本发明涉及无花果醋技术领域,具体地说是一种营养价值高、改善人体内循环、增加食欲、健胃护肝、绿色健康的无花果蜜醋及制作方法,特征在于由新鲜无花果、绵白糖、冰糖、五味子、粮食酒、刺五加、枸杞和人参组成,新鲜无花果去绿皮加入绵白糖发酵,过程中加入冰糖、五味子、粮食酒、刺五加、枸杞和人参,制成无花果蜜醋,具有营养价值高、改善人体内循环、增加食欲、健胃护肝、绿色健康的等优点。

技术领域
本发明涉及无花果醋技术领域,具体地说是一种营养价值高、改善人体内循环、增加食欲、健胃护肝、绿色健康的无花果蜜醋及制作方法。
背景技术
食醋是一种酸味调味剂,按生产方法的不同有酿造食醋和人工合成食醋,酿造食醋是用含淀粉多粮食原料、糖类原料、食用酒精等经过微生物发酵制成的,人工合成食醋是以冰乙酸为主要原料勾兑而成的,按食醋酿造工艺、原料、风味的不同,又可分为“陈醋”、“香醋”、“米醋”、“熏醋”、“特醋”、“糖醋”、“麸醋”、“酒醋”、“白醋”等等,食醋的品种不同,酸度也有高有低,一般在2-9%之间,我国著名的食醋有山西老陈醋、镇江香醋、河南老鳖一特醋、四川保宁醋、天津独流老醋、连云港滴醋、福建红曲老醋等,现代医学和营养学研究证实,醋中含有丰富的有机酸,能软化植物纤维,促进糖的代谢,溶解动物类食品中骨质,促进钙、磷的吸收,并能解除肌肉中的疲劳物质乳酸和丙酮酸,调节血液中的酸碱平衡,帮助消化,促进食物中营养物质为人体所吸收,醋中的挥发性有机酸和氨基酸等可刺激人的大脑神经,促进消化液的分泌,并抑制和降低衰老过程中氧化物的形成。
目前,醋在中国菜的烹饪中有举足轻重的地位,常用于溜菜、凉拌菜等,西餐中常用于配制沙拉的调味酱或浸制酸菜,日本料理中常用于制作寿司用的饭,另外它还具有保健、药用、医用等多种功用,特别是现在由醋衍生出来的醋饮料,醋饮料可以将水果中的各种维生素,无机盐和其他微量元素较完整地保留下来,水果醋中含丰富的氨基酸,能提高身体的新陈代谢作用,防止脂肪堆积,促进体内脂肪分解。
众所周知,无花果中已知含有18种氨基酸,10种为人体所必需,且富含多种维生素,其中维生素A、C的含量尤其丰富;同时也是富硒水果,其含硒量是食用菌的100倍,是大蒜的400倍;所含有20%左右的果糖和葡萄糖,极易为人体所吸收利用,因此,无花果的食用功效是很大的,其果实乳汁对肉瘤、乳瘤、腺癌、白血病、淋巴肉瘤均有抑制作用;临床用于治疗各类恶性肿瘤,包括舌癌、肺癌、腮腺癌、胃癌、肝癌、结肠癌、肾癌等;无花果水提取液,具有降低血糖作用;无花果酵素与胃液混合,有助消化,但宜生食;无花果含有苹果酸、柠檬酸、脂肪酶、蛋白酶、水解酶等,能帮助人体对食物的消化,促进食欲,又因其含有多种脂类,故具有润肠通便的效果。
发明内容
本发明的目的是解决上述现有技术的不足,提供一种营养价值高、改善人体内循环、增加食欲、健胃护肝、绿色健康的无花果蜜醋及制作方法。
本发明解决其技术问题所采用的技术方案是:
一种无花果蜜醋,其特征在于由新鲜无花果、绵白糖、冰糖和粮食酒组成,上述各组成成分的重量比为:新鲜无花果8~20份,绵白糖2.5~7份,冰糖0.5~1.5份,粮食酒1~3份。
所述的一种无花果蜜醋,其特征在于由新鲜无花果、绵白糖、冰糖、五味子、粮食酒、刺五加、枸杞和人参组成,上述各组成成分的重量比为:新鲜无花果8~20份,绵白糖2.5~7份,冰糖0.5~1.5份,五味子0.2~1份,粮食酒1~3份,刺五加0.1~0.6份,枸杞0.1~0.6份,人参0.1~0.6份。
所述的一种无花果蜜醋,其特征在于最优化组成成分重量比为:新鲜无花果10份,绵白糖4份,冰糖1份,五味子0.5份,粮食酒1份,刺五加0.25份,枸杞0.25份,人参0.25份。
一种无花果蜜醋的制作方法,其特征在于制作步骤如下:
(1)首先制作醋窝,用纯粮食酒1~3份和绵白糖0.5~2份按照的比例混合,加入12~18份的纯净水,放入带盖的密封容器内培养1~3个月后,透明白色物质即为醋窝,醋窝及培养液体留待后面作为天然醋酸菌使用;
(2)取新鲜无花果去皮,然后加入绵白糖,放入容器内搅拌,然后加盖密封发酵3~6个月,每月开盖搅拌1~2次,并去除杂质;
(3)取步骤1中的醋窝及其液体加入到步骤2的容器内自然沉降;
(4)取五味子放入蒸锅中高温蒸10~20分钟,自然凉透后将五味子放入步骤3中的密封容器内轻微搅拌自然沉降,发酵15~30天后,再取刺五加、枸杞、人参干放入密封容器内轻微搅拌自然沉降,再加盖密封发酵1~2个月;
(5)向步骤4密封容器内加入绵白糖和冰糖,继续发酵1~2个月,达到醋酸浓度低于5%的蜜汁状态;
(6)将步骤5物质过滤,去除杂质和中药残留物,得到蜜醋。
本发明利用上述制备工艺得到的无花果蜜醋符合国家酿造食醋标准,其成品无花果蜜醋的理化指标具体为:
色泽:琥珀色或黄褐色;
形态:固体流质;
滋味:酸味柔和,回味绵长,具有无花果的果香;
总酸:(以乙酸计)(g/100ml)≥ 3.50。
本发明成分分析:
无花果:味甘、微辛,性平,有小毒;健脾,止泻;用于食欲减退、腹泻、乳汁不足;有滋补、润肠、开胃、催乳等作用。
冰糖:味甘、性平、无毒;归经,入肺、脾经;补中益气,和胃润肺,止咳化痰;养阴生津,润肺止咳,能补充体内水分和糖分,具有补充体液、供给能量、补充血糖、强心利尿、解毒等作用。
五味子:敛肺,滋肾,生津,收汗,涩精;治肺虚喘咳,口干作渴,自汗,盗汗,劳伤羸瘦,梦遗滑精,久泻久痢;主益气,咳逆上气,劳伤羸度,补不足,强阴。
刺五加:味辛;苦;微甘;性温;归肝经;肾经;祛风湿;补肝肾;强筋骨;活血脉;风寒湿痹;腰膝疼痛;筋骨痿软;行动迟缓;体虚羸弱;跌打损伤;骨折;水肿;脚气;阴下湿痒。
枸杞:甘平而润,性滋补;能补肾、润肺、生精、益气;具有补肾养肝、润肺明目等功效;抗衰老、抗肿瘤、抗疲劳、 抗辐射损伤、调节血脂、 降血糖、提高呼吸道抗病能力、美容养颜、滋润肌肤。
人参:补五脏、安精神、定魂魄、止惊悸、除邪气、明日开心益智;人参内含有一种叫人参皂甙的化学物质,它对调节人的中枢神经系统、强心、抗疲劳、调节物质代谢等有明显功效,所以对治疗神经系统.心血管系统、内分泌系统及生殖系统的多种疾病有很好的治疗作用。
本发明由于采用上述配方和制作方法,得到风味纯正、果香味浓郁的无花果蜜醋,同时添加醋窝作为引发剂,加快了发酵时间,同时由于醋窝是天然的粮食酒和绵白糖培养的,因此在加快发酵时间的同时,也不会影响无花果蜜醋的整体口感,蜜醋培养过程中添加五味子、刺五加、枸杞和人参,将中药功效加入到蜜醋中,增加了蜜醋改善内循环、提高抵抗力、降血脂等功效,而且,在整个制作过程中,无添加任何食品添加剂及防腐剂,具有营养价值高、改善人体内循环、增加食欲、健胃护肝、绿色健康的等优点。
具体实施方式
一种无花果蜜醋,其特征在于由新鲜无花果、绵白糖、冰糖、五味子、粮食酒、刺五加、枸杞和人参组成,上述各组成成分的重量比为:新鲜无花果8~20份,绵白糖2.5~7份,冰糖0.5~1.5份,五味子0.2~1份,粮食酒1~3份,刺五加0.1~0.6份,枸杞0.1~0.6份,人参0.1~0.6份,首先制作醋窝,用40~60度的纯粮食酒1份和绵白糖1份按照的比例混合,加入14份的纯净水,放入带盖的密封容器内培养1~3个月后,透明白色物质即为醋窝,醋窝及培养液体留待后面作为天然醋酸菌使用;然后取新鲜无花果去皮,然后加入1份绵白糖,放入容器内搅拌,然后加盖密封发酵3~6个月,每月开盖搅拌1~2次,并去除杂质;取0.2份醋窝及其液体加入到上述密封容器内自然沉降;再取0.5份五味子放入蒸锅中高温蒸10~20分钟,待自然凉透后,将五味子放入上述中的密封容器轻微搅拌自然沉降,发酵15~30天后,再取0.25份刺五加、0.25份枸杞、0.25份人参干放入容器内轻微搅拌自然沉降,再加盖密封发酵1~2个月,使中药有效成分浸出;向上述密封容器内加入1份绵白糖和1份冰糖,继续发酵1~2个月,达到醋酸浓度低于5%的流体蜜汁状态,将上述得到的物质过滤,去除杂质和中药残留物,即得到所需要的蜜醋,整个过程置于室内室温下阴凉透风干燥处发酵,该无花果蜜醋打破了传统的醋为液体的观念,而且醋有无花果的香甜,特别适合老人和小孩食用。
本发明利用上述制备工艺得到的无花果蜜醋符合国家酿造食醋标准,其成品无花果蜜醋的理化指标具体为:

实施例:
实施例1:新鲜无花果15份,绵白糖:5份,冰糖1.5份,五味子0.5份,粮食酒1份,刺五加0.2份,枸杞0.3份,人参0.5份。
实施例2:新鲜无花果18份,绵白糖6份,冰糖1.3份,五味子0.6份,粮食酒2份,刺五加0.4份,枸杞0.2份,人参0.4份。
实施例3:新鲜无花果9份,绵白糖7份,冰糖0.6份,五味子0.3份,粮食酒3份,刺五加0.6份,枸杞0.2份,人参0.2份。
人群试食结果:
通过统计发现,该蜜醋可以做调味品,也可以作为保健品,食用该蜜醋的人群,食欲大增,抵抗力增强,消脂抗压,融血栓,是餐桌必备品,特别是吃饭过程中融入养生理念,得到了广大中老人和小孩的喜爱。
Claims (4)
1.一种无花果蜜醋,其特征在于由新鲜无花果、绵白糖、冰糖和粮食酒组成,上述各组成成分的重量比为:新鲜无花果8~20份,绵白糖2.5~7份,冰糖0.5~1.5份,粮食酒1~3份。
2.根据权利要求1所述的一种无花果蜜醋,其特征在于由新鲜无花果、绵白糖、冰糖、五味子、粮食酒、刺五加、枸杞和人参组成,上述各组成成分的重量比为:新鲜无花果8~20份,绵白糖2.5~7份,冰糖0.5~1.5份,五味子0.2~1份,粮食酒1~3份,刺五加0.1~0.6份,枸杞0.1~0.6份,人参0.1~0.6份。
3.根据权利要求2所述的一种无花果蜜醋,其特征在于最优化组成成分重量比为:新鲜无花果10份,绵白糖4份,冰糖1份,五味子0.5份,粮食酒1份,刺五加0.25份,枸杞0.25份,人参0.25份。
4.一种无花果蜜醋的制作方法,其特征在于制作步骤如下:

(6)将步骤5物质过滤,去除杂质和中药残留物,得到蜜醋。
