Abstract

"CONCENTRADO DE SUCEDâNEO DE OVO, E, SUCEDâNEO LìQUIDO DE OVO". é fornecido um concentrado de sucedâneo de ovo que tem um baixo teor de colesterol. Ele inclui 40-85% de proteína, 10-50% de óleo vegetal e 0,5-15% de carboidrato. O teor de colesterol é menor que 0,5%. A proteína inclui proteína de soja, proteína de leite e opcionalmente proteína de clara de ovo, pelo menos metade da proteína sendo proteína de soja. O PDI é pelo menos 60%. O concentrado é disperso em água, e opcionalmente claras de ovo, para fornecer um sucedâneo líquido de ovo.
