本发明公开了一种发酵型烟用西红柿提取物的制备方法,该方法是将西红柿投入洗果机,用自来水清洗后进行压榨,收集西红柿破碎后的物料;将破碎后的西红柿物料进行加热提取,边加热边搅拌,直至沸腾后2~4小时取出;将西红柿提取物放至室温,加入西红柿提取物重量1%的米醋,密封自然发酵10~20天;发酵完毕后,将乙醇加入西红柿发酵物中进行醇沉6~10小时;再进行过滤;得到的滤液浓缩至相对密度为1.0500±0.008,再加入占浓缩液重量8~14%的壳聚糖溶液,搅拌均匀后静置过夜;过滤处理,即得发酵型烟用西红柿提取物。本发明用米醋处理西红柿提取物,降解其多糖含量,将增加卷烟刺激性和残留的多糖转化为乙酸等酸香型物质,变不利为有利。

技术领域
本发明涉及烟用香料的制取方法,具体是指一种发酵型烟用西红柿提取物的制备方法。
背景技术
在烟草制品中,烟草的香气和口感是至关重要的,烟用添加剂是卷烟工艺中的关键环节,也是完善产品风格和提高卷烟香气质量的有效手段之一,可以给消费者提供一些香气和口感满意的卷烟制品。目前,我国烟草中添加的烟用香料大多是采用传统的方法制配的,即以天然提取物单体和合成单体混合调配而成,这样所制得的烟用香料虽然市场操作简单,单存在香气单调,对烟草改善性不足,而且改善卷烟抽吸品质效果不明显等缺点。
西红柿又称小金瓜、喜报三元、番李子、金橘、洋柿子、番柿、番茄,是茄科茄属的一种植物,现作为食用蔬果已被全球性广泛种植,同时是一种营养成分很高的果实,富含有维生素A、维生素C、维生素B1、维生素B2以及胡萝卜素和钙、磷、钾、镁、铁、锌、铜和碘等多种元素,还含有蛋白质、糖类、有机酸、纤维素。西红柿具有生津止渴;健胃消食之功效,尤其是所含的“番茄素”有抑制细菌的作用。将西红柿应用在卷烟中具有丰富烟香及甜润烟气的作用。然而,由于西红柿提取物含有多糖大分子,因此,添加在卷烟中存在刺激性大的负面效果。
米醋是能将糖或者乙醇氧化成乙酸等酸香物质的一种发酵物,其能消耗糖类大分子,消除这些大分子物质对卷烟的负面影响,并且产生的酸香物质可以在卷烟中起到增加清香香韵和飘逸感的作用。
如果用米醋来发酵西红柿提取物制备成一种全新的发酵型西红柿提取物,将增加卷烟刺激的多糖分子等转化为酸类物质,变不利为有利,通过对发酵条件的优化,得到了品质较好的烟用西红柿提取物。
现有技术中所采用的天然烟用香料多为香料植物的直接萃取,而以西红柿为原料利用微生物发酵技术生产特色烟用香料的方法未见报道。
发明内容
本发明目的在于克服现有技术中存在的不足,提供了一种发酵型烟用西红柿提取物的制备方法,优化天然烟用香料,减少西红柿提取物添加在卷烟中存在刺激性的影响。
为解决上述技术问题,本发明提供了一种发酵型烟用西红柿提取物的制备方法,包括以下步骤:
1)将西红柿投入洗果机,用自来水清洗后进行压榨,收集西红柿破碎后的物料;
2)将破碎后的西红柿物料进行加热提取,边加热边搅拌,直至沸腾后2~4小时取出;
3)将步骤2)得到的西红柿提取物放至室温,加入西红柿提取物重量1%的的恒顺米醋,密封自然发酵10~20天。
4)发酵完毕后,按照西红柿发酵物︰乙醇的重量比=1︰1~3,将乙醇加入西红柿发酵物中进行醇沉6~10小时;再进行过滤;
5)将步骤4)得到的滤液浓缩至相对密度为1.0500±0.008,再加入占浓缩液重量8~14%的壳聚糖溶液,搅拌均匀后静置过夜;
6)将静置过夜的浓缩液进行膜过滤处理,即得发酵型烟用西红柿提取物。
进一步地,所述步骤2)中,米醋为恒顺米醋。
再进一步地,所述步骤4)中,乙醇的体积分数为95%。
再进一步地,所述步骤4)中,将乙醇加入西红柿发酵物过程中,边加入边搅拌,直至加注后搅拌均匀。
再进一步地,所述步骤5中,壳聚糖溶液的质量分数为1%。
本发明的有益效果:
1)本发明用米醋处理西红柿提取物,降解其多糖含量,将增加卷烟刺激性和残留的多糖转化为乙酸等酸香型物质,变不利为有利。
2)本发明所制备的发酵型烟用西红柿提取物具有宜人的酸甜香气。将发酵型烟用西红柿提取物添加到卷烟中,具有丰富烟气,增加烟气浓度,甜润烟气,增加清甜香韵等作用,同时烟气也更有飘逸感。与未用米醋处理过的西红柿提取物相比,该方法能使卷烟香气更加丰富,甜润感更加明显,并且增加清甜香韵,飘逸感较好,刺激性降低。其主要原因在于西红柿提取物中引起卷烟刺激性大和残留重的过量多糖物质被米醋所利用,使得卷烟香气更加丰富,从而改善了西红柿提取物的品质,实现了西红柿提取物在卷烟中的应用。

为了更好地解释本发明,以下结合具体实施例进一步阐明本发明的主要内容,但本发明的内容不仅仅局限于以下实施例。
实施例1
发酵型烟用西红柿提取物的制备方法,包括以下步骤:
1)将西红柿投入洗果机,用自来水清洗后进行压榨,收集西红柿破碎后的物料;
2)将破碎后的西红柿物料进行加热提取,边加热边搅拌,直至沸腾后3小时取出;
3)将步骤2)得到的西红柿提取物放至室温,加入西红柿提取物重量1%的恒顺米醋,密封自然发酵10天。
4)发酵完毕后,按照西红柿发酵物︰体积分数为95%乙醇的重量比=1︰1,将乙醇加入西红柿发酵物中边加入边搅拌,直至加注后搅拌1小时均匀,进行醇沉8小时;再用过板框进行过滤;

5)将步骤4)得到的滤液浓缩至相对密度为1.0500±0.008,再加入占浓缩液重量14%的质量分数为1%的壳聚糖溶液,搅拌均匀后静置过夜;
6)将静置过夜的浓缩液进行膜过滤处理,即得发酵型烟用西红柿提取物。
实施例3

为探讨米醋发酵对特色烟用西红柿提取物品质的影响,对比了发酵与为发酵的西红柿提取物的卷烟评析评价效果,结果如表1所示。

由表中可知,发酵后,西红柿提取物能使卷烟香气更加丰富,甜润感更加明显,并且增加清甜香韵,飘逸感较好,刺激性降低。

1)将西红柿投入洗果机,用自来水清洗后进行压榨,收集西红柿破碎后的物料;
2)将破碎后的西红柿物料进行加热提取,边加热边搅拌,直至沸腾后2~4小时取出;
3)将步骤2)得到的西红柿提取物放至室温,加入西红柿提取物重量1%的恒顺米醋,密封自然发酵10~20天;
4)发酵完毕后,按照西红柿发酵物︰乙醇的重量比=1︰1~3,将乙醇加入西红柿发酵物中进行醇沉6~10小时;再进行过滤,其中,乙醇的体积分数为95%;
5)将步骤4)得到的滤液浓缩至相对密度为1.0500±0.008,再加入占浓缩液重量8~14%的壳聚糖溶液,搅拌均匀后静置过夜,其中,壳聚糖溶液的质量分数为1%;
6)将静置过夜的浓缩液进行膜过滤处理,即得发酵型烟用西红柿提取物。
2.根据权利要求1所述发酵型烟用西红柿提取物的制备方法,其特征在于:所述步骤4)中,将乙醇加入西红柿发酵物过程中,边加入边搅拌,直至加注后搅拌均匀。
