一种咖啡虾饼及其制备方法,其特征在于由下列重量份的原料制成:虾仁80-90、冬瓜子1-1.5、栀子花2-3、枳实1.5-2、橘络1.4-1.7、龙眼核2-2.5、大丁草1-1.2、楠木皮1.3-1.8、椰子油2-3、黑豆4-5、咖啡豆10-11、米线18-20、豆腐20-22、牛肝菌5-6、鱼骨20-25、面粉180-200、酵母1.5-2、营养添加剂7-8。本发明的虾饼经烤制后色泽美观,松软酥脆,适口性好,营养丰富,其中添加的鱼骨增加了本发明的钙含量,可促进骨骼发育,预防骨质疏松,此外,本发明还含有多种中草药成分,具有暖胃和中、破气消积、清热利湿、润肺的功效。

本发明属于食品加工技术领域,涉及一种虾饼,尤其涉及一种咖啡虾饼及其制备方法。
背景技术
虾饼是由生虾肉制成,因其营养丰富,且味道鲜美而广受消费者喜爱。目前市场上销售的虾饼口味单一,且多不具有保健功能,已不能满足消费者日益增长的需求。
发明内容
本发明的目的是提供一种咖啡虾饼及其制备方法,本发明具有口感好,营养健康的特点。
本发明所采用的技术方案是:
一种咖啡虾饼,其特征在于由下列重量份的原料制成:
虾仁80-90、冬瓜子1-1.5、栀子花2-3、枳实1.5-2、橘络1.4-1.7、龙眼核2-2.5、大丁草1-1.2、楠木皮1.3-1.8、椰子油2-3、黑豆4-5、咖啡豆10-11、米线18-20、豆腐20-22、牛肝菌5-6、鱼骨20-25、面粉180-200、酵母1.5-2、营养添加剂7-8;
所述营养添加剂由下列重量份的原料制成:金银花1-2、当归1.3-1.4、桑椹子0.8-1、三七花1.1-1.4、牛奶12-14、虾皮25-27、龙眼肉2-3、菠菜2-3、莲子35-40;
制备方法为:(1)将金银花、当归、桑椹子、三七花加牛奶大火煮沸,过滤除渣,得保健奶;
(2)将龙眼肉、菠菜加一倍的水打浆,过滤除渣,得果蔬汁;将虾皮与果蔬汁混合拌匀,隔水大火蒸15-20分钟,然后将虾皮取出,烘干后粉碎;
(3)将莲子入锅,小火炒香后加入保健奶,在65-70℃下焖制20-25分钟,然后将莲子取出,烘干后研成粉末,与步骤(2)所得物料混合拌匀,即得。
所述的咖啡虾饼的制备方法,其特征在于包括以下步骤:
(1)将冬瓜子、栀子花、枳实、橘络、龙眼核、大丁草、楠木皮加5-6倍的水文火煎煮40-50分钟,过滤除渣,得药液;
(2)将椰子油倒入锅中,大火加热,待油烧至六成熟时倒入黑豆、咖啡豆,小火炒制20-22分钟后出锅,加4-5倍的水进行磨浆,过滤除渣,得咖啡液;将米线与咖啡液混合入锅,大火煮沸后将米线捞出、沥干、剁碎;
(3)将虾仁、豆腐混合剁碎,隔水大火蒸8-10分钟,然后与步骤(2)所得物料混合拌匀,得馅料;
(4)将牛肝菌加药液大火煮制8-10分钟,过滤除渣,得牛肝菌汤;将鱼骨投入开水锅中,大火熬煮30-40分钟后将鱼骨捞出,敲碎,加牛肝菌汤研磨匀质,得鱼骨泥;
(5)将鱼骨泥、面粉与其他剩余原料混合,加水揉成团,在30-35℃下发酵2-3小时,然后将所得面团分成小剂子,包入馅料,制成饼状,送入烤箱烤制8-10分钟,即得。
本发明中的大丁草为菊科植物大丁草的全草,楠木皮为樟科植物楠木的树皮。
本发明的有益效果为:

具体实施方式
一种咖啡虾饼,其特征在于由下列重量份(公斤)的原料制成:
虾仁80、冬瓜子1.5、栀子花3、枳实1.5、橘络1.7、龙眼核2.5、大丁草1.2、楠木皮1.8、椰子油3、黑豆5、咖啡豆11、米线18、豆腐22、牛肝菌6、鱼骨20、面粉200、酵母1.5、营养添加剂7;
所述营养添加剂由下列重量份(公斤)的原料制成:金银花2、当归1.4、桑椹子0.8、三七花1.4、牛奶14、虾皮27、龙眼肉2、菠菜3、莲子35;
制备方法为:(1)将金银花、当归、桑椹子、三七花加牛奶大火煮沸,过滤除渣,得保健奶;
(2)将龙眼肉、菠菜加一倍的水打浆,过滤除渣,得果蔬汁;将虾皮与果蔬汁混合拌匀,隔水大火蒸15-20分钟,然后将虾皮取出,烘干后粉碎;
(3)将莲子入锅,小火炒香后加入保健奶,在65-70℃下焖制20-25分钟,然后将莲子取出,烘干后研成粉末,与步骤(2)所得物料混合拌匀,即得。

(5)将鱼骨泥、面粉与其他剩余原料混合,加水揉成团,在30-35℃下发酵2-3小时,然后将所得面团分成小剂子,包入馅料,制成饼状,送入烤箱烤制8-10分钟,即得。

1.一种咖啡虾饼,其特征在于由下列重量份的原料制成:
虾仁80-90、冬瓜子1-1.5、栀子花2-3、枳实1.5-2、橘络1.4-1.7、龙眼核2-2.5、大丁草1-1.2、楠木皮1.3-1.8、椰子油2-3、黑豆4-5、咖啡豆10-11、米线18-20、豆腐20-22、牛肝菌5-6、鱼骨20-25、面粉180-200、酵母1.5-2、营养添加剂7-8;
所述营养添加剂由下列重量份的原料制成:金银花1-2、当归1.3-1.4、桑椹子0.8-1、三七花1.1-1.4、牛奶12-14、虾皮25-27、龙眼肉2-3、菠菜2-3、莲子35-40;
制备方法为:(1)将金银花、当归、桑椹子、三七花加牛奶大火煮沸,过滤除渣,得保健奶;
(2)将龙眼肉、菠菜加一倍的水打浆,过滤除渣,得果蔬汁;将虾皮与果蔬汁混合拌匀,隔水大火蒸15-20分钟,然后将虾皮取出,烘干后粉碎;

(2)将椰子油倒入锅中,大火加热,待油烧至六成熟时倒入黑豆、咖啡豆,小火炒制20-22分钟后出锅,加4-5倍的水进行磨浆,过滤除渣,得咖啡液;将米线与咖啡液混合入锅,大火煮沸后将米线捞出、沥干、剁碎;
(3)将虾仁、豆腐混合剁碎,隔水大火蒸8-10分钟,然后与步骤(2)所得物料混合拌匀,得馅料;
(4)将牛肝菌加药液大火煮制8-10分钟,过滤除渣,得牛肝菌汤;将鱼骨投入开水锅中,大火熬煮30-40分钟后将鱼骨捞出,敲碎,加牛肝菌汤研磨匀质,得鱼骨泥;
(5)将鱼骨泥、面粉与其他剩余原料混合,加水揉成团,在30-35℃下发酵2-3小时,然后将所得面团分成小剂子,包入馅料,制成饼状,送入烤箱烤制8-10分钟,即得。
