本发明涉及一种保健香糕,尤其涉及一种健脾安神鱼粉糕及其制备方法。
背景技术
糕是我国的传统食品,多采用蒸熟米粉、糯米粉作为原料。但现有糕存在原料单一、工艺单一、口感单一、保健功能单一的缺陷,只是单纯的一种食品,无法迎合市场和消费者的需求,因此增加糕所富含的营养价值和保健价值正在成为主题。
发明内容
本发明克服了现有技术中的不足,提供了一种健脾安神鱼粉糕及其制备方法。
本发明是通过以下技术方案实现的:
一种健脾安神鱼粉糕,由下列重量份的原料制成:
糯米粉300-320、莲藕15-20、营养添加剂4-7、豆腐8-9、螺蚌肉浆5-7、甘蔗渣2-3、香槟12-13、鱼粉4-5、芝麻3-5、皮蛋黄3-4、瘦肉丝10-15、蜂蜜5-7、竹荪汁2-4、海芦笋3-4、夏威夷果仁7-8、肾经草2-3.1、昆布1.8-2.4、香薷1-2、鸡谷草2-2.5、榆钱3-3.2;
所述营养添加剂由下列重量份原料制成:
西洋参3.2-3.4、干花豆3.1-3.8、牛奶菜根2.9-3.4、灯心草2.4-3、鲜玫瑰花瓣9-13、山楂4-5、金橘4-5、香槟3-4、馒头4-5、鳖血旺8-9;
制备方法为:(1)西洋参、干花豆、牛奶菜根、灯心草洗净烘干研磨得粉,用6-7倍水浸煮后浓缩,滤得提取液,经喷雾干燥得中药粉;
(2)金橘、山楂加水用搅拌机混合搅拌成稀泥浆状,鳖血旺用纱布包裹,置于金橘山楂稀泥浆中,浸煮2-3小时,再倒入香槟,混合密封至自然冷却,取出纱布内鳖血旺;
(3)鲜玫瑰花瓣剁碎与中药粉兑少量水拌成泥状,馒头切丁喷水洒湿,用花瓣泥裹馒头丁丸成丸状,上炉烘烤5-8分钟,取出馒头丁,与鳖血旺混合剁碎即得。
一种健脾安神鱼粉糕的制备方法,包括以下步骤:
(1)将肾经草、昆布、香薷、鸡谷草、榆钱用6-9 倍量的水浸提后浓缩,得到中药汁;
(2)竹荪汁烧至沸腾,海芦笋去皮切丝,置于漏勺中,浇上烧滚的竹荪汁,沥干取出,与螺蚌肉浆混合均匀,塞入洗净的莲藕孔中,与香槟混合入锅,煎煮20-25分钟,取出莲藕,混合切碎丁,待用;
(3)瘦肉丝刷上蜂蜜,上锅隔水蒸10-12分钟,取出烘干研磨成粉,待用;甘蔗渣、夏威夷果仁混合翻炒,拌入鱼粉,倒入中药汁混合熬煮20-25分钟,取出夏威夷果仁,切碎待用;
(4)芝麻、皮蛋黄、豆腐混合入搅拌机搅拌成糊,得芝麻蛋黄酱;
(5)将糯米粉、营养添加剂以及步骤(2)(3)所得物料,倒入适量水以及除芝麻蛋黄酱以外的剩余各物料,混合搅拌均匀,做成面饼状,放入蒸汽锅内煮熟,然后取出来,摊开,自然晾干后切片,取每一片两面刷芝麻蛋黄酱,再入烤箱烘烤1-2分钟,取出即可。
本发明的优点是:
本发明的糕口感丰富,还含有多种保健成分,加入了榆钱、香薷、鸡谷草等成分,具有很好的健脾安神、清心降火、清热利湿、发汗解暑等作用,赋予了本发明糕很好的保健作用。

实施例1:
一种健脾安神鱼粉糕,由下列重量份(斤)的原料制成:
糯米粉300、莲藕20、营养添加剂7、豆腐9、螺蚌肉浆7、甘蔗渣2、香槟12、鱼粉5、芝麻5、皮蛋黄4、瘦肉丝15、蜂蜜7、竹荪汁4、海芦笋3、夏威夷果仁8、肾经草3.1、昆布2.4、香薷2、鸡谷草2、榆钱3.2;
所述营养添加剂由下列重量份原料制成:
西洋参3.2、干花豆3.1、牛奶菜根2.9、灯心草2.4、鲜玫瑰花瓣13、山楂4、金橘4、香槟3、馒头4、鳖血旺8;
制备方法为:(1)西洋参、干花豆、牛奶菜根、灯心草洗净烘干研磨得粉,用6倍水浸煮后浓缩,滤得提取液,经喷雾干燥得中药粉;
(2)金橘、山楂加水用搅拌机混合搅拌成泥浆状,鳖血旺用纱布包裹,置于金橘山楂稀泥浆中,浸煮2小时,再倒入香槟,混合密封至自然冷却,取出纱布内鳖血旺;

(3)瘦肉丝刷上蜂蜜,上锅隔水蒸12分钟,取出烘干研磨成粉,待用;甘蔗渣、夏威夷果仁混合翻炒,拌入鱼粉,倒入中药汁混合熬煮25分钟,取出夏威夷果仁,切碎待用;
(4)芝麻、皮蛋黄、豆腐混合入搅拌机搅拌成糊,得芝麻蛋黄酱;
(5)将糯米粉、营养添加剂以及步骤(2)(3)所得物料,倒入适量水以及除芝麻蛋黄酱以外的剩余各物料,混合搅拌均匀,做成面饼状,放入蒸汽锅内煮熟,然后取出来,摊开,自然晾干后切片,取每一片两面刷芝麻蛋黄酱,再入烤箱烘烤1分钟,取出即可。

1.一种健脾安神鱼粉糕,其特征在于由下列重量份的原料制成:
糯米粉300-320、莲藕15-20、营养添加剂4-7、豆腐8-9、螺蚌肉浆5-7、甘蔗渣2-3、香槟12-13、鱼粉4-5、芝麻3-5、皮蛋黄3-4、瘦肉丝10-15、蜂蜜5-7、竹荪汁2-4、海芦笋3-4、夏威夷果仁7-8、肾经草2-3.1、昆布1.8-2.4、香薷1-2、鸡谷草2-2.5、榆钱3-3.2;
所述营养添加剂由下列重量份原料制成:
西洋参3.2-3.4、干花豆3.1-3.8、牛奶菜根2.9-3.4、灯心草2.4-3、鲜玫瑰花瓣9-13、山楂4-5、金橘4-5、香槟3-4、馒头4-5、鳖血旺8-9;
制备方法为:(1)西洋参、干花豆、牛奶菜根、灯心草洗净烘干研磨得粉,用6-7倍水浸煮后浓缩,滤得提取液,经喷雾干燥得中药粉;
(2)金橘、山楂加水用搅拌机混合搅拌成稀泥浆状,鳖血旺用纱布包裹,置于金橘山楂稀泥浆中,浸煮2-3小时,再倒入香槟,混合密封至自然冷却,取出纱布内鳖血旺;
(3)鲜玫瑰花瓣剁碎与中药粉兑少量水拌成泥状,馒头切丁喷水洒湿,用花瓣泥裹馒头丁丸成丸状,上炉烘烤5-8分钟,取出馒头丁,与鳖血旺混合剁碎即得。
2.根据权利要求1所述的一种健脾安神鱼粉糕的制备方法,其特征在于包括以下步骤:
(1)将肾经草、昆布、香薷、鸡谷草、榆钱用6-9 倍量的水浸提后浓缩,得到中药汁;
(2)竹荪汁烧至沸腾,海芦笋去皮切丝,置于漏勺中,浇上烧滚的竹荪汁,沥干取出,与螺蚌肉浆混合均匀,塞入洗净的莲藕孔中,与香槟混合入锅,煎煮20-25分钟,取出莲藕,混合切碎丁,待用;
(3)瘦肉丝刷上蜂蜜,上锅隔水蒸10-12分钟,取出烘干研磨成粉,待用;甘蔗渣、夏威夷果仁混合翻炒,拌入鱼粉,倒入中药汁混合熬煮20-25分钟,取出夏威夷果仁,切碎待用;
(4)芝麻、皮蛋黄、豆腐混合入搅拌机搅拌成糊,得芝麻蛋黄酱;
(5)将糯米粉、营养添加剂以及步骤(2)(3)所得物料,倒入适量水以及除芝麻蛋黄酱以外的剩余各物料,混合搅拌均匀,做成面饼状,放入蒸汽锅内煮熟,然后取出来,摊开,自然晾干后切片,取每一片两面刷芝麻蛋黄酱,再入烤箱烘烤1-2分钟,取出即可。
