本发明涉及一种保健紫薯,尤其涉及一种果皮护肝紫薯酱及其制备方法。
背景技术
人们日常生活,离不开食品、饮料,人们对其口味和营养以及特殊的保健功能的要求也在逐渐升高,市场上的饮料、食品种类已经不能够满足人们的日常需求,高营养且具有一定的养生保健的食品、饮品越来越受到消费者的青睐。如今,用紫薯制备的各种保健食品也层出不穷,但是有的为了降低生产成本,无法满足人们日常对于营养的需求,有的甚至降低了紫薯原本的营养价值,因此生产一种高保健的紫薯食品显得尤为重要。
发明内容
本发明克服了现有技术中的不足,提供了一种果皮护肝紫薯酱及其制备方法。
本发明是通过以下技术方案实现的:
一种果皮护肝紫薯酱,由下列重量份的原料制成:
紫薯250-260、营养添加剂10-13、冬瓜7-8、黑番茄8-9、红薯粉丝7-8、饼干1-2、金针菇5-6、香瓜4-6、椰子油3-4、山楂汁14-16、姜糖5-6、葡萄皮8-9、千张8-10、猪皮冻10-12、旱田草1-1.1、蒡叶2.6-2.8、洋槐花2.6-2.8、榆钱1.5-2.1、冰糖草2.3-3.2、蛇皮1.4-2.2;
所述营养添加剂由下列重量份原料制成:
1.8-2斤的鲫鱼一只、4-6斤的鸭子一只、当归20-24克、功劳子23-24克、花荵14-16克、益智仁17-18克、腊肉40-50克、蜜枣碎15-20克、枇杷汁70-100克,葱姜碎、五香粉适量;
制备方法为:(1)鲫鱼、鸭子洗净去内脏,腊肉剁碎,当归、功劳子、花荵、益智仁洗净,与腊肉碎、葱姜碎、蜜枣碎混合塞于鲫鱼肚子中,缝合待用;
(2)五香粉兑枇杷汁化开,鸭腹中涂抹枇杷汁与五香粉的混合物,再将鲫鱼置于鸭腹中,缝合,上锅大火蒸熟蒸透,1-2小时后,取出鲫鱼;
(3)将步骤(2)所得鲫鱼,浇烧滚的热油2-3次后,取出沥干,再刮取鱼肉混合剁碎,即得。
一种果皮护肝紫薯酱的制备方法,包括以下步骤: 
(1)将旱田草、蒡叶、洋槐花、榆钱、冰糖草、蛇皮用6-9 倍量的水加热提取,将提取液喷雾干燥,得到中药粉;猪皮冻与葡萄皮混合入搅拌机搅拌成泥状,得猪皮酱;紫薯切丁,待用;
(2)红薯粉丝用温水泡开,切段,金针菇洗净切段,与粉丝混合,千张切条,用千张条卷粉丝、金针菇与猪皮酱的混合物,并分别用竹签穿串固定,往千张卷表面刷椰子油,上烤炉烘烤5-6分钟,取下竹签上物料,混合切碎待用;
(3)姜糖磨粉,香瓜、冬瓜切丁,兑山楂汁混合浸泡,1-2小时后取出沥干,拌入姜糖粉、中药粉得混合物搅拌均匀后,入烘箱烘至5%-8%含水量,取出待用;
(4)饼干、紫薯混合倒入锅中,加适量的水,大火煮沸后加入步骤(2)、(3)所得物料以及剩余物料,小火继续加热10-15分钟,即得。
本发明的优点是:
本发明的紫薯酱采用多种蔬果药材做为原料,具有很高的营养保健价值,其中洋槐花有清热凉血之功效,蒡叶有清热去火、润肺止咳、解毒益肝、润肠通便之效,特别适于夏季食用。
具体实施方式
下面结合实施例对本发明作进一步详细描述:
实施例1:
一种果皮护肝紫薯酱,由下列重量份(斤)的原料制成:
紫薯250、营养添加剂13、冬瓜8、黑番茄9、红薯粉丝8、饼干2、金针菇5、香瓜6、椰子油4、山楂汁16、姜糖6、葡萄皮9、千张10、猪皮冻10、旱田草1.1、蒡叶2.8、洋槐花2.8、榆钱2.1、冰糖草3.2、蛇皮2.2;
所述营养添加剂由下列重量份原料制成:
2斤的鲫鱼一只、6斤的鸭子一只、当归20克、功劳子23克、花荵16克、益智仁18克、腊肉40克、蜜枣碎20克、枇杷汁100克,葱姜碎、五香粉适量;
制备方法为:(1)鲫鱼、鸭子洗净去内脏,腊肉剁碎,当归、功劳子、花荵、益智仁洗净,与腊肉碎、葱姜碎、蜜枣碎混合塞于鲫鱼肚子中,缝合待用;
(2)五香粉兑枇杷汁化开,鸭腹中涂抹枇杷汁与五香粉的混合物,再将鲫鱼置于鸭腹中,缝合,上锅大火蒸熟蒸透,1小时后,取出鲫鱼;
(3)将步骤(2)所得鲫鱼,浇烧滚的热油3次,取出沥干,再刮取鱼肉混合剁碎,即得。
一种果皮护肝紫薯酱的制备方法,包括以下步骤:
(1)将旱田草、蒡叶、洋槐花、榆钱、冰糖草、蛇皮用6 倍量的水加热提取,将提取液喷雾干燥,得到中药粉;猪皮冻与葡萄皮混合入搅拌机搅拌成泥状,得猪皮酱;紫薯切丁,待用;
(2)红薯粉丝用温水泡开,切段,金针菇洗净切段,与粉丝混合,千张切条,用千张条卷粉丝、金针菇与猪皮酱的混合物,并分别用竹签穿串固定,往千张卷表面刷椰子油,上烤炉烘烤5分钟,取下竹签上物料,混合切碎待用;
(3)姜糖磨粉,香瓜、冬瓜切丁,兑山楂汁混合浸泡,2小时后取出沥干,拌入姜糖粉、中药粉得混合物搅拌均匀后,入烘箱烘至5%含水量,取出待用;
(4)饼干、紫薯混合倒入锅中,加适量的水,大火煮沸后加入步骤(2)、(3)所得物料以及剩余物料,小火继续加热10分钟,即得。

1.一种果皮护肝紫薯酱,其特征在于由下列重量份的原料制成:
紫薯250-260、营养添加剂10-13、冬瓜7-8、黑番茄8-9、红薯粉丝7-8、饼干1-2、金针菇5-6、香瓜4-6、椰子油3-4、山楂汁14-16、姜糖5-6、葡萄皮8-9、千张8-10、猪皮冻10-12、旱田草1-1.1、蒡叶2.6-2.8、洋槐花2.6-2.8、榆钱1.5-2.1、冰糖草2.3-3.2、蛇皮1.4-2.2;
所述营养添加剂由下列重量份原料制成:
1.8-2斤的鲫鱼一只、4-6斤的鸭子一只、当归20-24克、功劳子23-24克、花荵14-16克、益智仁17-18克、腊肉40-50克、蜜枣碎15-20克、枇杷汁70-100克,葱姜碎、五香粉适量;
制备方法为:(1)鲫鱼、鸭子洗净去内脏,腊肉剁碎,当归、功劳子、花荵、益智仁洗净,与腊肉碎、葱姜碎、蜜枣碎混合塞于鲫鱼肚子中,缝合待用;
(2)五香粉兑枇杷汁化开,鸭腹中涂抹枇杷汁与五香粉的混合物,再将鲫鱼置于鸭腹中,缝合,上锅大火蒸熟蒸透,1-2小时后,取出鲫鱼;
(3)将步骤(2)所得鲫鱼,浇烧滚的热油2-3次后,取出沥干,再刮取鱼肉混合剁碎,即得。
2.根据权利要求1所述的一种果皮护肝紫薯酱的制备方法,其特征在于包括以下步骤: 
(1)将旱田草、蒡叶、洋槐花、榆钱、冰糖草、蛇皮用6-9 倍量的水加热提取,将提取液喷雾干燥,得到中药粉;猪皮冻与葡萄皮混合入搅拌机搅拌成泥状,得猪皮酱;紫薯切丁,待用;
(2)红薯粉丝用温水泡开,切段,金针菇洗净切段,与粉丝混合,千张切条,用千张条卷粉丝、金针菇与猪皮酱的混合物,并分别用竹签穿串固定,往千张卷表面刷椰子油,上烤炉烘烤5-6分钟,取下竹签上物料,混合切碎待用;
(3)姜糖磨粉,香瓜、冬瓜切丁,兑山楂汁混合浸泡,1-2小时后取出沥干,拌入姜糖粉、中药粉得混合物搅拌均匀后,入烘箱烘至5%-8%含水量,取出待用;
(4)饼干、紫薯混合倒入锅中,加适量的水,大火煮沸后加入步骤(2)、(3)所得物料以及剩余物料,小火继续加热10-15分钟,即得。
