Abstract
Un jarabe reducido en azúcar que tiene una viscosidad ventajosamente baja se prepara mediante hidrólisis de almidón o de un material con alto contenido de almidón utilizando un tipo en particular de enzima a amilasa lo cual produce una distribución de sacáridos que tiene un contenido bajo de DP1-2 y un contenido bajo de DP11+. El contenido de DP4 del jarabe puede ser aumentado favorablemente utilizando una enzima a amilasa maltotetragénica en combinación con la enzima a amilasa mencionada anteriormente. El jarabe es útil en la producción de composiciones alimenticias, bebidas, pienso para animales, composiciones para la salud y nutrición de animales, composiciones farmacéuticas y cosméticas y puede combinarse con un edulcorante de elevada intensidad para proporcionar una composición capaz de ser sustituida por los jarabes de maíz convencionales.
