本发明涉及食品加工领域,更确切地说是涉及一种面粉及其制备方法。
背景技术
长期以来,精制的的大米和面粉都是人们的主食,随着生活水平的提高,人们越来越关注食品的营养与多样性,而单一的由小麦制得的面粉,已不满足人们的需求。精制的面粉由于加工时脱去麸皮,虽然改善了口感且利于消化,但却因此损失了小麦中的大量B族维生素以及蛋白质、矿物质等营养物质。本发明中添加多种天然健康食材,最大程度保留了营养成分,强化营养结构,增强保健功效,改善精制面粉的不足,在满足人们对主食提供热量需求的同时,更能做到营养与健康兼顾,具有日常保健的功效。
发明内容
本发明的目的是在于提供一种百合冬菇风味面粉及其制备方法,方便人们的生活。
为解决这一问题,本发明所采取的技术方案为:百合冬菇风味面粉由以下重量份的原料组成:全麦粉240-250、高粱粉80-84、冬菇22-23、百合30-31、抹茶粉2-3、燕窝1-2、牡蛎4-5、牛油果7-8、丝瓜26-28、黄秋葵1-2、松蕈13-14、鲜金银花7-8、豆豉2-3、沙棘果17-18、大蒜5-6、蒲公英22-23、荷兰豆30-32、仙人掌果15-16、枳实2-3、野胡萝卜根1-2、茄蒂3-4、莲子心1-2、婆罗子1-2、甜面酱9-10、葡萄籽粉4-5、保健添加剂8-9、水适量。
其中保健添加剂由以下重量份的原料组成:牛蒡粉72-74、南瓜子粉20-21、玉米粉34-35、蚝油8-9、雪梨汁14-15、藕粉11-12、金针菇粉17-18、野蔷薇花5-6、紫荆果2-3、苦瓜干1-2、花椒籽2-3、玄参叶4-5、水适量。
本发明的百合冬菇风味面粉制备过程按以下步骤进行:
(1)牡蛎取肉,与冬菇、百合、燕窝洗净,枳实、野胡萝卜根、茄蒂、莲子心、婆罗子用纱布包起,一同用小火煮制3-4小时,去除纱布包后连同汤水冷却至室温后打磨成浆,得营养浓浆;
(2)丝瓜、大蒜去皮,黄秋葵、松蕈、蒲公英、荷兰豆、鲜金银花洗净后分别用开水焯烫熟后捞出冷凉加适量水打磨成浆,得蔬菜浆液;
(3)牛油果、沙棘果、仙人掌果取果肉加适量水打磨成浆,得混合水果浆液;
(4)全麦粉、高粱粉过50-60目筛,与步骤(1)营养浓浆、步骤(2)蔬菜浆液、步骤(3)的混合水果浆液及其他剩余成分混合搅拌均匀,烘干后冷却,磨粉过80-100目筛即可。
另外,保健添加剂的制作方法为:将野蔷薇花、紫荆果、苦瓜干、花椒籽、玄参叶加适量水煎煮1-2小时,滤去残渣后得中草药液,继续加热浓缩至原中草药液体积的十分之一;与其他剩余成分混合均匀静置2-3小时后用烘干机烘干,研磨成细粉即可。

其中保健添加剂由以下重量份(千克)的原料组成:牛蒡粉72、南瓜子粉20、玉米粉35、蚝油9、雪梨汁14、藕粉12、金针菇粉18、野蔷薇花5、紫荆果3、苦瓜干1、花椒籽3、玄参叶5、水适量。
制备方法,包括如下步骤:
(1)牡蛎取肉,与冬菇、百合、燕窝洗净,枳实、野胡萝卜根、茄蒂、莲子心、婆罗子用纱布包起,一同用小火煮制4小时,去除纱布包后连同汤水冷却至室温后打磨成浆,得营养浓浆;

(4)全麦粉、高粱粉过60目筛,与步骤(1)营养浓浆、步骤(2)蔬菜浆液、步骤(3)的混合水果浆液及其他剩余成分混合搅拌均匀,烘干后冷却,磨粉过100目筛即可。
