Abstract

Starch having an initial moisture content not exceeding 3 per cent. is rendered substantially free of thermophilic bacteria by roasting at 240 DEG -260 DEG F. for 1 to 3 hours. Conventional dry starch, e.g., pearl maize starch of 12-15 per cent. moisture, is preliminarily dried without substantial modification, e.g., at 130 DEG -140 DEG F., to a moisture content of not more than 3 per cent. before the roasting operation. U.S.A. Specification 2,332,320 is referred to.ALSO:Starch having an initial moisture content not exceeding 3 per cent is rendered substantially free of thermophilic bacteria, and so suitable for use in the canning of foodstuffs, by roasting at 240-260 DEG F. for 1 to 3 hours. Conventional dry starch, e.g. pearl maize starch of 12-15 per cent moisture, is preliminarily dried without substantial modification, e.g. at 130-140 DEG F., to a moisture content of not more than 3 per cent before the roasting operation. U.S.A. Specification 2,332,320 is referred to.
