    本发明主要涉及保健醋及其制备技术领域,尤其涉及一种荔枝奶酒果醋。
背景技术
    醋是日常饮食的调味品,也有果醋饮料,大多以粮食和水果酿制而成,市场上保健醋的品种很少,且其保健功能少,口感不好,随着人们日常生活水平的提高,现有的保健醋种类不能够满足人们的需求。
发明内容
本发明为了弥补已有技术的缺陷,提供一种荔枝奶酒果醋及其制备方法。
本发明是通过以下技术方案实现的:一种荔枝奶酒果醋,由以下重量份原料制成:荔枝200-300、柚子130-150、蔓越莓50-70、酒曲3-5、小麦20-23、乳清粉50-60、冻豆腐40-45、生姜末28-30、红豆汁50-60、白兰地50-60、去核乌梅60-70、山楂50-55、决明子6-7、紫花地丁3-5、丹参5-7、薄荷5-7、玉竹4-5、牛樟芝5-6、黑种草子2-4、苹果酱50-60、增香剂15-18、醋酸菌菌种4-5、酒糟40-50、水适量:
增香剂,由以下重量份原料制成:米酒80-100、竹筒适量、玫瑰花10-12、桂花8-10、白芷叶10-13、栀子花8-10、百香果80-100、香芋50-60、水适量;
增香剂的制备方法:(1)将米酒分装在竹筒中,将竹筒密封后,放在锅中,倒入适量水,加热焖煮至米酒散发竹子的香气,将米酒倒出备用;
(2)将玫瑰花、桂花、白芷叶、栀子花粉碎,放入蒸馏器中,加入适量的水,加热蒸馏,收集蒸馏液备用;
(3)将香芋洗净,去皮后放入烤箱中烤至出香,冷却备用;将百香果洗净,取其果肉,与香芋、米酒一起放入榨汁机中,榨汁后过滤,取滤液与步骤2中的蒸馏液合并,搅拌均匀即得增香剂。
一种荔枝奶酒果醋的制备方法,包括以下步骤:
(1)将荔枝、柚子、蔓越莓洗净,取其果肉,放入榨汁机中榨成果汁后与酒曲、小麦混合,搅拌均匀后发酵15-18天,将所得发酵物放入蒸馏器中蒸馏,收集蒸馏液、果酒渣待用;
(2)将果酒渣与乳清粉、冻豆腐混合放入锅中,加入生姜末、红豆汁、白兰地、适量的水,加热煮沸后保持微沸30-35分钟,过滤,取滤液备用;
(3)将去核乌梅、山楂洗净,取其果肉,放入榨汁机中榨汁,得到果汁与步骤2中的滤液混合,搅拌均匀,得到奶酒备用;
(4)将决明子、紫花地丁、丹参、薄荷、玉竹、牛樟芝、黑种草子用5-9倍量的水提取,过滤,得提取液备用;
(5)将剩余原料中除水、增香剂外的其他物料与步骤1中的蒸馏液合并,搅拌均匀后发酵至酸度不再增加,反复过滤3-4次,将每次过滤得到的滤液与步骤3中的奶酒、步骤4中的提取液、增香剂合并,搅拌均匀后装瓶即可。

增香剂,由以下重量份(Kg)原料制成:米酒80、竹筒适量、玫瑰花10、桂花8、白芷叶10、栀子花8、百香果80、香芋50、水适量;
增香剂的制备方法:(1)将米酒分装在竹筒中,将竹筒密封后,放在锅中,倒入适量水,加热焖煮至米酒散发竹子的香气,将米酒倒出备用;

1.一种荔枝奶酒果醋,其特征在于,由以下重量份原料制成:荔枝200-300、柚子130-150、蔓越莓50-70、酒曲3-5、小麦20-23、乳清粉50-60、冻豆腐40-45、生姜末28-30、红豆汁50-60、白兰地50-60、去核乌梅60-70、山楂50-55、决明子6-7、紫花地丁3-5、丹参5-7、薄荷5-7、玉竹4-5、牛樟芝5-6、黑种草子2-4、苹果酱50-60、增香剂15-18、醋酸菌菌种4-5、酒糟40-50、水适量:
所述增香剂,由以下重量份原料制成:米酒80-100、竹筒适量、玫瑰花10-12、桂花8-10、白芷叶10-13、栀子花8-10、百香果80-100、香芋50-60、水适量;
所述增香剂的制备方法:(1)将米酒分装在竹筒中,将竹筒密封后,放在锅中,倒入适量水,加热焖煮至米酒散发竹子的香气,将米酒倒出备用;
(2)将玫瑰花、桂花、白芷叶、栀子花粉碎,放入蒸馏器中,加入适量的水,加热蒸馏,收集蒸馏液备用;
(3)将香芋洗净,去皮后放入烤箱中烤至出香,冷却备用;将百香果洗净,取其果肉,与香芋、米酒一起放入榨汁机中,榨汁后过滤,取滤液与步骤2中的蒸馏液合并,搅拌均匀即得增香剂。
2.如权利要求1所述的一种荔枝奶酒果醋的制备方法,其特征在于,包括以下步骤:
(1)将荔枝、柚子、蔓越莓洗净,取其果肉,放入榨汁机中榨成果汁后与酒曲、小麦混合,搅拌均匀后发酵15-18天,将所得发酵物放入蒸馏器中蒸馏,收集蒸馏液、果酒渣待用;
(2)将果酒渣与乳清粉、冻豆腐混合放入锅中,加入生姜末、红豆汁、白兰地、适量的水,加热煮沸后保持微沸30-35分钟,过滤,取滤液备用;
(3)将去核乌梅、山楂洗净,取其果肉,放入榨汁机中榨汁,得到果汁与步骤2中的滤液混合,搅拌均匀,得到奶酒备用;
(4)将决明子、紫花地丁、丹参、薄荷、玉竹、牛樟芝、黑种草子用5-9倍量的水提取,过滤,得提取液备用;
(5)将剩余原料中除水、增香剂外的其他物料与步骤1中的蒸馏液合并,搅拌均匀后发酵至酸度不再增加,反复过滤3-4次,将每次过滤得到的滤液与步骤3中的奶酒、步骤4中的提取液、增香剂合并,搅拌均匀后装瓶即可。
