Abstract

Dried carrots having improved retention of flavour and of carotene content on storage are obtained by scalding the carrots in a solution of starch, e.g. a solution containing 2.0-2.5 per cent. of starch, before drying, e.g. in a current of air at 65 DEG C. for 5 hrs. until the water content is reduced to 5 per cent.
