Abstract

processo para a produção de extrato de grãos de café torrado. a presente invenção se refere a um processo para produzir um extrato de grãos de café torrado suprimido de amargador ao seletivamente reduzir o teor de lactonas de ácido clorogênico ao mesmo tempo em que se mantém o teor de ácidos clorogênicos e dotado de paladar e sabor intrínsecos ao extrato de grãos de café torrado. o processo para produzir um extrato de grãos de café torrado inclui ajustar um extrato de matéria prima dos grãos de café torrado de modo a ter um grau de brix de a partir de 10 a 40 e a ph de a partir de 5,5 a 6,5, e tratar o extrato com calor a 100 °c ou mais.
