本发明涉及一种食品的加工方法,尤其是涉及一种灵芝保健糕的制作方法。
背景技术
桂花为木犀科。常绿乔木,高3-15米,枝灰色。叶对生,革质,长椭圆形,长6-12厘米,宽2-4.5厘米,全缘。花簇生于叶腋,花淡黄白色。核果椭圆形,熟时紫黑色。花芳香,提取芳香油,制桂花浸膏,可用于食品、化妆品的生产。花入药有散寒破结、化痰生津的功效。果榨油,食用。亦是观赏植物。桂花味辛,其花与根均可入药。有化痰、止咳、生津、止牙痛等功效。桂花味香持久,可制糕点、糖果,并可酿酒。桂花树根具有较好的药用价值,它的根有强筋骨、通血脉、暖腰膝、除淤血的作用;它的花有祛痰止咳和顺肺开胃的功能。
灵芝又称灵芝草、神芝、芝草、仙草、瑞草,是多孔菌科植物赤芝或紫芝的全株。以紫灵芝药效为最好,原产于亚洲东部,中国分布最广的在江西,灵芝作为拥有数千年药用历史的中国传统珍贵药材,具备很高的药用价值,经过科研机构数十年的现代药理学研究证实,灵芝对于增强人体免疫力,调节血糖,控制血压,辅助肿瘤放化疗,保肝护肝,促进睡眠等方面均具有显著疗效。灵芝其成份的主要特征是能抑制组织胺,具有抗炎抗过敏的效应,灵芝的高分子多醣体能增加人体之抗体,增强人体的免疫功能,此外,灵芝多醣体对降血压、降血糖、改善血脂都很有效果,灵芝的有机锗可促使人体血液循环,增强人体吸氧能力,促进新陈代谢。现代医学证明,灵芝含有多种生理活性物质,能够调节、增强人体免疫力,对神经衰弱、风湿性关节炎、冠心病、高血压、肝炎、糖尿病、肿瘤等有良好的协同治疗作用。最新研究表明:灵芝还具有抗疲劳,美容养颜,延缓衰老的功效。

本发明的目的提供一种灵芝保健糕的制作方法,能够发挥中药的保健治病功效的保健食品,能够利用保健食品的载体作用,使人们在日常的饮食中就能食用灵芝,增强体质。
本发明解决其技术问题所采取的技术方案是:
一种灵芝保健糕的制作方法,其特征在于:采用原料处理→搅拌→成型→烘烤→冷却→包装的加工工艺流程,具体操作步骤为:
(1)原料处理:先打鸡蛋,取蛋清液,和蔗糖、蜂蜜、灵芝提取液一同倒入搅拌机中搅拌10-15min,使混合液膨成泡沫状;再加入大豆蛋白粉、桂花粉轻轻搅拌使之混合,防止蛋白粉溅出;然后加入碳酸氢铵、香兰素搅拌1-2min,再加入高筋面粉、玉米淀粉搅拌25-30min;
(2)成型、烘烤:将拌好的糕料倒入模具中,用木杖起平,使之成型,撒上少许杏仁碎粒;将磨具入炉烘烤,温度控制在120-160℃,烘烤35-40min;
(3)冷却:从炉中取出模具,使之自然冷却,倒入糕块;
(4)包装:用食品包装纸逐块包装即可。

具体实施方式
实施例1:
一种灵芝保健糕的制作方法,具体操作步骤为:
(1)原料处理:先打鸡蛋,取蛋清液,和木糖醇、果葡糖浆、灵芝提取液一同倒入搅拌机中搅拌8min,使混合液膨成泡沫状;再加入大豆蛋白粉、蛋白糖轻轻搅拌使之混合,防止蛋白粉溅出;然后加入碳酸氢铵、香兰素、麦芽酚搅拌3-5min,再加入面粉、马铃薯淀粉、枸杞粉、山药粉搅拌45min;
(2)成型、烘烤:将拌好的糕料倒入模具中,用木杖起平,使之成型,撒上一层白芝麻;将磨具入炉烘烤,温度控制在180℃,烘烤20-25min;
(3)冷却:从炉中取出模具,使之自然冷却,倒入糕块;
(4)包装:用食品包装纸逐块包装即可。
实施例2:
一种灵芝保健糕的制作方法,具体操作步骤为:
(1)原料处理:先打鸡蛋,取蛋清液,和红糖、牛奶、甘草、灵芝提取液一同倒入搅拌机中搅拌18-20min,使混合液膨成泡沫状;再加入大豆蛋白粉、梅花粉轻轻搅拌使之混合,防止蛋白粉溅出;然后加入碳酸氢铵、香兰素、食用香精搅拌5-10min,再加入面粉、红枣泥、花生酱搅拌40min;
(2)成型、烘烤:将拌好的糕料倒入模具中,用木杖起平,使之成型,撒上少许瓜子仁;将磨具入炉烘烤,温度控制在220℃,烘烤45min;
(3)冷却:从炉中取出模具,使之自然冷却,倒入糕块;
(4)包装:用食品包装纸逐块包装即可。
