Abstract

"RECHEIO OU COBERTURA CONTENDO AMIDO PARA UM PRODUTO DE PADARIA, USO DE UM AMIDO DE TUBéRCULO OU RAIZ, PRODUTO DE PADARIA, E, AMIDO DE TUBéRCULO OU RAIZ". A invenção refere-se a amido usado na indústria de cozimento. Cremes e (fruta-) enchimentos, coberturas e glacês e outros produtos de padaria são com freq³ência espessados pela inclusão de uma certa quantidade de amido como agente aglutinante, de enchimento ou espessante, por exemplo, fornecendo dureza de gel, viscosidade, vitrificação, textura ou cremosidade ao creme ou enchimento. Os amidos comumente usados têm insuficiente estabilidade, por exemplo, para aplicação a quente durante o cozimento. A invenção fornece um recheio ou cobertura contendo amido para um produto de padaria em que dito amido compreende um amido de tubérculo ou raiz contendo menos do que cerca de 5% de amilose, e uso de tal recheio ou cobertura para melhorar um produto de padaria. Além disso, a invenção fornece um amido estável ao calor e produtos de padaria compreendendo amido estável ao calor.
