本发明公开了一种粗粮营养糊的制备工艺,由下列重量份的原料制成黑米15-25、燕麦20-30、玉米10-15、山药15-20、黑豆10-15、南瓜10-20、花豆10-15、榛子仁5-10、甜叶菊8-15、麦芽糊精10-15、食醋20-30、向日葵花盘1-2、桔梗2-3、玉米须1-3、树莓叶1-2、天花粉2-3、蜜桶花1-2、猕猴桃叶2-3、食盐3-8、味精1-3、水适量。本发明粗粮营养糊营养全面、均衡、食用方便(冲调或干食均可),口感细腻软滑、营养价值高;甜叶菊调节口味,其中中药成分有桔梗能抗炎降压的功效,天花粉有清热生津、保肝护肺的作用,玉米须可以降血脂、血压、血糖的功效,强化粗粮保健功能,有益人体健康。

本发明涉及一种粗粮营养糊的制备工艺,属于食品加工技术领域。
背景技术
粗粮含有丰富的不可溶性纤维素,有利于保障消化系统正常运转。它与可溶性纤维协同工作,可降低血液中低密度胆固醇和甘油三酯的浓度;增加食物在胃里的停留时间,延迟饭后葡萄糖吸收的速度,降低高血压、糖尿病、肥胖症和心脑血管疾病的风险。
在现代食物越来越精细的时候,人们对粗粮的健康价值认识不够,对粗粮的利用率很低,为了丰富粗粮的食用范围品种,本发明制备一种粗粮营养糊,口感细腻软滑,增强人们对粗粮的认识。
发明内容
本发明的目的在于提供一种粗粮营养糊的制备工艺。
本发明采用的技术方案如下:
一种粗粮营养糊的制备工艺,包括以下步骤:
(1)、称取下列重量份的原料:黑米15-25、燕麦20-30、玉米10-15、山药15-20、黑豆10-15、南瓜10-20、花豆10-15、榛子仁5-10、甜叶菊8-15、麦芽糊精10-15、食醋20-30、向日葵花盘1-2、桔梗2-3、玉米须1-3、树莓叶1-2、天花粉2-3、蜜桶花1-2、猕猴桃叶2-3、食盐3-8、味精1-3、水适量;
(2)、将黑豆、花豆、榛子仁入油锅,加入适量尖椒、姜泥、葱末煸炒出香,加水煮制45-60分钟,捞出黑豆、花豆、榛子仁放入食醋焖润至干,研磨成豆沙;
(3)、山药、南瓜洗净蒸熟去皮切块,与经漂烫洗净切碎得到甜叶菊末一起合并,送入打浆机打浆,加入果浆酶在28-46℃酶解1-2.5小时,加热沸腾5-10分钟,离心过滤去渣,得山药甜汁;
(4)、将向日葵花盘、桔梗、玉米须、树莓叶、天花粉、蜜桶花、猕猴桃叶加水煎煮,过滤去渣,滤液超滤,得精制液;
(5)、将黑米、燕麦、玉米加水覆盖浸泡3-8小时,冲洗沥干,加水磨制成米浆,加入水煮沸,加入精制液、豆沙、山药甜汁、麦芽糊精、食盐、味精等搅拌均,文火熬煮香熟,冷冻干燥,破碎研磨过180-280目筛,灭菌包装即得。
本发明的有益效果为:

具体实施方式
一种粗粮营养糊的制备工艺,包括以下步骤:
(1)、称取下列重量份(斤)的原料:黑米25、燕麦20、玉米10、山药18、黑豆13、南瓜20、花豆12、榛子仁9、甜叶菊12、麦芽糊精15、食醋30、向日葵花盘2、桔梗2、玉米须2、树莓叶1、天花粉2、蜜桶花2、猕猴桃叶2、食盐5、味精1、水适量;
(2)、将黑豆、花豆、榛子仁入油锅,加入适量尖椒、姜泥、葱末煸炒出香,加水煮制60分钟,捞出黑豆、花豆、榛子仁放入食醋焖润至干,研磨成豆沙;
(3)、山药、南瓜洗净蒸熟去皮切块,与经漂烫洗净切碎得到甜叶菊末一起合并,送入打浆机打浆,加入果浆酶在46℃酶解2.5小时,加热沸腾8分钟,离心过滤去渣,得山药甜汁;
(4)、将向日葵花盘、桔梗、玉米须、树莓叶、天花粉、蜜桶花、猕猴桃叶加水煎煮,过滤去渣,滤液超滤,得精制液;
(5)、将黑米、燕麦、玉米加水覆盖浸泡5小时,冲洗沥干,加水磨制成米浆,加入水煮沸,加入精制液、豆沙、山药甜汁、麦芽糊精、食盐、味精等搅拌均,文火熬煮香熟,冷冻干燥,破碎研磨过200目筛,灭菌包装即得。

1.一种粗粮营养糊的制备工艺,其特征在于包括以下步骤:
(1)、称取下列重量份的原料:黑米15-25、燕麦20-30、玉米10-15、山药15-20、黑豆10-15、南瓜10-20、花豆10-15、榛子仁5-10、甜叶菊8-15、麦芽糊精10-15、食醋20-30、向日葵花盘1-2、桔梗2-3、玉米须1-3、树莓叶1-2、天花粉2-3、蜜桶花1-2、猕猴桃叶2-3、食盐3-8、味精1-3、水适量;
(2)、将黑豆、花豆、榛子仁入油锅,加入适量尖椒、姜泥、葱末煸炒出香,加水煮制45-60分钟,捞出黑豆、花豆、榛子仁放入食醋焖润至干,研磨成豆沙;
