Abstract

Carcasses of birds are preserved by rubbing inside with a dry mixture of salt, cane sugar and saltpetre in the proportions 24 : 6 : 1, covering with this mixture for 12-30 hours according to size, washing and drying. The carcasses may then also be smoked.
