本发明涉及食品加工领域,更确切地说是涉及一种复合米制品及其制备方法。
背景技术
大米口感好、易消化,长久以来都是人们的主食,但大米单一的口感及营养成分已不能满足所有人对主食的需求。大米是补充营养素的基础食物,除了富含碳水化合物外,还含有蛋白质、脂肪、维生素及11种矿物质,能为人体提供全面的营养,但大米中各种营养素的单个含量不是很高,且大米蛋白质中赖氨酸和苏氨酸的含量较少,所以不是一种完全蛋白质,营养成分有所欠缺。将大米与杂粮、果蔬等食材相结合,在不破坏食材原有营养的条件下进行深加工,磨粉或打浆后重新制粒做成复合大米,不仅具有大米的外形和口感,方便食用且营养更加丰富,美味健康。
发明内容
本发明的目的是在于提供一种红参石耳滋补保健米及其制备方法,方便人们的生活。
为解决这一问题,本发明所采取的技术方案为:红参石耳滋补保健米由以下重量份的原料组成:粳米440-450、石耳32-33、金桔42-45、黑芝麻15-16、松花粉2-3、芡实27-28、蕨根粉30-31、姜汁5-6、葵花籽仁27-28、花生粉42-43、红提18-20、西芹11-12、鳄梨8-9、黄秋葵16-17、黑豆芽23-24、红参2-3、干桂花4-5、楮叶2-3、甜叶菊5-6、山奈1-2、保健添加剂15-16、水适量。
其中保健添加剂由以下重量份的原料组成:燕麦麸皮粉46-48、白芸豆粉22-23、鹿角霜15-16、玉米淀粉11-12、草莓粉6-7、椰汁13-14、紫苏叶4-5、冬瓜皮2-3、芭蕉根1-2、杜仲叶3-4、黄芪花2-3、水适量。
本发明的红参石耳滋补保健米制备过程按以下步骤进行:
(1)选取新鲜无虫无霉变的黑芝麻、葵花籽仁洗净晾干后磨粉过50-60目筛,得混合粗粮粉,备用;
(2)去除石耳、芡实中的杂质,洗净浸泡8-10小时直至完全泡发,捞出置于笼屉中备用,锅内放入红参、干桂花、楮叶、甜叶菊、山奈,加足量水煮开,将盛有食材的笼屉置于锅中密封熏蒸3-4小时,取出笼屉待食材冷却后加适量水打磨成浆,得营养浓浆;
(3)红提、鳄梨、金桔取果肉,西芹、黄秋葵、黑豆芽洗净后用开水焯烫熟后捞出冷凉加适量水打磨成浆,得果蔬浓浆;
(4)粳米磨粉过50-60目筛,与步骤(1)混合粗粮粉、步骤(2)营养浓浆、步骤(3)的果蔬浓浆及其他剩余成分加适量水糊化制粒,干燥即可。
另外,保健添加剂的制作方法为:将紫苏叶、冬瓜皮、芭蕉根、杜仲叶、黄芪花加适量水煎煮1-2小时,滤去残渣后得中草药液,继续加热浓缩至原中草药液体积的十分之一;与其他剩余成分混合均匀静置2-3小时后用烘干机烘干,研磨成细粉即可。

其中保健添加剂由以下重量份(千克)的原料组成:燕麦麸皮粉48、白芸豆粉22、鹿角霜15、玉米淀粉12、草莓粉7、椰汁13、紫苏叶4、冬瓜皮2、芭蕉根1、杜仲叶3、黄芪花2、水适量。
制备方法,包括如下步骤:
(1)选取新鲜无虫无霉变的黑芝麻、葵花籽仁洗净晾干后磨粉过50目筛,得混合粗粮粉,备用;
(2)去除石耳、芡实中的杂质,洗净浸泡10小时直至完全泡发,捞出置于笼屉中备用,锅内放入红参、干桂花、楮叶、甜叶菊、山奈,加足量水煮开,将盛有食材的笼屉置于锅中密封熏蒸3小时,取出笼屉待食材冷却后加适量水打磨成浆,得营养浓浆;
