本发明涉及一种黄米面水果丸子及其加工工艺,属食品及食品加工领域。
技术背景
丸子是人们日常生活中非常喜爱的一种食品,丸子的种类很多,有蔬菜丸子、肉丸子,大多为咸食,本发明以水果为原料,制作甜味的水果丸子,可以丰富人们的饮食生活。普通的丸子以普通面粉为粘合剂,口感较粗糙,吸油量较大。本发明采用黄米面为粘合剂,黄米面经加热后,口感变得松软细腻,且不易吸油,更加符合健康饮食的理念。
发明内容
本发明的目的是提供一种黄米面水果丸子及其加工工艺,是一款营养健康的食品。
为实现以上目的,本发明的一种黄米面水果丸子,原料及其重量份为:水果70-80份、黄米面20-30份、白糖1-3份。其中水果可以为苹果、梨、山楂、菠萝、香蕉、桃、枣中的一种或几种。
本发明的黄米面水果丸子的加工工艺为:将水果洗净后粉碎;将水果、黄米面、白糖及适量水混合均匀,得混合料;将上述混合料挤成丸子形状,经油炸冷却后制得本发明的黄米面水果丸子。
本发明产生的有益效果为,本发明提供了一种水果的新吃法,将水果粉碎后在经过油炸,受热更均匀,香味更浓郁。另外,本发明采用黄米面作为水果丸子的粘合剂,黄米富含蛋白质、碳水化合物、B族维生素、维生素E、锌、铜、锰等营养元素,具有益阴、利肺、利大肠之功效,可以增强水果丸子的营养价值。黄米面经加热后,粘合性增强,口感变得松软细腻,而且黄米面不易吸油,人们在食用黄米面水果丸子时可以降低油脂的摄入量,更加符合健康饮食的理念,因此,本发明的黄米面水果丸子综合了水果与黄米面的清香,是一款营养美味的健康食品。

实施例1:
一种黄米面苹果丸子,其加工工艺为:将苹果洗净后去核、粉碎;取苹果70份、黄米面30份、白糖2份及适量水混合均匀,得混合料;将混合料挤成丸子形状,经油炸冷却后制得本发明的黄米面苹果丸子。
实施例2:
一种黄米面山楂丸子,其加工工艺为:将山楂洗净后去核、粉碎;取山楂75份、黄米面25份、白糖3份及适量水混合均匀,得混合料;将混合料挤成丸子形状,经油炸冷却后制得本发明的黄米面山楂丸子。
实施例3:
一种黄米面香蕉菠萝丸子,其加工工艺为:将香蕉、菠萝分别粉碎;取香蕉、菠萝共80份、黄米面20份、白糖1份及适量水混合均匀,得混合料;将混合料挤成丸子形状,经油炸冷却后制得本发明的黄米面香蕉菠萝丸子。
实施例4:
一种黄米面桃丸子,其加工工艺为:将桃洗净去核、粉碎;取桃80份、黄米面20份、白糖2份及适量水混合均匀,得混合料;将混合料挤成丸子形状,经油炸冷却后制得本发明的黄米面桃丸子。

1.一种黄米面水果丸子,其特征在于:原料及其重量份为:
水果70-80份、黄米面20-30份、白糖1-3份。
2.如权利要求1所述的一种黄米面水果丸子,其特征在于:所述的水果为苹果、梨、山楂、菠萝、香蕉、桃、枣中的一种或几种。
3.如权利要求1或2所述的一种黄米面水果丸子,其特征在于:加工工艺为:
(1)将水果洗净后粉碎;
(2)将水果、黄米面、白糖及适量水混合均匀,得混合料;
(3)将上述混合料挤成丸子形状,经油炸冷却后制得本发明的黄米面水果丸子。
