Abstract

<B>AMIDOS E FARINHAS NãO GRANULARES PRé-GELATINIZADOS TERMICAMENTE INIBIDOS<D>. Amidos e farinhas não granulares pré-galatinizados termicamente inibidos são preparados pré-gelatinizando o amido ou a farinha, desidratando o amido ou a farinha até o estado anidro ou substancialmente anidro e, então, tratando termicamente o anidro desidratado. A pré-gelatinização pode ser executada antes ou depois da inibição térmica utilizando métodos conhecidos que interropem a estrutura granular, como por exemplo por secagem em tambor ou cozimento em jato e secagem em spray. De preferência, o amido ou a farinha são ajustados para um pH acima de 7,0 antes da inibição térmica. O amido pode ser desidratado aquecendo o amido em um aparelho de aquecimento adequado, extraindo a água do amido utilizando um solvente tal como etanol, ou dessecamento a frio do amido. De preferência, o amido ou a farinha são tratados com um solvente para remover proteínas e/ou lipídeos e, dessa forma, evitar aromas fora de especificação.
