的异构化糖,搅拌的同时将罐内溶液加热至45℃-50℃,然后再加入步骤(1)制备的凝胶剂;搅拌至凝胶剂均匀分散于溶液中;
(2)向调制罐中加入50-55℃的温水120g,再依次加入柠檬酸三钠250mg、氯化钠700mg、氯化镁35mg、谷氨酸钠35mg、复合维生素2g、柠檬透明浓缩果汁170g、维生素E 26mg,搅拌至所添加物质完全溶解于溶液中并分散均匀;
(3)再次向调制罐中加入30g 50-55℃的温水,然后加入2.5g的柠檬酸和4g的乳酸钙,并搅拌均匀,再加入香料2.5g并搅拌均匀,最后用50-55℃温水将调制罐内粘稠状溶液定容至1600L,并搅拌均匀即得维生素可吸果冻饮料。
将所得的维生素可吸果冻饮料在50-55℃条件下迅速装袋,并采用巴氏杀菌技术于85℃灭菌10min,冷却至常温即得可吸果冻饮料成品。

1.维生素可吸果冻饮料,其特征在于,所述可吸果冻饮料以每100g 产品中含有原料计,由下述重量配比的原料组成:
氯化钾17-30mg、氯化钠35-50mg、氯化镁1-3mg;
刺槐豆胶40-47mg、结冷胶145-180mg、黄原胶40-60mg;
异构化糖F-55 10-15g;
柠檬酸三钠10-24mg、谷氨酸钠1-3mg;
复合维生素55-120mg、柠檬透明浓缩果汁0.8-1.2g、维生素E 1-3mg、柠檬酸110-180mg;
乳酸钙170-300mg、
香料110-240mg;
水余量;
所述柠檬透明浓缩果汁白利糖度为60.0-65.0,总酸为2.30-2.50%,糖酸比为24.0-28.3;
所述柠檬透明浓缩果汁制备方法如下:
1)原料的选择和洗涤:选择有良好风味,色泽稳定,新鲜,无烂果的柠檬;

3.根据权利要求1 所述的维生素可吸果冻饮料,其特征在于,所含维生素为复合维生素B 族、维生素C 和维生素E,B 族维生素包括如下组分:维生素B1、维生素B2、维生素B6、维生素B12、烟酸、泛酸和叶酸;
所述各维生素组分在100g 产品中的含量为:维生素B1 0.1-0.2mg、维生素B2 0.2-0.3mg、维生素B60.3-0.4mg、维生素B12 0.5-0.7ug、烟酸3-5mg、叶酸55-60mg、泛酸1-3mg、维生素C 10-15mg、维生素E 1-3mg。
4.维生素可吸果冻饮料的制备方法,其特征在于,包括如下步骤:
一、凝胶剂的制备
(1)取质量分数0.18%的氯化钾溶液170g,向其加入700mg 的刺槐豆胶和2.5g 的结冷胶,边搅拌边加水30ml 至溶液呈胶体状;
(2)向步骤(1)所得的胶体状溶液中加入160ml 水稀释并搅拌呈胶体状,然后再加入700mg 的黄原胶,边搅拌边加水30ml 至溶液再次呈胶体状,即得凝胶剂,所得凝胶剂常温放置备用;
二、可吸果冻饮料的制备
(1)向调制罐中加入680 ml 水,然后加入193g 的异构化糖,搅拌的同时将罐内溶液加热至45℃-50℃,然后再加入步骤(1)制备的凝胶剂;搅拌至凝胶剂均匀分散于溶液中;
(2)向调制罐中加入50-55℃的温水120ml,再依次加入柠檬酸三钠250mg、氯化钠700mg、氯化镁35mg、谷氨酸钠35mg、复合维生素2g、柠檬透明浓缩果汁170g、维生素E 26mg,搅拌至所添加物质完全溶解于溶液中并分散均匀;
(3)再次向调制罐中加入30ml 50-55℃的温水,然后加入2.5g 的柠檬酸和4g 的乳酸钙,并搅拌均匀,再加入香料2.5g 并搅拌均匀,最后用50-55℃温水将调制罐内粘稠状溶液定容至1600ml,并搅拌均匀即得维生素可吸果冻饮料。
