Abstract

In preparing crisp, fried onions the water content of sliced onions is brought to a value between 30 and 40%, by weight, as by drying the slices and remoistening them with water; they are then cooked in oil or fat at or near, but not above 100 DEG C., and finally fried at 150 DEG to 160 DEG C., e.g. for about one minute, with or without addition of oil or fat. Any excess oil or fat associated with the cooked onions and the fried onions may be removed by centrifuging.
